Good morning and welcome to my kitchen where all my recipes are cooked by me and tried and tested on my family…Trust me they are the harshest of critics…For the last few months, I have been publishing a chicken recipe on Tuesdays…although now it is on alternative Tuesdays as I am also posting a meat-free dish on alternative Tuesdays to the chicken recipes…I like to cater for everyone and I respect others’ wishes if they follow a completely meat-free diet…However…I do not like the fact that some sectors of society are trying to force their views on others by throwing milk on supermarket floors and complaining when a restaurant doesn’t cater for them…GROW UP and find one that does…I would not dream of going into a vegan restaurant to eat and harassing the staff because they don’t cook a steak…or offer meat dishes…What planet are these people on?
Whatever your dietary choice is is down to you and I respect that…and let me choose mine…Rant over!
Of course, we buy our meat from sustainable sources and we grow our own chooks down on the farm but because they run free its hard to catch them at times …lol
We like chicken plus chicken is such a very versatile protein it has little fat(unless we add it)…a healthy alternative to red meat… low in saturated fat, CHICKEN contains higher amounts of omega-6 fatty acids than other animal meats, is high in protein, essential vitamins and minerals such as B6, B12, iron, zinc, and copper…It is also quick and easy to cook…however this recipe would be easy and just as tasty if you swapped chicken for tofu…
Orange Chicken with Watercress Rice…
Ingredients
- 1 1/2 cups of rice
- 2 chicken breasts cut into cubes
- 3 cups of coarsely chopped watercress reserving a few sprigs for garnish.
- 4-6 cloves of garlic finely chopped
- 2 tbsp fish sauce
- 3 tbsp of oil
- 3 tbsp fresh lime juice
- 2/3 cup of bitter Orange marmalade
- A ½ cup of finely julienned ginger
- Salt and pepper to season
Cook the rice and toss in the watercress with ½ to 1 tbsp oil, cover and leave to stand for at least 10 minutes.
Season the chicken then with the pan on medium heat add the oil and add half of the ginger and cook until the ginger is golden, drain and set to one side.
Add the chicken and brown for 3-4 minutes and then remove from the pan. Add the remainder of the ginger and the garlic and cook for 30 seconds add the marmalade, fish sauce and lime juice and bring to a slow rolling boil stirring until it is syrupy then return the chicken to the pan and simmer for 1-3 minutes checking the chicken is cooked and serve over the rice.
Garnish with crispy ginger and watercress sprigs.
This was very nice I wasn’t sure about the watercress but the heat of the rice just wilted the watercress and it was very nice even hubby liked it….Me, I added some chilli flakes …Just saying…

“Orange chicken” is delicious when prepared right and this recipe looks terrific! As for activism, I understand the rights that everyone has to share their beliefs but to disrupt others doesn’t help their cause in my opinion…

I’m completely with you on the vegan activists, Carol. The rest of my family are carnivores and that’s fine by me – I used to hide the fact from my grandchildren that I wasn’t eating meat because I didn’t want to influence them. We need a tolerant and accepting society, not a radical and divisive one. When people take things to extremes, it undoes the good people have done attempting to moderate that extreme behaviour.
I couldn’t make last week’s veggie dish because I couldn’t get mushrooms! Mad! However, we had your eggy crumpets again yesterday. Your recipe today sounds delicious even though I won’t be eating it! xx

Just use tofu, Trish although you are not keen on that are you?… White fish if it is cubed and lightly fried could be nice with the sauce, ginger goes with fish.. X

You’ve convinced me! I’ve printed it off and will use tofu – tofu’s pretty tasteless but that means it’ll be an excellent medium to pick up on all these flavours! xx

I completely agree about ‘Vegan activists’. Nobody goes into their restaurants and throws meat on the floor. They just make people angry, and set their cause back in the process.
