CarolCooks2…weekly roundup 19th April-25th April 2020…

Good Morning and welcome it’s time for my weekly roundup of posts…Like everyone else, I am getting used to being cocooned in my home and garden with just the occasional quick trip out for essentials…

I won’t say I am cooking more but I am cooking more comfort food and wasting as little as possible…I am not thinking of creating exciting dishes and ways to cook as much I am just thinking of what I can cook if I run out of flour, eggs, pasta or other essentials so I suppose being more resourceful…Today or tomorrow I am going to substitute eggs for chia seeds and make brownies…

I am however going back to my normal way of eating as cooking all this comfort food has played havoc with my digestion…I am never sick and for two days I have been violently ill… I will add..like you really wanted to know…But I just knew it was the change in diet and overeating/drinking…so yesterday as I was feeling very fragile so fragile I didn’t even write my normal post…I just ate two small meals, lots of water and Oolong tea. and slept…Today the headache has gone and I feel normal…

Monday: Recycling and Climate Change…20th April 2020…

Another bit of mixed week on the recycling front..mainly because of this Covid-19 it seems to be creeping its way into every part of our lives…The concern I do have is that while people are rightly concerned about their health and families and friends, jobs and the economy…I do hope that there will be no sneaky under the carpet dealings while everyone’s thoughts are elsewhere.

I have two major concerns at the moment one is 5G and the other e-waste…Scott(Doc)kindly sent me some links on 5G…Thank you much appreciated. The e-waste I am busy researching.

Tuesday: British National Tea Day…

There is something so British about a cup of tea…A celebration or a death on goes the kettle and out come the teacups…George Orwell had very strong views on a cup of tea from the tea itself to how it should be brewed…

Whimsical Wednesday:

Which as you know could be anything…Last Wednesday was National Jelly Bean Day…Who doesn’t love Jelly Beans…? There are some awesome flavours…Tabasco Flavour, Chilli Mango, Marguerita and some beautiful fruity flavours…Cringe-worthy flavours like Earthworm, Earwax and vomit are for me a No-No! But I suppose for Halloween revellers they will be on someone’s list…

Some things in life just are…Cats Meow, cows moo and ducks quack…Thank goodness someone had some sense… I mean trying to get the ducks removed because the quacking was too loud…The ducks won!

Thursday: Great British Beef Week…23rd-30th April…

British Beef Week

There is nothing like seeing the cows grazing in the fields…This is not open for any discussion …The M-word is not negotiable on this blog…My father and grandfather were farmers…I also have never eaten veal and never will. Stroppy or what Carol…sigh…But I do love seeing a field of cows…or as is the case here the buffalos being walked and holding up all the traffic…

From Jelly Beans to Just Beans...Sally presents the lowdown on how to cook beans and the health benefits of eating beans there are also some recipes from Moi…Enjoy!

Friday: An Egg, Zero Carbs and No Sugar…

Like the banana, it also comes ready-packed…Eggs come in all guises here…not commonly soft boiled with bread fingers or scrambled unless you are eating in a hotel…But in ways, you may never ever have heard of…some of the ways are to keep the eggs fresh in the heat, other ways are the tradition, they also come in lots of pretty colours…My favourite little snack from a street stall are lovely little quails eggs served with fish sauce…

If you have an Auntie Annie’s near you they are giving away 25,000 free pretzels to frontline workers. In addition to nominating a frontline worker to receive a pretzel-pick-me-up, fans can claim their own National Pretzel Day offer when they download the Pretzel Perks app.

Pretzel fans can nominate their friends and family members who are frontline employees beginning Friday, April 24 through Sunday, April 26 at AuntieAnnes.com/Nominate. Auntie Anne’s will randomly select 25,000* of these frontline workers to receive a free Original or Cinnamon Sugar pretzel offer, as a way to show appreciation to all those keeping us safe and healthy during this time.

About Carol Taylor:

Enjoying life in The Land Of Smiles I am having so much fun researching, finding new, authentic recipes both Thai and International to share with you. New recipes gleaned from those who I have met on my travels or are just passing through and stopped for a while. I hope you enjoy them.

I love shopping at the local markets, finding fresh, natural ingredients, new strange fruits and vegetable ones I have never seen or cooked with. I am generally the only European person and attract much attention and I love to try what I am offered and when I smile and say Aroy or Saab as it is here in the north I am met with much smiling.

Some of my recipes may not be in line with traditional ingredients and methods of cooking but are recipes I know and have become to love and maybe if you dare to try you will too. You will always get more than just a recipe from me as I love to research and find out what other properties the ingredients I use contain to improve our health and wellbeing.

Exciting for me hence the title of my blog, Retired No One Told Me! I am having a wonderful ride and don’t want to get off, so if you wish to follow me on my adventures, then welcome! I hope you enjoy the ride also and if it encourages you to take a step into the unknown or untried, you know you want to…….Then, I will be happy!

Thank you once again for reading this post I hope you all are having a great weekend, stay safe and wash those hands xx

One thing I’ve realized as my diet has evolved over the last three years is we all have setbacks from time to time. I just make sure it doesn’t become a habit, and I do better the next day.

Thanks for always having a well-rounded source of information. Have a great week, Carol!

Thank you, Pete…Yes I think our diets evolve over time and the passing of years… living here mine has changed much… mainly because of the difference in food and cooking methods but it does suit me I feel much better by eating less bread, pasta and swapping white potato for purple sweet potatoes plus I eat more raw vegetables and fruit…I hope you have a pleasnat week , Pete. Stay well and safe 🙂 x
