CarolCooks2…weekly roundup…Health, Recipes and more…so much more…

Wow…what a week this been in one way or another…It will certainly go down as that was the week that was…Hubby is now the proud owner of his first electronic device and is learning all about the wonderful world of Alexa…for him it means he doesn’t have to type…and for me, I don’t have to listen to the cussing…haha

relaxed reading kindle lady

But just in case you missed any posts this week…Or if you like to do what I do and that’s snuggle down in your favourite chair and have a read…I love a roundup all the posts in one place… that way I don’t miss anything  I don’t always have time to read posts as they are published which I am sure you busy peeps don’t either…

So grab your favourite chair, a drink, settle down and enjoy…There are recipes, music and more…You could even add a healthy snack of popcorn or whatever your favourite snack is…What is it by the way?  Just asking…haha

Monday…Time for my update into the ever-growing story of the environment and climate change…Every day we see or hear something, don’t we?… Do you wonder like me how much is fear-mongering and how much is true???

I do believe that as individuals we should think about how we can make a difference…Everyone’s circumstances are different we all have things that we can’t do without or can we???… We have always had a car…We now don’t…Do I miss it…Sometimes…BUT…Honestly not as much as I thought I would…

Of course, we have had to make adjustments…I shop…Aston goes to school…We like to visit people or places…

I know our public transport is better than it is in many places…It is good…Sometimes we hire a car…

The plus side is…we walk more…we see more of our surroundings because we walk and don’t whizz by in the car…I talk to more people…I have lost weight…I feel healthier…Shopping…I walk there and bus or cab back depending on my load…

School…Aston walks more, he catches a bus along with the other kids…He has got used to it…we had the moans early doors…Its raining, I am going to be late…my bag is too heavy to carry…etc etc…

Rain doesn’t bother him anymore or he takes a spare pair of socks…He gets up earlier and moves himself quicker( all good)training for when he goes to work…He only takes what he needs in his bag..he has learnt organisation skills…

My point… change isn’t always easy but with a little effort it is doable and the benefits outweigh the losses…Try it!

We have reduced our carbon footprint…Have you??

Tuesday…Healthy eating… we are bombarded from all sides….social media, newspapers and magazines even our friends and family about this new diet and that new superfood…When really we just need to be mindful…we need a healthy balanced diet…we need to know that what works for one may not work for us… all our bodies and dietary needs are different.

Lots of factors come into play…Our lifestyle …where we live…our own bodies… we all process things differently…I am trying to make sense of it all while keeping myself and my family as healthy as I can by cooking from scratch with good ingredients…Not expensive ingredients good local ingredients or by growing what I can with the space I have…

Wednesday…The day where I get maudlin and indulge my self…My passions and loves and maybe yours…Things which have wowed me …or stopped me in my tracks and made me think…Time to reflect…

The boat house sun beds

It is also the day when I can be found over @ Sally’s once a fortnight…My Cookery Column where I bring you flavour and home cooking…nothing fancy just cooked from scratch with love…This week it was two soups…One with beans and cavolo nero and the other with some Thai flavours…I love a bowl of soup whatever the weather but I know that when it is chilly a bowl of soup is welcome…My favourite and I have many soups I like has always been tomato soup…and they always seem to find their way into many of my soups …Enjoy!

Thursday…I took you with me Down on the Farm…I don’t think I told you we had to get rid of some of our boy turkeys…we seemed to have the wrong balance more males than females and it doesn’t work…The ladies were constantly being bothered…so we have evened it up…they may sleep now…haha

I also introduced you to our very pretty sesame plant…with a recipe for homemade Tahini…

This raised a question from Lieve…A good question with an easy answer when I thought about it…

How to Cook With Tahini: When baking, tahini is typically used in the same way as peanut butter, adding a mildly nutty flavour. It can easily be whisked into sauces and dressings, but keep in mind that adding acid, such as lemon juice, will cause tahini to thicken rapidly. Adding a little warm water will thin it to the proper consistency.

How do overnight oats, with banana, maple syrup and Tahini sound….?

Once a month on a Thursday I can also be found over @Esme’s Salon…I am currently working my way through the Culinary Alphabet and this month it is the letter, T…Now if you are British you will probably know about the idiosyncrasies of what Tea and toast mean to us…If you are not it may make you

So please pop over and say hello and see what delights I have for you…and please leave a comment as I love to hear from you and you know I always answer you back…

Friday…Well, someones been a busy bee this week…I love my fresh honey…and bees…Today I was most honoured to be among the lovely Brigid who is going to get her own hive in the New Year…I wish…and none other than John Rieber…and guess who spelt it wrong…Moi..

Now if you didn’t know John is the master at discovering the unusual and sometimes the gross…He also loves bacon…

So head over and have a read…and before you say it…Yes, I do get around…haha…

Friday is also the day when I take you for a trip around my kitchen…Still on the subject of store cupboard basics… this week it was Rice…Yes, a whole post on Rice…

Not many people know just how many varieties and types of rice there are…more than 40,000 varieties of cultivated rice…That is without the wild rice which I love by the way…

Coloured rice, black rice and our field of rice…Look how green that looks…

Saturday…The weekend…Something for you ladies …A well-written look at the workings of our reproductive systems…Where Sally shares her vast knowledge with us…#recommended

If you are still reading after this bumper week I thank you … I hope you have found something you enjoyed or learnt about or which just made you smile…Enjoy your Sunday…xxx

About Carol Taylor:

Enjoying life in The Land Of Smiles I am having so much fun researching, finding new, authentic recipes both Thai and International to share with you. New recipes gleaned from those who I have met on my travels or are just passing through and stopped for a while. I hope you enjoy them.

I love shopping at the local markets, finding fresh, natural ingredients, new strange fruits and vegetable ones I have never seen or cooked with. I am generally the only European person and attract much attention and I love to try what I am offered and when I smile and say Aroy or Saab as it is here in the north I am met with much smiling.

Some of my recipes may not be in line with traditional ingredients and methods of cooking but are recipes I know and have become to love and maybe if you dare to try you will too. You will always get more than just a recipe from me as I love to research and find out what other properties the ingredients I use contain to improve our health and wellbeing.

The environment is also something I am passionate about and there are now regular columns on my blog this year. It is important that we are mindful of the world we live in…These honeybees dining on forget me knots say it all to me…

Exciting for me hence the title of my blog, Retired No One Told Me! I am having a wonderful ride and don’t want to get off, so if you wish to follow me on my adventures, then welcome! I hope you enjoy the ride also and if it encourages you to take a step into the unknown or untried, you know you want to…….Then, I will be happy!

More and more of my blogging friends have joined me on MeWe…A social media site which is fairly new and which promises much without the restrictions some other social media sites are choosing to impose on many of us…Join me if you will on  MeWe
