Eat Smart! Eat Healthily!… Recipes, Wacky Diet Corner and some Commonsense…

Ahhhh…First drink of the day…Oolong green tea…It is quiet and peaceful…Aston has been packed off to school, time to check my e-mail and stuff…and then I write…

I write these posts as a way of focusing my mind on my diet although I have been helped by my smartwatch it focuses me by keeping a track of my steps, heart rate and sleep patterns for me I like it apart from my laptop it is the first personal piece of technology that I own and a good buy…

What helps focus your mind...Do you find it easy sticking to healthy eating? If not …Why not? What drives you is it your health and your families health.?.. Is it because you want to wear the latest clothes and look good?. Is it to attract that special someone? Is it so you can play ball without wheezing with your kids?

I have used those reasons over the years plus some…Have I tried quick fixes…Yes, I have…Have I failed miserably after starting off so well… Oh…Indeed I have…I have brought books ( South Beach Diet), subscribed to Weighwatchers, Slimming World,…None of those bad…Like my wacky diet corner and I would never do those..But all restricted or didn’t allow certain foods in some way or another…I don’t follow rules very well either…Well, I don’t…

Low fat…Well, I was reading a study just the other day and like all studies, they need to be long term…Low fat and telling us meat was really bad for us…All debunked…It didn’t work and the latest news is …Forget all that…Low fat generally means higher sugar…

The latest news is...don’t eat low fat, cut out or down the processed foods…Eat organic where possible or wash your food thoroughly…Grow your own…Shop local…Don’t cut out food groups unless you are medically advised…EAT MODERATELY…

I know many of you are probably sick of hearing that word…What would you rather I use? within reason, reasonably, temperately, conservatively, sparingly, economically, somewhat, slightly???

Or just say…Forget…Eat your heart out…..

It’s like a horror movie …Some people are eating clay…A tsp a day in water…I think they all need to read Sally’s post on cravings…

A new series on a sensation that has been blamed for our consumption or over-consumption of certain foods since we were old enough to make excuses! How often do we tell ourselves or others that ‘we crave’ chocolate, crisps, cheese, soda, fried food or even something non-food related… such as dirt or coal? AND CLAY!

I think that it is good that we can attribute certain factors which cause our cravings and much of that is down to restrictive diets and it certainly makes me feel better that it is not just my lack of will power but a valid reason…

Recipe Corner...The cauliflower…

One of my favourite vegetables I love the white cauliflower and also the vivid green romesco cauliflower it is lovely just lightly steamed as a vegetable, roasted with some Indian spices or au gratin with a cheese sauce…I can now add cauliflower rice to that list and a cauliflower pizza base…Today I also saw a recipe using the cauliflower as a burger bun I haven’t tried and tested that yet…But I will…Below I have given the cauliflower rice recipe which is well tried and tested…

And all you need is a Cauliflower and an Onion.

A little Coconut oil to cook or other oil of your choice.

Sea Salt and a squeeze Lemon Juice.

Either grate or blitz in a food processor ( but not too fine) you want some texture.

Heat pan and keep pan HOT as you don’t want Cauliflower to steam and go soggy.

Use Tablespoon Coconut Oil and put in the desired amount of Cauliflower and onion mix.

Cook quickly and then season and add lemon juice.

All in all, it only takes a few minutes to cook….. a bit longer if more than one portion but keep pan hot.

If you wish to vary the taste you can add 1 tsp of Cumin seeds to the oil before adding Cauliflower if you are eating Indian Food.

If you require colour if eating Mexican……. then add 1/2 tsp turmeric to oil and tsp tomato puree.

This is very versatile and just use your imagination and add any herbs and spices that you like.

To store...I make a batch and keep in the fridge for during the week but keep in a glass jar or zip lock bag…I think plastic containers may make it sweat too much…..Enjoy…. and if you are cutting the carbs it is an ideal and yummy substitute for rice and I love rice…… eat it all the time but happily substitute this as I am also a cauliflower lover.

Cauliflower Pizza Base…

Ingredients:

  • 1 medium head cauliflower.
  • 1 egg, large.
  • 1 tsp Italian seasoning (dried oregano or basil)
  • 1/8 tsp salt.
  • 1/4 tsp ground black pepper.
  • 1/2 cup Parmesan or Mozzarella cheese, grated/shredded.
  • Cooking spray, I make my own spray I don’t do bought oil in spray cans…I have a little stainless steel one for oil.

Let’s Cook!

Preheat the oven to 375 degrees F/190 C and line a baking sheet with unbleached parchment paper.

Rinse cauliflower, remove the outer leaves, separate into florets and chop into smaller pieces. Process in a food processor in 2 batches, until “rice” texture forms.

Transfer cauliflower rice on a prepared baking sheet and bake for 10 mins this just removes some of the moisture.

Remove cooked cauliflower rice from the oven, transfer to a bowl lined with a double/triple layered cheesecloth or linen towel, and let cool for 5 minutes.

Then squeeze the liquid out of the ball as hard as you can. Be patient and do this a few times until barely any liquid comes out.

Increase oven temperature to 4 degrees F/200 C. Then in a medium mixing bowl whisk the egg with dried herbs, salt and pepper for 10 seconds. Add cheese and squeezed cauliflower mix very well with a spatula until combined.

Line the same baking sheet with new parchment paper and spray with cooking spray. Transfer cauliflower dough to the middle and flatten with your hands until thin pizza crust forms.

Bake for 20 minutes, carefully flip with a spatula and bake for a few more minutes. Top with your favourite toppings and bake again until cheese on top turns golden brown.

Slice and enjoy!

Let the kids help you can never second guess a child and what they will like.  Encourage them to help prepare their food…They are more likely to eat what they help prepare.

Healthy Eating… Eat Smart…No more fussy kids!

Welcome to this week’s Healthy Eating…How has your week gone? Are you finding the going tough, easy or a little in between …Good days and bad days…We all have those and we can’t change the past but we can change the future…

Why do we fail? There are lots of posts on that one…Here there are no fails as we can eat what we love just moderation with some foods…RIGHT???

If you are keeping your diaries are you seeing a pattern? What are you seeing? The same foods over and over again? or a variety?

What do I see? I see lots of variety of fruit and vegetables as I do go with fruits in season and we eat a lot of fruit…Mango and pineapple at the moment as it is plentiful…Also, the tender stem broccoli has now appeared and is beautiful…

However, as I don’t like to waste herbs and Grapow Moo( Pork) is not the same when frozen if I don’t have enough to pick and have to buy a bunch then that lasts me 4 meals so I eat that as my first meal of the day at least 3/4  times a week unless Aston is here and then only twice…It is also my all-time favourite Thai Stir Fry…

Think of all your favourite foods you like to eat and head over and read Sally’s post...You will be very surprised at what you can eat…and still lose weight…Those of you who know Sally know how vast her knowledge of foods and vitamins are …

My weight has stayed the same this week but that is ok…I have had a few extra treats…Lily is here…But that is ok…I enjoyed them …Today back to normal…

Now as you know I advocate healthy eating for all the family… if you start when the kids are young healthy eating becomes a habit just like sugar and the like…

Lily is 6 yrs old and in the school holidays, she stays with us…The remainder of the time she lives in a small, very rural Thai village …While she is here this time I have been taking her to swimming lessons…she loves the water and as Thai kids swim anywhere there is water it is very important that they learn how to swim properly although her mummy is very good and doesn’t allow her into just any water…

What I have observed since living here is that Thais do not walk anywhere and although most eat a very healthy diet they love their sugar…Sugary drinks and cakes are everywhere… In the village Lily and her mummy ride push bikes around the village they only use motorised transport when going into town and she eats what her family eat which is healthily her favourite snack here at the moment is lots of mangoes and she eats a lot of raw veg with her meals she loves raw cabbage and also the Thai pickled cabbage…Pak Dong which is cabbage, spring (green ) onions and salt…

The little group she is in for swimming consists of some children her age and some a bit older…Lily is the slenderest I would say and by far the fittest she zips down those lengths and sits on the side waiting for the others…Some really struggle about midway and have to be helped by the instructor to complete the length of the pool and to get out of the pool onto the side…Lily thinks it is because she eats her vegetables …Her words…

I see the kids arrive with a bag of crisps and a carbonated drink…In a car or on the back of a scooter…

I walk and Lily rides her bike to swimming…

The children have changed over the weeks she has been learning to swim and I am guessing have given up…Such a shame that they are unfit at 6/7 years old…

The motto is we need to teach children good habits early in life and encourage them to try different foods and if they don’t like them that’s ok..try introducing the same food in a different way a smoothie or if they are eating other fruits and vegetables then it doesn’t matter …Search for other recipes using the food they don’t particularly like and let them help cook it…A child who helps cook food will eat the food…

A good example is Cloud eggs...Many children don’t like the white of the egg but made this way it changes both the taste and appearance of the egg…These eggs were first made by my grandson when he was 12 yrs old and up until then, he didn’t eat the white of his eggs…He does now even when they are not made this way…

 

You will notice from the images that Aston made his own addition to the dish…Now at 14 years he is a competent cook and always cooks the meat for me he also cooks a mean steak…It is also a pleasure to watch him eat he thoroughly enjoys his food as it should be…He is not fussy and eats most things…

Lily who is 6 yrs is following in his footsteps she cuts and prepares the vegetables/ fruit for me and can use the blender and food processor…She makes lovely cakes and biscuits and can ice them beautifully.

Lily’s Beef Salad which we had for dinner the other night… The only thing I didn’t allow her to do is to cook the meat and slice it or the shallots but she prepared all the other salad and squeezed the lime for the dressing and mixed everything together…

Thai Beef Salad

Recipe for Thai Beef Salad.
 
Serves 2.
Ingredients:
  • 300gm Tenderloin Beef.
  • 1 sm red Onion or 2/3 shallots.
  • 2 Spring Onions.
  • 2 medium tomatoes or  8/10 cherry toms.
  • 1 sm cucumber.
  • 2 sprigs mint.
  • Big handful of Coriander.
  • 2/3 birds eye chillies chopped.
  • 1 lime.
  • 2 tbsp Fish Sauce.
Let’s Cook!
Grill the tenderloin medium rare.
While steak is cooking chop salad into small pieces and chop coriander inc stalks.
Mint take leaves off stems.
When steak cooked to your liking slice into thin strips.
Mix gently into chopped salad add coriander, mint leaves and chillies.
Stir in fish sauce and squeeze in lime juice.
Taste as personally I like more fish sauce and chillies but as the taste of chillies can vary then it is better to add less, taste and adjust seasoning if required.
This can also be made with chicken or pork.
Serve with steamed Rice or Sticky Rice.
As it has been proved so many times children who learn to cook at a young age are also far more adventurous with trying new foods and far less picky…
Smartwatch Corner…

It makes me smile this phone it sends me smart messages if I go to bed too late and when I had a few cat naps the other night it threw a wobble which made me smile…Too smart at times but I take it for what it is … It focuses me…But I do find the sleep patterns really interesting …I have never thought about sleep too much …Head, pillow die is me and I can just sleep anywhere hard/soft mattress if tired I sleep… But have also kept some late hours at times and now I know that it isn’t conducive to good health at my age so I am trying to be disciplined with my sleep.
What is Deep Sleep?

Adults need between 7 and 9 hours of sleep each night. But, I now know that it is the quality of sleep you get that matters.

While you rest, your body goes through different stages of the sleep cycle. Deep sleep, for example, is the stage of sleep you need to feel refreshed when you wake up in the morning. Unlike rapid eye movement (REM) sleep, deep sleep is when your body and brain waves slow down.

I also didn’t know that you went through different stages more than once during your sleep cycle approx every 90 minutes…Deep sleep is the cycle which it is hard for you to be woken from and if woken you can feel extremely groggy.

 

The correct amount of deep sleep is important during your sleep cycle as this is when the glucose metabolism in the brain increases this supports short-term and long-term memory and overall learning.

Deep sleep is also when the pituitary gland secretes important hormones, like human growth hormone, leading to growth and development of the body.

Other benefits of deep sleep include:

Energy restoration, cell regeneration, increasing blood supply to muscles, promoting growth and repair of tissues and bones AND strengthening the immune system. All very important to your health and well being…

It seems like the new diet trend predicted for 2019 is the hemp diet…Obviously, it is nothing new to food and body care lovers and is used a lot in vegan diets…but due to the interest in CBD for health, it has caused added interest and those who predict trends think it will be on the rise in 2019…Already products like dried pasta and I have noticed an increase in hemp seeds for sale and recipes using hemp seeds.

Also bitter foods like asparagus, grapefruit and cucumbers because of their benefits to your gut and of course your liver if you are on a detox regime…

My conclusion it certainly sounds like there is a move to eating more fruit/vegetables and an increase in interest in maintaining gut health which is a step in the right direction.

Cloud Eggs…Aston Style

And I thought Sunday mornings were for a lie in…Aston had other ideas and woke me with a bowl of meringue he was whipping… Time to get up then Nannie!

Cloud Eggs Aston style.

 

Serves One.

2 egg whites
1 egg yolk

half a small onion chopped finely
100 gm pork mince
A tiny bit of black soy sauce
Half tbsp oyster sauce
Salt and black pepper to taste
Let’s Cook!
Whisk the egg whites in a clean, dry bowl season with salt and black pepper..whisk until soft peaks.
Spoon onto a piece of parchment paper on a baking tray and make a hollow in the middle with a spoon. Drop the egg yolk in the hollow. Cook on 100 degrees for 7 mins.
Meanwhile, chop your onion finely and start to cook in a little olive oil add your minced pork and cook for about 3 mins or until cooked ..add a little dark soy and your oyster sauce…Taste and season with salt and black pepper.
Put on a plate and top with your cloud egg…

This was Aston’s recipe as he loves his meat so thought he would just do some mince and onions to go with the cloud egg..an experiment really as he is already thinking he will make some additions that next time…Chilli and some green beans…You could add some parmesan cheese to the egg whites or some finely chopped spring( green) onions and serve with bacon…

He has some imagination when it comes to food…But he is a 12-year-old with a passion to cook…

You are never too young to cook!

I believe that if children want to cook then they should be allowed…There are always things they can do …..Even Lily she bashes the biscuit crumbs for the cheesecake base..she is a dab hand with the pestle and mortar and can cut a mean mushroom. She also has to clean up..you cook…You clean…Is my motto…

 

Aston has progressed, he cooks all the steaks and eggs, the pie tops and is my taste tester for Thai food… A bit more lime or fish sauce and ramp up the chillies is his mantra.

Even Lily especially when it is beef salad sits with tears rolling down her cheeks saying Ped (hot) and still eats it…lol…. A true Thai 🙂

I have had this post half done for a while…Current events have greatly saddened me and I believe we can change things although some things have to come from those in power and publicly.

Some of my grandchildren are mixed race and we love them all equally and are very proud of them. I believe food can transcend some barriers if we share. We do this and if my grandson comes across prejudice we make bread…He can knead and bash that bread and we then get lovely bread and his anger at any injustice is forgotten…Dough is a wonderful thing and anyone who dares to tell me it cannot change …I will defy them and say it must change..there are many wonderful tolerant, loving people in this world and we can’t change the past but we can affect the future and need to look forward to a better one for our children and grandchildren by taking a stand against those who don’t want that…If we all did that it would have to pass on that message that says we don’t want this, we don’t agree with this… But stand and be counted..we must do that…
