Good morning from not so sunny Thailand(10 degrees) even hubby and it is first for him since we landed here 8 years ago(he) who has always laughed at me for donning warm clothes has succumbed and is wearing jogging pants and a jumper…
I hope you are all well and getting over the Christmas festivities it is such a busy time of year and sometimes we don’t have time to eat or eat on the run…Don’t we???
Today I am going to repost and have revamped one of my healthy eating posts from a few years ago starting with the first meal of the day… Breakfasts which I hope will help sustain you until lunch and which you can prepare really quickly… there is something for everyone…vegetarians, vegans whatever your eating plan…Breakfast is served…
Firstly…Porridge…
If you don’t know already I had six children, a dog, a cat, a snake, a parrot and a horse…Get the picture all who I had to feed and get off to school before I went to work….lol
Breakfast time was busy…My slow cooker was a lifesaver during the cold winter months …I put the porridge on at night before I went to bed and come the morning it was ready and waiting…So easy…
Hubby was first out of the door having had his bowl of porridge and as the kids appeared they could get theirs it was always fresh and hot…
You can serve porridge with honey, fruit compote, fresh fruit or even a sprinkling of brown sugar which was an occasional treat for me…a throwback to my childhood…
Other toppings:
- Mango and toasted coconut
- Bacon and maple syrup
- Peanut Butter and grapes
I cannot pick a favourite out of these as I love them all…
How about some nice wholemeal Toast with peanut butter and sliced banana maybe a sprinkling of cinnamon and /or honey…for my US cousins it’s jam/jelly…
Or slice some strawberries..anything goes really or some mashed avocado and a hardboiled egg roughly chopped… Quick, easy and nutritious…

Eggs are always a good way to start your day…
Softly scrambled or poached…they are one of my favourite things. Hubby has bread with his eggs I just eat scrambled eggs on their own sometimes I grill some tomatoes as I really love eggs and tomatoes.
Here is a lovely video on how to poach an egg something that many including me have had problems getting the perfect poached egg… And if everyone wants a poached egg this man shows you how to do six eggs at once…
A yoghurt is a great option if you don’t have time to eat it at home put it in a mason jar with a lid and eat it when you get to work…
What I love about these jars is you can take them you and any fruit of your choice you can layer it or just top the yoghurt with it.
Easy to make oats to top your yoghurt or porridge.
Quick crunchy Oats…
- 1 cup of uncooked oats…
- 1/4 cup of brown sugar…
- 3 tbsp butter.
- 1 tsp cinnamon powder ( optional)
Let’s Bake!
Mix all 3 ingredients together and bake in the oven at 350 degrees for 10 minutes stirring I love to add a bit of cinnamon…
Allow to cool and top your porridge or yoghurt.

I just love peanut butter! It is good with jam in a sandwich, but I hadn’t considered cinnamon. Might have to give that a try.

We are fine here, Gemma I worry about my family in the Uk though as Covid seems to be out of control in some areas x

Sending good vibes to your family. Yes, it feels very out of control here. We are all locked down for a third time. I haven’t been anywhere since March other than a visit to my sister on Christmas Day.

When I’m trying to eat healthier, I’ll do Greek yogurt with berries and sugar-free granola, fried egg and ham and cheese over wheat bread, or steel cut oatmeal with berries and sugar-free coconut flakes.
When I’m stressed, it’s empty-calories cold cereal. 😉

Great breakfast ideas. I have porridge with fresh fruit and a few walnuts just about every morning. I loved the egg poaching video too. I will try that next time. (Loved his accent!)

Awwww, Jim….today it has been really cold I normally change a couple times a day as it warms up but not today snuggled in a jumper over a t/shirt that’s how cold it is but Iwill remember said she sniffily your lack of sympathy…haha..x

Unless I am in a hotel where breakfast is included, I rarely eat anything before midday. My snack of choice at that time is almost always a toasted cheese and ham sandwich, though I do sometimes have eggs in the sandwich instead. I’m a creature of habit. 🙂

I usually start the day with a bowl of crunchy granola, soy milk, lemon myrtle yoghurt and a strawberry or two. Yum!

I love greek yoghut I have found someone who makes it here in just small amounts but it is lovely …I wonder I have a lemon herb growing growing in my garden not sure what it is called in English but I wonder if I could infuse that in my Greek Yoghurt…mmmm you have given me an idea , Norah x

My breakfast is always something involving either toast, cereal, fruit, or more than one of those. If it’s cereal then it’s porridge or Weetabix made up with plant milk, which I will add some fruit to nine times out of ten, or maybe some pumpkin seeds or nuts, and also possibly some brown sugar, maple syrup, or some kind of spice (like pumpkin pie spice or cinnamon) depending on what I added to it. If it’s toast then toppings are very varied, because I might just have butter, or I might have something sweet like jam or marmalade, a bit of maple or agave syrup, or maybe peanut butter and banana, or I might have something savory like tomatoes on toast, Marmite and vegan cheese, or avacado or humus and some veggies, depending on what I have to hand and what I fancy. On toast days I often also have a bit of fresh fruit or a fruit smoothie, though sometimes I won’t be hungry enough so will have the fruit for a snack later instead. If I want a change from toast or cereal then I might have a bagel or crumpet (see toast for possible toppings) or just have a fruit smoothie or some fresh fruit if I don’t feel very hungry that morning.

I try to make sure to get a good variety in. Keeps things interesting, and gives me all the vitamins and minerals I need at the same time. 🙂

Nice, filling, and nutritious breakfast ideas, dear Carol. I usually do overnights oats smoothie with fresh blueberries and/or papaya and a splash of agave. And a cup of coffee, of course.

I generally have brunch as I only eat 2 meals a day but when I worked always had 3 meals but breakfast or brunch you need something to start the day of right I think 🙂 x
