Welcome to the second week of Whimsical Wednesday’s…Today is one of my favourite days well not just a day as it is National Coconut Day no less…I mean living here the coconut is king for me …The lovely fresh coconut juice that I enjoy fresh from the drupe…To the lovely soft flesh of the young coconut which we feed to babies here..their first taste of a semi-solid food…
The Beautiful Thai curries which contain coconut milk…Coconut features in so many Thai recipes… The Coconut!
The coconut also features in one of my cocktails which I will be sipping on the beach in Phuket in a few weeks time…
June the 26th is the 177th day of the year(178 leap year) in the Gregorian Calendar…188 days remain…Just saying…Haha
Time for a story… Biscuit Crumbs…By Carol Ann Taylor…
Trying to manoeuvre gracefully around the oil drum directly in my path I succeeded in clattering right into it. The biscuits I carried flew into the air and landed as crumbs among the shattered remnants of my plate.
“So pleased it wasn’t the best bone china”
The errant skateboard carried on for a few seconds and I was most unceremoniously dumped on my butt.
Watching my young grandson weave in and out with effortless grace on his skateboard evoked memories of my younger days when I was in marketing. My colleagues and I roller skating into an employer’s office to make our sales presentation.
It had gone so well on that occasion.
This had seemed like a brilliant idea, a novel way of presenting my Cup Cakes to Waitrose.
“What on earth was I thinking?”
Damm! And ouch! Back to the drawing board.
The first Grand Prix was held in Le mans, France on this day in June. The first driver past the finishing post was Ferenc Szisz driving for Renault…I am sure you are wondering why I am mentioning this…As a newlywed, before we set off on our honeymoon… yes folks… honeymoon, my new hubby who worked for Williams made a detour to Silverstone for the Grand Prix…To say I was not exactly overjoyed is a fact and maybe a sign of things to come…
Time for a recipe…
Spicy Pork Balls… These lovely pork balls are a favourite with everyone who tries them and as it is National Coconut Day there is no better recipe as they contain freshly shredded coconut and lots of it…They are so yummy…
- 500 gms cold cooked rice.
- 250 gms minced pork.
- 150 gm coconut flesh. I have a funny little gadget that I bought long ago and I scrape the flesh out of a fresh coconut…
- 1-3 tbsp red curry paste.
- 2-3 tbsp fish sauce
- 1 tsp sugar.
- 2 eggs beaten.
Mix all ingredients together it will be slightly sticky. With wet hands shape into medium sized balls about 3-4 cm.
Heat oil until hot but not smoking as the outside will cook before the inside and cook rice balls 15-20 minutes until brown and cooked through.
These balls are best eaten with a piece of white cabbage, some diced ginger and chilli put ball or part of it on cabbage and wrap around, squeeze some lime juice over it and eat, it is a crunchy fusion of Thai flavours, so yummy.

2018 Barry Gibbs of the Bee Gees was knighted by Prince Charles at Buckingham Palace…I love the Bee Gees…I think my favourite track is To Love Somebody…or Massachusetts… or ??? It is sometimes so very hard to pick a favourite, isn’t it??
Elvis and how I like to remember him and not that bloated figure in his last concert…
The last concert photos of Elvis were taken on June 26th 1977 in Indianapolis…I personally think it was such a waste to the music Industry that his excesses caused his death…He will live on forever through his music …My favourite track… there are so many and I can’t choose…What is your favourite Elvis track???
Back to the UK and The Byrds…
1965 on this day saw The Byrds and Mr Tamberine man..Hit the number 1 spot in the top 100 charts it was also the only song written by Bob Dylan to top that chart…
WordPress and my blog...Just a heads Up…I had a little problem that someone who made a comment on my blog which I approved then started to make a comment on all your comments as if he knew you…He soon got relegated to spam and it seems to have done the trick…
I didn’t like it all those years ago when my mother used it for sandwiches and I don’t like this version…Spam not allowed on this blog…Begone!
