CarolCooks2 in my kitchen…Not quite KFC Chicken…

Welcome to my kitchen…It’s time for another Chicken Recipe …

The kids also love what they call KFC chicken...As you know I cook from scratch, therefore, make my own …also Lily loves to help and as breading is a messy job and kids love to get messy…

The recipe today is a quick one nice and shore…Easy…

I either cut a chicken breast into slices or use chicken tenders, then dip in an egg wash and coat with homemade breadcrumbs…

Then cook in batches in hot oil until cooked and golden brown…

Drain and serve! Enjoy!

Serve with sticky rice,  freshly chopped vegetables normally cucumber and cabbage…with a nice spicy Thai dipping sauce…Lily’s all-time favourite(she) eats it with anything…Apples, mango she loves it…

You can also make a wrap with them which the kids love to do… add some Doritos and guacamole or they wrap them in a cabbage leaf or a lettuce leaf…which is a little healthier but as a treat it’s ok now and again.

    Do you dredge them in flour before egg and breadcrumbs? I do, and it adds an extra crunch. I also use fine corn meal instead of breadcrumbs (gluten free) and mix in fresh chopped parsley. Huge kids’ favorite!

      Sticky rice must be washed well I do mine about 2/3 times then soak in clean water for at least 3 hrs then steam for 20-30 mins depending on the rice…If you don’t have 3 hrs then you can soak in boiling water which softens the rice quicker…I hope that helps 🙂

    I’m betting this is way healthier than KFC. When I was a teenager, I worked at a KFC. Seeing the grease dripping off the chicken after it had been deep-fried discouraged me from partaking.
