Healthy Eating…No more Diets…But a way of life…

Good morning…After the mother of all storms last night the watery sun is trying to come out…The birds are singing and the squirrels are playing on the trees outside my window…

It is day 21 of no alcohol and going well… 3 nights out and I stayed on the water…I also feel much better and have lost a few inches which is a bonus…A dress last worn on Christmas day is a lot looser around the hips and tummy area …My new phone tracks my steps which is another incentive to up the ante…

How is your healthy eating going??? Have you any tips to share?

Salads… If any of you buy ready prepared salads I read there was yet another recall…Not the first I will add over the years and there have been fatalities in the past… it can take a couple of weeks for greens to get from the farm to your plate when they come in the form of bagged lettuce, and nutrition is lost during that time. Another thing that adds to the degradation of vitamins and minerals in bagged salads is the washing they go through before being bagged.

Then there is the water issue…triple washed? If it’s in [California’s] Central Valley, then it most likely becomes the single most important environmental consideration, and the triple-washed thing becomes very difficult to defend.”  90% of U.S. lettuce is produced in California and Arizona.

Plastic bags…It’s just another one …So many issues surround these pre-packed bags of salad…I for one don’t touch them with a barge pole…

If it is just the fact that you love a plate of salad greens…

Lettuce greens are the easiest to grow at home…

So really, what’s the point of buying supposedly clean lettuce that isn’t really clean at all?

As you probably know my big boy came to visit it was lovely and has been 3 years since I saw him in the flesh…We have planned our next visit we are not leaving it so long next time we are meeting in Bangkok in May which is his next visit to Kl, Malaysia for work a short trip for us both with no stopovers…

One of our conversations was the Keto Diet which he is currently following properly I may add he has done his research and is tracking his carbs and fibre to make sure he is getting the correct amount.

I believe in a healthy balanced diet and I get the fact that Keto targets the burning of fat and how…Long term isn’t his plan just a means to an end…I understood everything that he said and the why’s and hows and wherefores…

He sees the problem as being that people who were not brought up to eat proper food and cook from scratch are the ones who are just eating everything that they like and can now eat…As much as they like and still lose weight and inches…A recipe for problems later on…

Sean is eating the good fats and making sure he gets his recommended fibre and carbs as fresh food does contain carbs e.g starchy vegetables, legumes, grains, bread so it is opting for lower carb vegetables so drilled down it is a more sensible diet than I originally thought…I still think a healthy balanced diet is the best way as weight loss is not so easily gained…

How am I losing weight and inches?? 

By cutting out alcohol, processed foods, no more biscuits, swapped English tea for green tea which avoids the need for a biscuit to dunk, changed to brown/wild rice and eat rice once a day instead of twice a day and substituting cauliflower rice or zucchini pasta, eating more fish which cuts down on the red meat.

That’s about it…Update it is working my clothes are looser and a great tip my son gave me was instead of using a tape measure use a ball of string and hang them up every time you measure yourself and you will soon have a decreasing line of strings showing your inch loss….I thought that was a great idea!

My recipe this week and it is my favourite soup…Tomatoes, chilli, egg, mince, spring onions and Dill…. A virtual assault on my taste buds… The fresh taste of tomatoes is intense and heavy on dill which I love this is one of the best soups ever…

Egg drop Soup.

Egg-drop-soup-recipe

Ingredients:

  • 1 1/2 tbsp oil ( I use coconut)
  • 3 spring onions
  • 3/4 lb ripe tomatoes ( chopped and cored)
  • 1 tsp salt
  • 1-2 tbsp Fish Sauce
  • 1/3 lb finely minced pork/ chicken
  • 1-2 chillies diced diagonally
  • 2 eggs beaten or you can just drop the egg in whole and the heat of the soup will cook the egg.
  • 2 sprigs of coriander or dill or more
  • 5 1/2 cups water
  • Black Pepper to taste

Let’s Cook!

Heat the oil over medium heat in a large pan. Add tomatoes and salt, cover and cook until soft about 4-6 minutes. Stir occasionally to prevent sticking or burning.

Add fish sauce and chillies….I would add I tbsp of fish sauce and taste and adjust seasoning before serving.

Add mince and move around to break up any big clumps.

Add water, bring to boil and skim off any scum that arises.

Reduce heat and simmer for 10 minutes add spring onions and simmer for another 10 minutes.

If you are not serving immediately then remove from heat and keep the lid on.

To Serve:

Bring soup to simmer, Taste and adjust seasoning, fish sauce or salt.

Pour beaten egg into a bowl in a wide circle; stir gently to break up into strings.

Ladle soup into a bowl, add a generous sprinkling of pepper and garnish with Coriander or Dill.

Enjoy!

Healthy Eating…How to lose weight and eat the foods you love !

No more diets

Welcome back to Carol’s boot camp…Lol… The place where there are no excuses and moderation…

Eating is fun..isn’t it??..

Who tried the Protein shake last week I thought it was lovely… Today it is a lovely Mango and pineapple protein shake..when I get my butt moving and go get some fresh coconut water…my little man must have had a day off yesterday…

But did I come home empty handed…Of course not!

I bought some lovely spicy rice balls…I did only have one though but it was lovely with a little lime juice squeezed over the top a lovely little snack…

Come on then fess up what sort of week have you had???

Have you been applying moderation… Hands up! Who has tried some of those diets I showcased last week ??? Come on..spill!

This week I am going to let you have an insight into what I eat and what works for me… Starting with my early morning drink, first, one of the day and I like having a mixture of early morning drinks… one-day apple cider vinegar and a shake another day…I like to mix it up and of course coconut water which I love fresh and chilled… What are you drinking??? Have you changed what you drink??? Do you have a new favourite drink?…

Has kindly agreed to do a  Q & A on TOFU… I myself have never tried it, have never had any intention of trying it and know little or nothing about it.

Protein Drinks…

As you know anything that man has had a hand in the manufacture of my food always rings alarm bells for Moi… I just don’t believe all this hype and claims that are made about products… This latest news and I am sure there will be more… There always is…But it tells me we should be making our own until it is properly proven to really be a better choice than making Protein drinks from scratch…

Tropical Sunshine in a glass...Pineapple and Mango Protein shake.

Mango and Pineapple Protein Drink 1

3/4 cup of coconut water (or one of my suggestions from last weeks post)

1/3 cup of greek yoghurt ( cutting down) use natural yoghurt

1/3 cup raw soaked cashews

1/4 cup frozen pineapple

1/3 cup frozen mango

1 pitted date for sweetness( optional) I prefer honey.

Top with a tsp of chia seeds before serving ( optional)

Measure all the ingredients into your blender and blitz away… The colour was amazing a beautiful lemon colour and it tasted very nice.  New to protein drinks like me?… I do not know what they taste like although I have listened to others who say well they don’t taste great I drink them anyway…Really!

I like to drink something which tastes pleasant. Don’t you???

Of the two shakes, last weeks was for me my favourite but I  love raspberries and beets just a tad more than mango. Which one is your favourite???

Just a tip... I freeze my fruit in portions which makes life so much easier ..I also do that will my meat, fish as often I just cook a portion for my self so easy to do and when I worked it saved so much time and it doesn’t take long to do…I keep my own little box of  ONE PERSON sized portions…

What is a typical days food for me??? Yesterday it was…

A glass of Apple cider vinegar with honey and ginger.

A mid-morning shake…I tested the pineapple and mango protein shake…

My lunch was Grapow Moo ( Pork) with cauliflower rice...

Evening meal was Lasagne and salad…small portion.

Drinks throughout the day were water and I had a G & T for my sundowner. and one spicy rice ball… I also walked into town and back about  5km.

I don’t count calories… I just eat small portions and 2 meals a day…

I eat more spicy food than I used to and only 2 meals a day I don’t know if it is my age or whether my stomach now expects less…So far I am healthy, fairly fit, eat what I fancy but ALTHOUGH I don’t diet or count calories I am aware of what I am eating so if I have for example pancakes on Shrove Tuesday I enjoy them and make an adjustment the next day or the following few days depending on what I have eaten or increase my exercise.

It works for me and should work for you…we all have a good idea of good and bad foods …Don’t we? …I don’t use low-fat products as they tend to be higher in sugars. I would just opt for a sensible portion… Moderation in other words…

There are also foods that I don’t eat any more or very, very seldom… I don’t eat takeaways, burgers, processed foods, cake ( very )rarely, I hardly eat bread or potatoes,

BUT I eat rice, white rice, sticky rice, black rice, brown rice I vary my rice and of course cauliflower rice…

Pasta I used to love and now not so much…maybe once a month sometimes not that…If I can get it I love spaghetti squash or courgette ribbons with pasta.

Cheeses… I mainly eat Feta, very occasionally a piece of blue cheese and sometimes a little parmesan/ mozzarella on my pasta.

Fish... I love all fish but make sure it is the best fish I can get and not farmed… Steamed Seabass one of my favourites simple and easy to make

Fish with Lime and fennel

Meat... Chicken and pork mainly…lamb and beef are not readily available here but I eat a very small serving and lots of vegetables which I genuinely like either lightly cooked or raw which is a very popular way to eat vegetables and herbs here.

Sauces I love but make my own from lemons, ginger, chillies and garlic.

Eggs I eat probably about 6 per week.

Pickles, garlic, jalapenos, cucumbers, eggs, cabbage and kimchi I tend to snack on…

I hope that gives you a little idea of my diet all fruits and veg/herbs are either grown by us or bought locally and we eat a lot of vegetables … meat or fish and rice would be my smaller portion on my plate the rest would be vegetables and herbs and a dip.

Healthy Eating…Cauliflower Rice

My recipe tried and tested and it’s  awesome………. Cauliflower Rice.

SAM_6054…….Now does that not look like the real deal?

And all you need is a Cauliflower and an Onion.

A little Coconut oil to cook or other oil of your choice.

Sea Salt and a squeeze Lemon Juice.

Either grate or blitz in a food processor ( but not too fine) you want some texture.

Heat pan and keep pan HOT as you don’t want Cauliflower to steam and go soggy.

Use Tablespoon Coconut Oil and put in the desired amount of Cauliflower and onion mix.

Cook quickly and then season and add lemon juice.

All in all, it only takes a few minutes to cook….. a bit longer if more than one portion but keep pan hot.

If you wish to vary the taste you can add 1 tsp of Cumin seeds to oil before adding Cauliflower if you are eating Indian Food.

If you require colour if eating Mexican……. then add 1/2 tsp turmeric to oil and tsp tomato puree.

This is very versatile and just use your imagination and add any herbs and spices that you like.

To store...I make a batch and keep in the fridge for during the week but keep in a glass jar or zip lock bag…I think plastic containers may make it sweat too much…..Enjoy…. and if you are cutting the carbs it is an ideal and yummy substitute for rice and I love rice…… eat it all the time but happily substitute this as I am also a cauliflower lover.

New Year, New Resolutions mmmmm sort of, Maybe, Hell no!

Ok then I’ll go first…well events sort of overtook me…….here they come the excuses….do you know what…didn’t make any!  That’s that over with then…….

So for those of you who aspire to be an author, I’ll tell you my story:

All through the years I have loved and have written( mostly never finished) I was the bain of my teacher’s life as I remember writing pages and pages for my homework or maybe not ever really told just imagined at a later date that I must have been.

Read books galore.

If I wrote a letter it was probably akin to War & Peace.

Never imagined anyone would want to read what I had written or even tried to find out, just carried on with my life, raising my children, working, all the things we all do. Excelling at some and failing miserably at others.

Along came retirement and the opportunity to settle in Thailand. As you do…. you meet people and join groups etc as an expat.

Chatting with one such group and someone mentioned she was in a Writers Group..”Oh really, I would just love to be able to write”

That my friends was the beginning of a wonderful experience for me……..

Inspired by the welcome I received I went home and put pen to paper and the rest is history.

Well except for the other authors who were amazing and gave me so much help and encouragement and for that I am eternally grateful..thank you …you know who you are. Never in my wildest dreams did I think I would get to this point………so  I am busy writing my very first novel as one of my short stories will become that novel, Probably the title will change and I am so excited.Through this group I attended a Writers Retreat and short stories galore are flying forth and this is from someone who never, ever read, bought, considered a short story worthy of reading and I have now written a few …so all I will say is never ever give up on your dreams and keep an open mind and like me it may take years but the feelings and pride in my achievement knew no bounds yesterday…..I was euphoric.

Then along came a spider…A Golden Orb Spider.

SAM_6365…my garden is a  never-ending source of photo opportunities from, Spiders, Frogs, Centipedes, Termites, copious armies of red, black ants, the odd snake and scorpion it goes on.
