If nothing ever changed there would be no butterflies

I have had fun looking at everyone’s New Year Resolutions, the wonderful recipes, Mango Curry by Freda@Aromatic Essence , scary stories which means I will never , ever look at a lippie in the same  way..Hugh @ hughsviewsandnews…Yearly stat’s to show our success,and who’s lost the e-mail and can’t find it???? lost in  the ethos…. wonderful photos of snow.. Thank you Ann ….which I love..but love being warm even more. I have written a few more, chapters to my novel ” A Fathers Nightmare.

I have sent a letter of complaint as the only chocolate gifts I purchased for my grandkids ..were melted…3 letters later….result! Ha ha ….What have I learnt over the years when complaining?……Be Nice..and keep being nice..you can’t ignore nice and nice gets you what you want!…No! Not more chocolate!

I have read those blogs which help meimages1EU08Q0G with WordPress, AND please how do I easily link to someones blog? It eludes me! It drives me crazy..It is probably soooooo easy..but for me…Nope! It is my nemesis…

Scrivener mmmm scrivener, word and so much more and thank you ,without those where would I be, I learn about the world ..the wonder of it in pictures, the  sadness and the downright cruelty.

The bush fires in Oz..those poor people who have lost everything… my daughter and son-law and the boys are 100km away from the worst and praying the wind doesn’t change in their direction and at the same praying for the ones who are not so lucky.

My Little Saang Chai has been unwell….he would outclass Houdini in how to escape….and if it’s edible..however dubious….he eats it or brings it home…..3 days of  sickness and not eating..poor boy..but he is back now in full fettle and back to chasing cyclists……so when he feels like blogging again ..will he be truthful..mmmm

Christmas decs are down….doesn’t it look bare?….windows cleaned….and I have a new printer ..my favorite colour..Lime Green ..how long will this one last ? me and printers do not have a good track record..we won’t even go there…

I have read a couple of articles about copy right so be careful out there…

 

So what to blog about? do I carry  on rambling with the occasional recipe? pictures of where I live? and places I have been? my efforts at scribing? the occasional reblog?  So my resolution is to focus..on what I have yet to discover…. Will it be easy? Nope…Worth it? Absolutely.

I won’t be impressed with technology until I can download FOOD!

Wow…. what a thought that is…just imagine trawling through your food blogs and coming upon this recipe that jumps out at you and ” You want it now” …….that just screams….  Eat Me !

You look in the cupboards and you have everything bar one item to make that dish, it’s chucking it down with rain, rush hour or the gas man is coming…..awwww damm and blast!

Just imagine if you could press a button and voila…it’s there ..right in front of you…

Come on ladies and gents it ain’t happening yet but I can tickle your taste buds with these delicious recipes. A lovely Thai Green Curry and Chocolate brownies although as I couldn’t get proper chocolate here..cos I don’t know if you are aware but to stop chocolate melting they add something and it’s nasty..yuk

So what I have done is made brownies normally…. no coconut flour and will try to get proper chocolate and make a batch for my next food blog….. we can then compare…good idea or what ..a double lot of brownies to sample…..mmmmmmm can’t be bad in my book….

Chocolate Brownies:

Ingredients:

1/2 cup oil…I used Coconut Oil but can use vegetable or other oil of your choice.

1 cup sugar.

1/2 Cup flour.

1/3 cup cocoa ( unsweetened)

1/4  tsp baking powder.

1/4 tsp salt.

1 tsp vanilla extract.

2 Eggs.

1/2 cup chopped walnuts (optional)

Method:

Put all ingredients except for eggs in food processor and blitz.

Beat eggs together and add to mixture, combine well.

Stir in walnuts if using.

Pour batter into 9 x 9 greased and floured pan.

Put in pre heated oven on 350( 175) and cook for 20/30 mins until shrinks away from sides of pan.

Remove from oven, cool and cut in squares. I sieved icing sugar on the top of mine.

Taste test: These are the first Brownies I have made for ages… the sponge is quite light but was more brownie like the following day. I prefer a more gooey, chewy brownie but they were ok.

Thai Green Curry:

Ingredients:

2 chicken breasts cut into cubes.
6 Thai egg plant. cut into quarters……They are the larger ones in the pictures.

sm bunch small egg-plant ( optional) Pea like size in Picture.
5/6 stems of Thai sweet basil (pick of leaves)
Large can or two sm cartons of coconut milk.
10 straw mushrooms quartered or use button mushroom.
Method:
2/3 tbsp curry paste( maybe start with 11/2) I don’t know how hot you eat curry.
Cook with tiny amount of oil to release flavour, add tbsp fish sauce cook for 2 mins slowly add coconut milk and simmer gently.
Add chicken, cook on simmer for 20 mins then add vegetables and Thai basil cook for further 20 mins serve with Steamed or boiled rice.

If you are making veggie curry just omit chicken and add carrots and broccoli or veg of your choice.
When we had our restaurant, chef always put extra veg in mine as she knew I liked veg so can add to chicken curry as well if you like although that is not the norm just how she did mine.
You can use beef or pork instead of chicken if you like but will req longer cooking.
Garnish with sprig Thai basil and extra sliced  chilli… if req.

I cook with wine, sometimes I even add it to the food.” W.C.Fields.

Good morning I have deliberated , digested  all of that over my G & T(s) and decided that this blog will be all about the “staff of Life” otherwise known as food!

I have cooked from an early age and started with good old British Fare and when I was old enough to cook myself my first dish was one that probably most youngsters start with ” Spag Bol ”

This was in the 60’s and I always remember my father..bless him..saying ” I’m not eating that foreign muck” he was a good old-fashioned Englishman who was used to good old-fashioned ” meat and 2 veg” very ably cooked by my mother.

Life moves on and it was probably a good few years before he did in fact .. eat it!

My aim in this blog is to give you recipes from the Uk and the rest of the world. Recipes that I have enjoyed, picked up on my travels or have been given to me by friends or just that now I have more time to do as I wish am experimenting with …..I make my own Bacon and Ham, bread,and am experimenting with cultures and pickling, all sorts really anything and everything… my minds an open book……..I hope you are as excited as I am…..

I would also love it if any of you had recipes you want to share, have eaten and don’t know how to cook or what the ingredients are in it and just have a name…..I will gladly research, cook it and share it…how’s that for a  good deal ??????

Salmon Trout.

Ingredients:

180gm  Trout or Salmon fillet.

For Topping:

  • 1 spring onion finely chopped.
  • 2/3 stems Coriander chopped finely.. I use the stem as well.
  • 1 red birds eye chilli finely chopped.
  • 1 tbsp Fish Sauce.
  • A cheek of lime.

Mix all ingredients together.

Put fish on foil and spoon topping on. I reserve some of the topping to add when serving. Seal foil and put in the oven on 180 for 10/15 mins until cooked.SAM_6823 SAM_6827 This depends on the thickness of the fish.

When cooked remove from oven and serve with rice.(This is when I remove the skin from fish.) and also add any additional topping. Enjoy!

Thai Pickled Cabbage ( Pak Dong)

  • 1 white cabbage. cut or torn into pieces.
  • 8 large spring onions chopped
  • Coarse Salt.

Let’s Cook!

Layer Cabbage, Onions and Salt in a dish ( with lid)

We then leave the dish on the kitchen top or in the sun for 1 day.

SAM_6824Then refrigerate for 2 days. It’s now ready to eat.

The longer you leave this mixture then it gets sourer so if you prefer you can leave longer.

No liquid is necessary as salt draws moisture from Cabbage and it makes its own liquid.

This can be eaten as a snack or with fish/or chicken.I prefer this to sauerkraut as it’s not so acidic but it’s personal taste.

Bread Pudding.

An old Favorite of my dad’s.

I keep all of my bits of stale bread in the freezer until I have enough for a pudding.

Ingredients:

  • 2/3 Ib of bread ( brown /white) or mixed.
  • 1-2 tbsp Mixed Spice.
  • 2 eggs beaten
  • 3 oz butter melted.
  • 12/16 oz  dried fruit (sultanas or raisins)

Let’s Cook!

Put bread in a large mixing bowl and cover with water or mix or milk and water to soak.

When soft I squeeze out in colander as much liquid as I can.

Add melted butter, mixed spice, eggs, and fruit and  combine.

I like lots of spice and fruit so if I think it needs more at this point then I add it is one of those dishes where you can add what you like for example if I have had some other fruit left over as in cranberries or blueberries I would add.

Put in hot oven 180 degrees for 1 hour if the top seems to be browning too quickly then reduce the heat a little. It should rise a little by end of cooking. Remove from oven and sprinkle with sugar.

004This is when I invoke my rights to cooks perks and have the 1st bit..to try of course as it’s yummy hot and straight from the dish. It is also great served with custard or cold if there is any left..haha. It also uses up all your bits of stale bread.

It’s going to be hard…

Of all my blogs so far I think last weeks was my best…I got some wonderful comments and for that my friends… I thank you.

Was it that quote from the wonderful lady who was Eleanor Roosevelt? Or my scribblings..maybe a bit of both, she drew you in and I delivered.

Well, peeps, at last, I have copies of our book in my hands and I am winging one off to a very special lady in the UK…My Mum…..who I am sure will dine out for months with her friends from that wonderful group, that good old English tradition which is  “The Mothers Union” and I am happy to give her full bragging rights…haha.

Now I am back on track writing my novel which one of my short stories in the book is a prelude for. It’s exciting times for me.

Anyway enough of me, I am sure there are lots of my readers who are doing and achieving wonderful things and I wish you all good luck with your chosen projects.

 

Recipes well not really this week..I had a wonderful  Beef Rendang that my friend Manik made and I am going to get her to show me some more Indonesian dishes which I will share with you.

Ham, I am going to use a piece of Pork Loin this time…so will let you know how that turns out. It is smaller so the brining time is less.

Next week I will give you the recipe for a lovely healthy Thai Dish called  Miang Kham a lovely tasty Leaf wrapped dish.

To eat you add a little of each of those finely chopped delicious morsels in the Betel leaf add some tamarind sauce and pop it in your mouth…A delicious snack… Miang Kham.

Mine is so forceful that it has been known for my teeth to fly across the  room……no sniggering…. with a nose like a ski jump, square on the end…..always wanted a little button nose………it’s never gonna be a dainty sneeze now is it?

They have left Heathrow and winging their way here….2 weeks of bliss and fun I do hope they love Thailand as much as their Nannie……..who wouldn’t???? ooohhhhhh excited……so folks if you don’t get a blog then Y’all know why……..but never fear you will get pics, pics, and more pics……excited doesn’t come close….but all you nans out there know how I feel don’t you??????

A New Year is like a blank book! The pen is in your hands! Happy New Year.

Hello and a ” Happy New Year ” everyone.

Good News!

On  Friday 26th December Mee & Payu became parents…….both Gibbons are under the care of the Gibbon Rehabilitation Centre here in Phuket and Mee gave birth to twins, one boy and one girl, an exceptionally rare occurrence in gibbons.

There are no known documented cases of white-handed gibbons successfully raising twins, either in the wild or in captivity; they’re simply not built to handle more than one baby. It, therefore, came as no surprise when very quickly  Mee struggled to manage the twins, who were clinging more to each other than they were to their mother. Despite her best efforts to carry them around, the smaller of the two babies eventually fell from high in the trees, fortunately landing on the soft, springy top of the acclimatization cage underneath. Mee quickly came down and picked him up again but neither infant seemed to find the right position on her body and at times she could be seen carrying them in her feet. After several hours, overwhelmed and exhausted, Mee sadly abandoned them both on the roof of the cage.Born 26 th Dec 2014 twins

The staff at the Rehab centre quickly intervened and made a makeshift ICU for the tiny twins.

…………Twins Born @ Bang Pae Gibbon rehab…….The project said…….” Both twins are back with their mother in the forest after their intensive care stint with GRP staff over the weekend!

On Friday afternoon a confused Mee abandoned both her newborns on the roof of the release cage. Because neither infant had been seen nursing all day, staff had to act quickly to ensure their survival and the babies were rushed to the GRP office where they received intensive overnight care. On Saturday morning the larger, female infant was returned to the forest and presented to Mee, who now had been tempted back into the release cage. To our joy, the new mother came straight over to collect her baby and the rest of the day she was seen caring for her and nursing her very tenderly. It appeared her maternal skills had now kicked in properly!

The smaller male infant spent another 24h being cared for around-the-clock by GRP staff, but on Sunday morning it was decided that we would try to see if Mee would accept him back into her care too. We were extremely pleased when this amazing first-time mother came to collect her second infant as well, cradling both of them in her lap!

Although there are no reported cases in the world of a gibbon mother successfully raising twins on her own, the rarity of this situation is unprecedented and advice from gibbon experts around the world has been to leave the babies with the mother as long as both are nursing. Mee’s maternal instincts now seem very strong and she is also being intensively monitored by GRP staff and receiving support and supplemental feeds. She will now have a chance to raise both her babies herself.

It is however clear that neither baby would likely have survived without the staff intervention over the weekend.”

A lovely story with a happy ending...I will have to go in a few weeks and pay them a visit and feel so lucky to live where such wonderful things happen…. that makes you realise that the world is not all bad…… After all the tragedy that has happened over the last few weeks and my thoughts and prayers go out to those affected it is lovely to hear something as heartwarming as this……..

Those of you that had snow were lucky…….but now Christmas is over my thoughts turn to the New Year and what lies ahead and I can’t wait………

Zorbing or Rollerball is where we were on Boxing day…and NO. I didn’t…

SAM_6304…….SAM_6294……..A flying entry and then rolled at great speed down a hill…..  I left that to my grandson,  I think I will stay with my feet firmly planted on terra firma thank you very much.But Aston had great fun as did the other participants…haha I made a great spectator.

Today I am just chilling with a glass of vino and tomoz…Pool Party Time and then 31st we will be bringing in the New Year… BBQ on the beach……Good Friends…Fireworks…Happy Times…Who will have the best firework display London, New York or Australia??????

I would also like to wish everyone who reads my blog an amazing New Year, The families of the Air Asia Tragedy love and to my friends who are sick may you have a speedy recovery and to everyone else Good Health, Happiness, Peace.
