Chicken is such a very versatile protein it has little fat(unless we add it)…a healthy alternative to red meat… low in saturated fat, contains higher amounts of omega-6 fatty acids than other animal meats, and is high in protein and essential vitamins and minerals such as B6, B12, iron, zinc, and copper…
It is also quick and easy to cook…we have slightly lower temperatures and lots of rain plus because I had an extended stay in the UK I have made a concerted effort to cook hubby the food he loves and he loves a stew…I also love one-pot cooking …a stew is one of those dishes that is very forgiving and takes anything you chuck into the pot which makes it an ideal dish when you are shopping your fridge and anything well almost can go in a pot no weighing and measuring just chuck it in…
Today I am sharing… Homemade Chicken Stew…
For ingredients, I took chicken thighs( 5) without skin but left the bone in, chopped a medium-sized onion, some garlic, a piece of fresh ginger, a couple of bay leaves, dried sage, a medium carrot chopped, some barley, Chicken Stock just enough to cover the meat and veggies, potatoes (2) peeled and chopped up into smallish pieces…
It wasn’t until Robbie asked a question in my comments that I realised the error of my ways…Thank you, Robbie..my bad…x
First, add your chopped onions, bay leaves and ginger to a heated pan with a splash of good olive oil once they have started to soften add the garlic and cook for a few minutes I then brown my chicken in the same pan I don’t remove anything…once the chicken has seared then add all the vegetables except for the potatoes add the barley and your stock stir to combine and season well…cook on a low heat for about an hour then add the potatoes…
Once ready to serve… I served it with a side of stir-fried chard with garlic …
Cooks Notes: You could also add swede, turnips, Yam, sweet potatoes, peas, sweetcorn, a few lentils whatever odd bits and bobs of veggies you have to use up…sometimes I make suet dumplings but today I added potatoes…

It really was Yvette my friend gifted me a lovely bunch and I thought I wouldn’t use it the next day plus it enhances the taste with a little coconut oil and garlic plus seasoning and was lovely with the stew… It did really compliment it and I would definitely use that method of cooking next time plus its quicker… 😂

I cook something very similar, but usually only in winter months. I also use chicken thighs, but I buy boneless ones.

It was moist, perfectly seasoned by my husby cook. And light! I don’t like eating when I’m too hot.

Hi Carol, you have to be a good cook to just throw things into a pot and get it to taste good (smile). Do you brown your chicken first? I always do and I thicken the sauce with grated potato or cornmeal.

Yes I do and I should have said that.. Thank you for reminding me, Robbie… As I added potatoes and barley they both thicken it enough… But using grated potato is a good idea 😋
