I just couldn’t pass this up…I mean it’s National chocolate pudding day…What is your favourite chocolate Pudding?
Are we talking chocolate mousse?
Chocolate mousse… it could be milk chocolate, dark, chocolate, white chocolate or a combination of all 3…It could be mint chocolate…It could be just 2 ingredients or you could go the whole caboodle and make the most decadent mouse containing whipped egg whites, whipped cream, or both, and flavoured with one or more of types of chocolate, coffee, caramel, puréed fruits, or various herbs and spices, such as mint or vanilla and not forgetting even chilli… I mean chilli and chocolate…heavenly…
The combinations are endless…I am not in favour of using uncooked eggs …I have tried chocolate mousse with avocado..once was enough and never to be repeated…If I want chocolate mousse I will stick with Nigella I mean she loves to cook and eat with no thought to anything especially calories…
Serves: 4-6
- 150 grams mini marshmallows
- 50 grams of soft butter
- 250 grams good dark chocolate (minimum 70% cocoa solids) chopped into small pieces
- 60 mls hot water (from a recently boiled kettle)
- 284 mls double cream
- 1 tsp vanilla extract
Put the marshmallows, butter, chocolate, and water in a heavy-based saucepan.
Put the saucepan on the hob, over low heat, though keep it fairly gentle, to melt the contents, stirring every now and again. Remove from the heat.
Meanwhile, whip the cream with the vanilla extract until thick, and then fold into the cooling chocolate mixture until you have a smooth, mixture.
Pour or scrape into 4 glasses or ramekins, about 175ml / ¾ cup each in capacity, or 6 smaller (125ml / ½ cup) ones, and chill until you want to eat.

Chocolate Brownies… The very best have that fudgy cake underneath that crispy top…

Homemade chocolate brownies
- 1 cup of oil ( I use coconut oil)
- 1 1/2 cups of sugar
- 1 cup of flour
- 2/3 cup of good cocoa powder
- 1 cup walnuts roughly chopped
- 3 eggs
- 2 tsp of vanilla essence
- 1/2 tsp of baking powder
- 1/2 tsp salt
Chocolate Sponge… layered with a chocolate cream filling or just covered in chocolate buttercream or a mirror glaze you can see your reflection in and of course we had the Black Forest Gateaux…which once graced many a table and buffet…
My mum used to make a steamed chocolate pudding served with custard…Chocolate Sponge Pudding with custard… The pudding that brings back memories of school dinners a chocolate pudding with chocolate custard…or strawberry custard…

- 100g butter or margarine, plus extra for the bowl
- 2 tbsp golden syrup
- 100g dark muscovado sugar
- 150ml/¼ pint milk

1 egg (large or medium)
- 1 heaped tbsp cocoa powder
- 225g self-raising flour, minus 1 heaped tbsp
- 1 tsp ground cinnamon
- ¼ tsp bicarbonate of soda
For the sauce
- 4 tbsp milk
- 4 tbsp cream
- 1 tbsp golden syrup
- 100g good-quality dark chocolate
Let’s Cook!
Butter the inside of a 1.2 litre pudding bowl and line the base with a disc of buttered greaseproof paper.
Melt the butter, syrup, and sugar in a saucepan. Remove from the heat and stir in the milk and egg. Add the cocoa to the flour, then tip this mixture into the pan with the cinnamon and soda.
Pour the mixture into the pudding bowl, cover tightly with foil, and steam for 11⁄4 hours. Just before the end, heat the sauce ingredients until melted, stirring all the time.
Turn the pudding out (run a knife around the inside of the bowl if necessary) and discard the paper disc. Pour the sauce over the top and serve immediately.

Apparently it only works well with Haas Avocados, Mary and no others and I can attest to the others it was gross…

If I had a choice of three food items I don’t want to go without, chocolate is on that list. I have much better discipline about saying no than I used to, but it’s a heck of a lot easier if it’s seldom in the house.

Haha… My experience of chocolate with avos was not good.. But a reliable source said they have to be Haas and Thai avos are certainly not in that class..

It only works with Haas aovs, though. I’ve tried other ones, and it had an unpleasant aftertaste.
