Welcome to my kitchen where I cook almost everything from scratch…Just in case you missed it one of the reasons why I cook from scratch…
So easy to say “make everything from scratch” HOWEVER…let’s be realistic here…and break it down a little.
Look at what you eat often...if it’s something that is a rare treat and time-consuming to make, there is often no point unless you want to make it…Your time is far better spent making food from scratch, which you and your family actually eat on a regular basis.
It is also not just about cooking from scratch it is about shopping your pantry and your fridge before you go shopping and planning ahead … if you make a weekly menu and batch cook then you will have less waste and save money…we need to cook clever and waste less.
I was appalled to learn that in the UK 2.7 Billion vegetables alone are thrown in the trash each year … which equates to 8 weekly meals per person…
Yet …there are children and families around the world who are starving…it just doesn’t make sense to me…
So many recipes call for Chilli Powder it is so simple to make with ingredients that you may already have in your store cupboard…
The advantage of making your own is that you can make it as cool or as spicy as you wish..how you and your family like it…made to measure…not only are you in charge of the heat but it’s your call on how much sugar and salt you need plus no fillers and chemicals…win-win…
The sweet flavour of chilli powder comes from the Paprika and to add that smoky depth that’s where beautiful smoked paprika comes into play…if you want more heat then a pinch or two more of the Cayenne pepper does the job.
If you like a milder chilli powder leave it out and maybe add some black pepper.
It stores well in a glass jar for up to 9 months and can look so pretty on a shelf there is nothing like a line of homemade spice mixes and they also make a wonderful gift.
Ingredients:
- 1 ounce dried mild red chillies or sub 1/4 cup ground mild red chilli powder
- 1tbsp ground cumin
- 1 tbsp garlic powder
- 1 tbsp dried oregano
- 1 tbsp smoked paprika
- 1 tsp ground coriander
- 1/4-1/2 tsp ground cayenne (optional for heat)
- 1/2 tsp ground cinnamon
- 1 tbsp cocoa powder…shhhh (optional )…I mean is chilli and chocolate, not a match made in heaven?
Let’s Cook!
Firstly dry roast those chillies in a hot burn just be careful not to burn them…blitz those chillies or if you don’t have a small blender then get that pestle and mortar out for a quick arm workout…
Then just mix with all your measured ingredients ith those blitzed chillies and you have a lovely homemade chilli powder…which can be used in any recipe which calls for chilli powder…
How easy was that?

There is definitely a different and much more aromatic flavour to home prepared spice mixes and this looks like a wonderful collaboration between the aromas and tastes of the ingredients..xx

This looks simple, and I’ll bet it is tasty too. The surprise ingredient is definitely the cocoa powder, but I think that would work.

Good to hear.. Our wet season has just started.. We only have 2 seasons wet and dry… But it stays warm and warm rain is lovely..
