Enjoying life in The Land Of Smiles I am having so much fun researching, finding new, authentic recipes both Thai and International to share with you. New recipes gleaned from those who I have met on my travels or are just passing through and stopped for a while. I hope you enjoy them. I love shopping at the local markets, finding fresh, natural ingredients, new strange fruits and vegetable ones I have never seen or cooked with. I am generally the only European person and attract much attention and I love to try what I am offered and when I smile and say Aroy or Saab as it is here in the north I am met with much smiling. Some of my recipes may not be in line with traditional ingredients and methods of cooking but are recipes I know and have become to love and maybe if you dare to try you will too. You will always get more than just a recipe from me as I love to research and find out what other properties the ingredients I use contain to improve our health and wellbeing. This is now taking me into other areas like deforestation, chemicals and preservatives in the food chain. Exciting for me hence the title of my blog, Retired No One Told Me! I am having a wonderful ride and don’t want to get off, so if you wish to follow me on my adventures, then welcome! Welcome to my weekly roundup of posts just in case, you are like me and find a roundup helpful especially when the week has been busy…Starting with Monday Musings where my muse pinpoints anything exciting or unusual I have read, seen or experienced during the last week it could be anything that piques my interest…we are now in May and our temperatures have taken a hike upward it was 44C yesterday and predicted to be the same today…to say I am melting and only want cold drinks and ice cream is an understatement…a cup of tea is most certainly not on my agenda…

Monday Musings:

Last week Monday Musings was a mix of invention and the ancient art of Buddhism…the idea of 3D dissolvable vaccine patches is fantastic all you need is a printer a step forward for outlying areas and for anyone with a needle phobia…then I shared a Buddhist practice where anyone who passes away and has no family are tended by volunteers… Thai volunteers exhume the bones of the nameless dead, who have no one else to care for them, the remains are washed and laid out to dry then they perform a ceremony on the remains to aid the deceased in their spiritual rebirths…it is a beautiful ceremony performed with love and respect…

My Green Kitchen…

Where I shared one of my favourite recipes for using up cold rice…whenever I make these and take a bowl if we are going out they just disappear they are such a lovely snack with all the different textures the crunch from the lettuce or white cabbage the heat of the chill and the ginger and the lovely rice balls they are truly a beautiful bite of food…

Potato peels make lovely crisps and are far healthier than the processed nasties as you are in charge of the salt and the fat which is why they can be a tad healthier if you air fry them but they are also delicious if you cook them in the oven which I have to at the moment as I don’t own an air fryer…

Coke and other sodas the amount of sugar and other things make them one of the unhealthiest drinks and I’m not talking about the odd glass of Coke but that is all some drink and drink bottles of this every day…

When you think of mummies Egypt always springs to my mind..the pyramids, the Pharaohs and their Queens however this particular very well-preserved mummy was found quite by chance in China…

The Lady of Dai is one of the best-preserved mummies ever found. The condition is owed to the fact that her body had been swaddled in 20 layers of silk and she was found in 80 litres of an unknown liquid that was mildly acidic with some magnesium in it. She was placed within four layers of coffins, which were within an airtight, clay-lined burial vault 12 meters underground.

A personal request from me…I would be so very grateful if any of you will add little 6yr old Lenny to their prayers and send positive thoughts he has been diagnosed with High-Grade Lymphoma you can imagine what a shock this has been for his mummy and the rest of my family as he has to have intensive chemotherapy and stay in hospital for at least 6 months until the treatment is finished…I just can’t believe how cancer is rampaging through our family…I am more than shocked and wonder whose next,,,

May 4th is also widely hailed as Star Wars Day, a play of words on the popular line, “May the Force be with you.” Did you know the famous phrase is said in each of the Star Wars movies.?

If you live in the northern hemisphere, the fresh cold winds are gone, and the rains of early spring may have slowed… the spring flowers are blooming, birds are chirping, and life is starting to seem a little more joyful day by day!

If you’re on the other side of the world, in the southern hemisphere, then it’s a time when summer is long gone. The fall winds have swept by, and the nights are getting colder and darker…May is the time of change wherever you are in the world…

Welcome to May’s edition of Carol Taylor’s Green Kitchen …my happy place where I cook from scratch and avoid anything with hormones and chemicals in it…I also hate waste, especially now prices are rising around the world in stores PLUS energy costs are on the increase…it is also hot here so I spend as little time as I can in the kitchen unless it is absolutely necessary… I do this by planning and batch cooking…

Food waste is an enormous problem in the US: America wastes roughly 40 per cent of its food, which leads to pollution and other environmental damage, and is a waste of natural resources and a waste of money. While edible food is lost at every point along the food chain — on farms and fishing boats, during processing and distribution, in retail stores, in restaurants and more.

So, the question is, how do we reduce food waste?

The answer might seem simple: don’t let food spoil, right?

But food waste happens in a bunch of different ways: You go out to eat and don’t love the meal you ordered, leaving the majority on your plate to get scraped into the garbage. Or you pick up a bag of oranges and forget about a few in the back of the fridge, where they turn mushy. You cut off the greens of carrots or beets, or peel root vegetables, and not realizing the potential use of these nutrition-packed scraps, you toss them in the trash…

Take the last line greens and peel I wasn’t one of the many who purchased an air fryer and apparently nearly 60% of U.S. households own an air fryer…I wonder how many of them are using fruit and veg peels to make chips…

According to dieticians…Doritos Spicy Sweet Chili Chips] and we are talking only 10 chips here will provide 7 grams of total fat and 1 gram of saturated fat …that’s just the fat content for 10 chips…

and of course, you can ring the changes with any other fruit or vegetable peels…Do you make air fryer Crisps?

I haven’t been doing very much cooking in my kitchen at the moment plus if you are wondering why I have been banging on again about food waste and hormones and chemicals in our food it’s because I am scared for not only my family but yours…Cancer is on the rise and in my immediate family at the moment I have 2 daughters with breast cancer, Lauren has not finished her treatment last week she started the acid infusions and they restarted her monthly stomach implants both had been put on hold as the side effects of the many chemos they tried(due) to her bodies adverse reactions took longer than normal to complete plus her side effects were extreme…Donna has finished her treatment however during a routine follow-up scan they discovered a lesion on the wall of one of her lungs…Her second scan was on May 1st as if that wasn’t enough 2 of my sister in laws have breast cancer plus my husband’s sister, daughter’s son of 6 yrs old has been diagnosed with cancer we awaiting the results of his bone marrow…

Over the last few decades, doctors have been seeing dramatic increases in cancer in adults younger than 50…A new review of cancer registry records from 44 countries found that the incidence of early-onset cancers is rising rapidly for colorectal and 13 other types of cancers, many of which affect the digestive system, and this increase is happening across many middle- and high-income nations.

Personally, I put it down to hormones in our foods, chemicals and preservatives in our food, household cleaners, and cosmetics in fact almost everything we use on a daily basis in our homes has ingredients that are adverse to our health…That scares me and I like to think I am careful with my household purchases and have been over the years…

I can count 13 and a half sugar cubes in that one bottle of Coke Cola and likely similar amounts in any other brand of soda…

Episode 14: Keeping it Local: Avoiding Big Box Stores

Another tasty use for cold rice…Spicy red curry, Pork, Rice and Coconut Balls.

These spicy rice balls are a lovely way to use up any leftover cooked rice and are quite delicious. They are one of the first things I was taught to cook by my daughter-in-law more years ago than I care to remember. Whenever we have a party or anything they are one of the first things to be eaten, adults and kids alike love them.

 We had these last night and we did have a couple left over….. guess what I have just had with some ginger and chilli, lime juice squeezed over it and wrapped in a white cabbage leaf… all the Thai flavours and textures..so yummy!

 

Ingredients:

  • 500 gms cold cooked rice.
  • 250 gms minced pork.
  • 150 gm coconut flesh. I have a funny little gadget that I bought long ago and I scrape the flesh out of a fresh coconut…
  • 1-3 tbsp red curry paste.
  • 2-3 tbsp fish sauce
  • 1 tsp sugar.
  • 2 eggs beaten.

Let’s Cook!

Mix all ingredients together it will be slightly sticky. With wet hands shape into medium-sized balls about 3-4 cm.

Heat oil until hot but not smoking as the outside will cook before the inside and cook rice balls for 15-20 minutes until brown and cooked through…keep an eye on the temperature of your oil…

These balls are best eaten with a piece of white cabbage, some diced ginger and chilli put a ball or part of it on the cabbage and wrap it around, squeeze some lime juice over it and eat, it is a crunchy fusion of Thai flavours, so yummy and a great way to use up cold rice.

If you are a vegetarian then omit the pork and you still have tasty rice balls….In fact, a lot of the balls you buy on the markets do not have Pork. If you don’t use pork then adjust your cooking time.

If you are not sure of the level of spice then form a small ball having used the lower level of paste and fish sauce, fry a tester. Then if you need to…Add more chilli paste.

Gardening Hacks Corner…Bananas and eggs organic fertilizer.

I grow what I can and some plants need calcium to aid their growth like tomatoes…I came across this hack and if you have overripe bananas dig a hole and add a banana plus an egg or egg shells and fill it in then plant your calcium-loving tomato plants or other plants on top and the calcium from the banana and the egg will be slowly released into the soil..

Fact: About 5 gallons of water per day is required for one banana tree. Over the 270 days it takes to produce bananas, that tree will use over 1,300 gallons of water. Americans throw away 5 billion bananas every year! That means billions of gallons of water are thrown away too!

Monday Musings…1st May 2023…May Day, Disolvable Vaccines Plasters, Making Merit(Buddhism)…

Welcome to Monday Musings where my muse pinpoints anything exciting or unusual I have read, seen or experienced during the last week it could be anything that piques my interest…Last week I was on a bit of a rant so this week I thought I would tone it down a little -smile and today is May Day…historically in Europe and the UK it is associated with rural pagan festivities…

Traditions often include gathering wildflowers and green branches, weaving floral garlands, crowning a May Queen (sometimes with a male companion), and setting up a Maypole, May Tree or May Bush, around which people dance. Bonfires are also part of the festival in some regions…

Science never ceases to amaze me and sometimes it also scares me…this is one of the advances that amazes me… first seen on acflory@wordpress.com...its brilliant idea for anyone who has a needle phobia or who lives in a remote place…or is housebound…mobile dissolvable vaccine patches…

Dressed all in white the volunteers carefully and respectively clean all the bones…The bones are then all laid out neatly to dry in the sunshine…

They are then taken to the temple where Thais make merit and add gold leaf to the bones then they are buried again to rest eternal and go forward to the afterlife…One way for Thai Buddhists to show their respect for a person or concept is to make merit by affixing small squares of gold leaf onto images of Buddha or other sacred objects…in this case, it is placed on the skulls of the deceased who have no families of their own…

Even the act of making gold leaf earns merit for individuals. Sheets of gold are pounded to .000005 of an inch. The leaves of gold are made by two poundings with wooden mallets. It takes about five hours of hammering to complete one pouch of gold leaf. Then the job passes to the delicate hands of young girls to slice up squares of 2.5 centimetres and put them on waxed paper and stacked in booklets ready to sell.

Postage-stamp-size booklets of gold leaves are always on sale along with incense, flowers and candles at temples and shrines for use as daily offerings.

Making merit is something practising Buddhists do…Merit-making is important to Buddhist practice…it is a beneficial and protective force which accumulates as a result of good deeds, acts, or thoughts…

I think it is a lovely ceremony to make merit for those who have no family…

Monday Musings…

As most of you know, food waste is high on my agenda as are highly processed foods and particularly the fact that I still see people WITH shopping trolleys loaded with highly processed foods …I ask why ..is it because they are cheaper? is it because of peer pressure or kid pressure?  or is it because they themselves grew up on that same diet? so many questions whirl around my brain…I was on a roll(rant) some may say but I got it off my chest so for anyone who stuck with it I thank you and if you watched the video at the end like I did then I applaud you for wanting to know although I will say you can’t unwatch it…I just deplore wanton cruelty for profit…

Welcome to Thursday Thoughts…

During times of economic downturns, consumers turn to treats and snacks as a way to indulge when the world feels chaotic and money is tight…the stats on this don’t make pretty reading so be aware when treating the kids…that someone is out to relieve you of a bit more than you bargained for…

Today Fast Food Restaurants are under my spotlight! plus Arbor Day and a delightful video of an Aboriginal Elder playing a gum leaf…we used to use greaseproof paper over a comb as a child but I never tried making music with a leaf…

Smorgasbord Heath Column…

Sally is absolutely correct “Our Body is our greatest asset”…IF we take ownership and look after it…Ok, some illnesses and diseases we cannot avoid however if our immune system is in good shape we can deal with them far better and generally our recovery times are quicker…

However, so many lifestyle diseases are down to our diets and how much we exercise…that is the bottom line…there is no getting away from it when Sally says “Ignorance is not bliss.. your body is your only real asset and your well-being should be your primary concern.
