Hello and welcome to my weekly roundup of posts, you may have missed during the week… at the start of this week we were nearing the end of February and at the end, March will have arrived.. a quarter of the year is nearly gone… the walking is still on track and the knee although not completely better is 97% better will I attempt to jog again not sure if I wish to tempt fate…I think I should be satisfied with the feeling of euphoria I experienced and leave it at that …the two men in this house I am proud to say are still NOT smoking and have increased their exercises I am so very proud of them …I never in a million years thought hubby would give up the cigarettes…

It was also international Polar Bear Day and it’s sad to hear how global warming is affecting these beautiful animals plus I snuck in a video on how we can reduce our carbon footprint quite easily by being aware…The music was from Lee Mead who made an awesome Joseph in his multicoloured coat…
This rewind gives me a chance to revisit the letter R in my first culinary A-Z…many of my favourite foods start with the letter R…Rice for one is my favourite carb and I eat rice every single day whether it be Jasmine Rice, black rice or raspberry rice as its called here, brown rice or Keow Neow which is sticky rice…
Before I came to live in Thailand I had been on a few holidays here and liked to cook Thai food at home… Mainly it was a disaster I just couldn’t cook a bowl of nice fried rice…It was absolutely awful…
Since living here I have had a few lessons from my daughter-in-law as to the error of my ways and now I can make a stir fry and hold my head up amongst most Thai cooks.

Thank you for joining me today… it’s a lovely sunny day here with a nice breeze that was pleasant for my morning walk I got some beautiful small strawberries they are lovely and ripe the first of the season and a welcome addition to my breakfast fruit bowl of fresh pineapple, coconut meat, passionfruit and live yoghurt on my return…one of my favourite breakfasts whats your favourite healthy breakfast?

I really need to get serious about eating more healthfully . . .

It isn’t easy in the beginning but coupled with my walking I have reached a stage where I truly eat what I fancy just less of it.. But my palate has changed and some foods I just don’t crave anymore.. 😎😊

Have you tried batch cooking and then you don’t have to spend as much time in the kitchen? My breakfast takes no cooking it is live yoghurt and lots of fruit and my next meal is a stirfry that takes 20 mins max with rice or today it will be duck curry that was batch cooked and portioned sized for me…I don’t spend hours in the kitchen its too hot here but I plan hope that helps, Liz 🙂
