NOOOOOOOOOOOOOOOOOO I hear you 😉
But us ladies who cook…..we all know that we need to get that mincemeat done and those Christmas Puddings.
If you are really organised you will have saved one from last year….I have mincemeat and when you open that jar …That smell is sooooo amazing and conjours up Christmas in an instant…..Jingle Bells and all that!
So let’s go!
36oz of dried fruit…..I used raisins, sultanas, chopped prunes and some dried cranberries.
12oz brown sugar.
Zest and juice of 2 oranges and 2 lemons.
2oz chopped almonds or nut of your choice.
1lb Apples peeled and chopped.
8oz vegetable suet.
4tsp mixed spice.
1/2 tsp cinnamon
1/4tsp fresh nutmeg grated.
6 tbsp Brandy.
Mincemeat soaked overnight ( standing on a tray filled with water) and wet tea/towel..pesky ants..didn’t want to swim..ha ha. Where there is a will there is way says the human to the ants…. For those of you who don’t know I live in Thailand and the merest sniff of anything sweet and those ants are on it…… I love the pesky little blighters so much that if like me you are pahued by them …….I have a lovely recipe for Spicy Ant Egg Salad and I can’t think of any better use for their eggs! Oh Yes!
Cook on very low heat for 30 mins.
Cool and stir in Brandy.
Spoon into sterilized jars , cover tightly. Store in cool dark place.
