Obesity…The figures out last week about childhood obesity in the UK shocked me…It should also shock you if you have a child who is obese…Of course we don’t want to give children a complex but handled correctly and by us as parents making changes to our families diets and lifestyles as a family would make a difference…It is not about shaming the individual child it is about sharing the problem and tackling it by making changes.

Sally’s posts on this subject make for good helpful reading to help tackle this epidemic…

Healthy Eating…My personal journey…No fads just commonsense…

Good morning from sunny Thailand…For quite a while now I have spoken about healthy eating and have told you about my weight loss but not in any depth and some of you may think yeah, yeah…

This week (and) I have never liked my photos taken… there are not many of me which I really like…But on this post I am baring all ( not) quite..haha…for those who thought ..You wouldn’t …haha…That would be too much information…

I wasn’t an overweight child or teenager…my weight piled on when I had my kids…Then began the yo-yo years…I fluctuated from 8 stone nothing to 16 stone something… I tried many diets some more successful than others…I tried many types of exercises…What did I learn from all that? I hate aerobics…I hate being in a class full of sweaty bodies…

gym-room-1180062_640

I discovered walking…No sweaty bodies…I can free my mind…I see more of life and people…The furthest I have walked …26.2 miles …I completed the London Moon Walk…Whether you run or walk 26.2 miles is a marathon…I did it! A few years ago now but I did it!

Now to bare all…Never before published pictures of moi…

Before…

The one on the right is me at my heaviest…I will now go through what I eat instead of what I did…No fads, not a diet, just commonsense…Eat this…Not that!

We see so much in the press and media or supermarket ads ...It is a minefield ..so I am going through what I have learnt and apply to what I eat…Also what I feed my family as everyone likes different foods…

Breakfast  Cereals…

I will use granola as an example…It conjures up that healthy image as it contains nutritious nuts, seeds, oats and fruit…It also contains more sugar than a can of coke…

Porridge, shredded wheat or Weetabix are what we eat…

muesli-3186256_1920 porridge fruit

If you really like granola and my family does sometimes then make your own…you then control what is in it and it will most likely be cheaper…  It takes 5 minutes to make and makes enough for 4 servings…

For the granola

  • 100 g organic bran
  • 150 g organic jumbo porridge oats
  • 25 g sesame seeds
  • 100 g walnuts
  • 1 tbsp sunflower oil
  • 5 tbsp maple syrup
  • 100 g  mixed fruit, such as Medjool dates and cherries.

Serve with …Greek yoghurt( not ) greek style yoghurt, fresh blueberries, pear, apple, kiwis, pineapple, mango any fresh fruit of your choice just chopped, cored and if necessary peeled.

Mayonnaise …I do buy it sometimes… although time permitting I make my own…

Light means lighter…RIGHT?

By law food to be labelled light, lite or lighter, reduced fat or low fat must in the UK be 30% lighter than the full-fat product in the US it is 50% or more calories from fat are required to have a 50% reduction of fat in light versions. Translated it means if the original product is high in fat the light version may still contain a lot of fat…So it could still be high in fat and also higher in added sugar to enhance the taste because there is less fat…

Well…After all that malarky…I just opt for the normal version as considering how much and how often I eat it…which is not often…I do not want to skimp on flavour…

All this low-fat is better than the high-fat trend is now proving that after all these years of telling us to eat low fat or no fat… to have been not true…We are now being told it is the type of fat, polyunsaturated fats are good fats…Trans fats are bad…

What are the worst trans fat offenders?

thai style fried chicken

In no particular order…Deep-fried Food, Pie Crust, Margarine, Shortening, Microwave popcorn, Animal fat and dairy, Store brought cakes and Cookies, Biscuits, Creamy frozen Drinks( Dairy Queen), Crackers, Non-dairy Creamers, pancake/waffle mixes…Basically, deep-fried fast foods, processed foods, packet mixes, store-bought cakes and biscuits all sugary processed foods…

What do I do…Cook from scratch…limit animal fat and dairy although in animal fat it is naturally occurring trans fat and in smaller amounts….This is where my favourite word keeps popping up…Moderation…Most of the above foods you can cook from scratch at home or use a healthier alternative…

It is all about knowing what the food you like to eat contains…Yes, it means a bit of research but if you want to lose weight and or be healthier …so be it!

What fats can you eat?… Not all fats are bad…

There are lots of good, tasty fresh foods which we can eat…Oily fish, salmon, sardines, mackerel, avocado, walnuts, almonds, hazelnuts, sunflower seeds, Olive oil, coconut oil, rapeseed oil, Butter(grass-fed), meat and cheese( in moderation).

Sugar… is labelled in many different ways…

I came across coconut flower sugar and syrup the other week…It was in the smallest of glass jars with a healthy-looking labelled and the price tag wasn’t healthy but a tad on the high side…

I didn’t buy it but did come home and do my research…Sugar is sugar and they may be natural and unrefined and just slightly better for you but …It’s Sugar! Added sugars are even worse…

What do I do...I never take sugar in drinks anyway but I do restrict foods high in sugar i.e chocolate…sweets…sodas…yoghurts…fast food…cereal bars…cereals, sauces…milkshakes…grape juice…These I limit or avoid…

Fresh Vegetables…we eat lots of fresh vegetables either steamed or raw …

I know many people don’t eat as much as they should of fresh vegetables …Maybe they juice and just swallow because quite frankly some of those juice options are pretty awful I would rather eat the fresh vegetables…You will never get your 5 a day by juicing and juicing also means you lose some of the fibre. We need fibre in our diet…Don’t we?

Oil…

olive oil

I use different oils depending on what I am making or cooking…My main ones are Olive Oil, Coconut Oil, Nut Oils or Ghee…There are so many different oils but check on which is the healthiest oil depending on what you are making no one size fits all with oil as they all have different burning points.

Salt…

The debate lingers on and opinions are still divided…I use locally produced salt and always taste before adding extra…As it is very hot and humid here we need to keep our salt levels up…

I do however limit my intake of cured meats, pickles, table salt, crisps and savoury snacks…

Eggs…

Again eggs have been the subject of many warnings over the years it all depends on how many you eat and how you cook them…If you are eating fried eggs every day with other fried foods, of course, you will gain weight…If you poach, make a cloud egg or boil your eggs then they are much healthier I also think it enhances the taste of the egg…

Alcohol…

The biggest contributor to my weight loss has been reducing the alcohol I drink…which of course included the soda…double whammy…The common consensus is that a good red wine benefits your health again …every day?…

I will tell you a little story…One of my besties worked in a bar for many years if she served you a drink in her home it was a pub measure…None of the just take the top off and pour which more often than not is what most people do…I know I did…

She had a health problem and went to the doctors who arranged for blood tests…The outcome was that although she measured her 2 evening drinks it was effecting her liver…To say she was upset is putting it mildly as we both knew people who drank far more without any apparent health problems…

The bottom line is we are all individuals and have different tolerance levels…her tolerance level to a regular sundowner was lower than mine…It took longer for my regular sundowners to have an effect on my health but they did eventually…Cutting right down to an occasional drink has proved beneficial in many ways for me…I sleep better and have lost a lot of weight…

Water…

drop falling into water

I always make sure I drink plenty of water and green tea…Although green tea does contain caffeine depending on the type /variety of green tea it does vary…I drink No.12 Oolong green tea which is lower in caffeine than some of the others…

Cheat days/weekends…

I have always advocated that eating healthy doesn’t mean deprivation or cardboard foods and never eating that burger, pizza or doughnut again…

Make sure you plan your cheat …Plan when and what you are going to eat…Most experts agree that one cheat day per week is sufficient. It’s a good idea to line up that cheat meal on a weekend or social occasion. By planning your cheat meal, you know what you’ll be eating and can cut a few extra calories earlier in the day…

By planning you can pick a favourite food or meal instead of just raiding the fridge randomly or running up and down the sweet or cake aisle and just picking up anything…

If you are going out for a meal and planning to splurge …pick what it is going to be…Will it be the breadbasket…dessert or a few cocktails? Focus on one and enjoy it without going overboard…If it is the lovely bread basket opt for that dessert next time…

In all honesty, I could not splurge on all three now…I just couldn’t eat all that…One cocktail would fill me up…As you lose weight your taste buds change and the amount you can comfortably eat diminishes…

So don’t cheat when you are famished, cheat in moderation and plan…

You can minimize the damage of a cheat meal the day of your feast by being careful about what you eat maybe reduce the carbs and eat a nice big salad with boiled eggs instead of potato… or fast before the meal. In other words, if you’re cheating at dinnertime, move your first meal to later in the day (lunchtime). Reducing the number of hours you’ll be eating not only saves you calories, but it also shifts your body into a fat-burning state.

To summarise…After picture…Not a great one… I will try to get a better one…

Me sept 3rd 2019

I don’t starve myself but I know what I eat and what it contains…I practise intermittent fasting as it works for me…I have mainly reduced my alcohol massively and soda…I have increased my green tea consumption.

I eat very little processed foods and cook from scratch…I don’t eat low-fat foods I just enjoy proper food but moderate my intake.

I eat a lot of fruit and vegetables.

My main carb is rice, I eat little bread, pasta or potatoes mainly because I prefer rice or sweet potatoes…I do like nice bread so as a treat I make sourdough or soda bread. Pasta I eat maybe once a month the same with white potatoes they are not my favourite carbs.

My total weight loss from beginning to end is 6 stone or 38.10 kilograms…All done by just increasing my walking and cutting down alcohol, soda and processed foods…I feel much better and my aim is to lose another half a stone …I thought 1 stone but have been outvoted by my family…We will see how I feel and what happens…

I hope this helps many of you as I do not ban anything…I eat what I fancy just not all at once or on a regular basis but if I want some pork crackling or a donut I will have one…It is all about what you eat and how much…It is about knowing your food and your body…It is about being sensible and not binging all day and every day…We are indeed what we eat…

Both myself and Sally from Smorgasbord cover lots of subjects and foods and help with understanding how different foods help you maintain good health…You don’t need expensive foods or diets just commonsense and knowledge…All you need to do is keep an open mind, fads, diets and food fashions are consistently changing. Scientific research frequently disproves previously held beliefs, diets and lifestyles…Think low-fat…

What works for one person because of their individual body shape, metabolism, DNA or underlying health condition may not work for another person.

A healthy balanced diet with moderate amounts of the bad foodstuff coupled with regular exercise is your best chance of staying well…

Eat Smart, Eat Healthily and lose weight…No gimmicks just common sense. …The Mono Diet…

Good morning everyone…I think after all these wacky diets and yes I have another one for you today…Just so it highlights the lengths some people go-to for a quick fix…Quick fixes never work…All of us here are in for the long haul…It stays off…FACT…We love our food…FACT…We limit but not exclude completely some food…FACT…I  ♥ Fudge… A DEFINITE FACT…

I so enjoyed my break to Phuket I came back feeling invigorated so much so I am off to Pattaya in just three weeks time to see my bestie…She who by her own admission is too lazy to walk and exercise… Is now sending me delicious pictures of steamed seabass and prawns with a little message saying I walked there…haha…Barbara, I just knew sooner or later I would enthuse you and she hasn’t seen the new slimline me yet…Pattaya here I come!

I have lots for you today and my thanx go to Dolly, Pete, Peggy and Sally for their contributions… Pete has done so well with his weight loss but he couldn’t find a way to contact me Ooops…Me bad…I struggle with the techie bits but now fingers crossed and teeth gritted my contact page works…So no excuses you can send me your stories…Just in case…my e-mail is carolcookstwo@gmail.com if you would like to email me your success/failures…

We will not judge we have all been there …With so many luscious foods on offer screaming…EAT ME! from magazines, social media and TV it’s no wonder we fail…

That’s not forgetting the alcohol of course...Me and my daughter we found a guy right next to our hotel who did the most marvellous takeaway cocktails…It would have been so rude not to…Now for the kicker…I only had two…I don’t know if my healthy eating regime kicked in and threw it out…If so a girl is entitled to some little treats…or whether it was the sun, sea and excitement of spending a few days with my daughter but me and the pan…You get the picture became good friends for a wee while…I threw up…

Too much info I know…I am just trying to say…Most of the time I am good…I am also not perfect and I have a little treat now and again…That’s Life!

Right back to business enough of my chatter…

Sugar...

sugar-1514247_1280

Something I am trying hard cut down on all these added sugars...Are in everything we love but we need to get cute and find alternatives…We can and I have …It was a comment from Peggy about the recently released film 2040 which while searching for that I came across this little clip about sugar…Thank you, Peggy x

What doesn’t help us is those cravings …You know when we just have to eat it…You should know that…I cover most eventualities here…We want to be fit and healthy…Right?

But and there is always a but…No worries…Just pop over to my friend Sal’s place and she will tell you all you need to know about that little devil, that nagging voice called craving…

addiction-sweets4010849_640

Not only do we have cravings but many of the changes we make to our diets cause havoc with our digestive system...Nought is easy, is it?

Wacky Diet Corner…The Mono Diet

My dear friend Dolly shared her experiences and she is a wise woman…unfortunately, where diets are concerned we throw all caution to the winds at times and we want to be a size smaller we want to fit in that dress…

The mono-diet (also known as the monostrophic diet) has become one of the most heavily searched diets on the internet. If you’ve heard of it, you’ve probably read the claims that it can lead to quick and simple weight loss. But the claims are not based on scientific evidence and there are sound reasons to avoid this risky program.

People who follow the mono diet eat only one type of food (like bananas or potatoes) to try to lose weight. There’s no scientific evidence supporting this type of diet.

Dolly said:-

For three weeks I have been playing weight yoyo. I felt fine; in fact, I felt a bit lighter and better by Friday of every week. I felt no discomfort caused by severe food restriction of a mono-diet. Eventually, I had no sustainable weight loss or gain, coming back to the same 30 lbs extra and facing the necessity of extra expenditure on clothes that fit. So, dear Carol, my lovely and free-spirited blogo-friend and culinary genius, this is one for your collection of Wacky Diets!…

Dolly’s story told in her own way and with her usual pizzazz…A must-read…Thank you, Dolly it is always nice to read a real personal experience of some of these diets xx

After all this talk about food, we need to eat…

Recipe Corner…

Cereal bars…again why would you? But no accounting for taste and many of my friends and family love them…Check the labels or make your own…I did!

I know many people eat them as a snack, when exercising etc ( they fit in your handbag ) and can be eaten on the go… so I thought I would make some using my favourite ingredients and then maybe I would get to like them and of course, they wouldn’t be like these shop brought ones full of sugars with that boring bland taste…

Carol’s Snack Bars:

  • 2 cups of oats
  • 1/4 cup nut butter
  • 1/4 cup honey, proper maple syrup or agave
  • 1 1/2 tbsp Coconut Oil
  • 1/4 tsp salt
  • 1 tsp vanilla essence
  • 1 egg white
  • 1/3 cup of dried fruit chopped I used Apricots
  • 1/2 cup unsalted roasted nuts I used walnuts.
  • 1/2 cup coconut ( optional)

Let’s bake some snack bars…

Apricot home made snack bars

With the oven on 350 degrees put the oats on a baking tray and cook for about 12 mins or until they are lightly browned( not burnt like my first batch) Remove from the oven and leave to cool down.

In a small pan add the nut butter, honey and coconut oil and warm gently add salt and vanilla essence and whisk until smooth, add the egg white and whisk again.

To the cooled oats add the nuts and fruit stir to combine then mix in your butter mixture, stir well until the oats are coated.

Line an 8-inch baking tin with parchment paper.

Pour in the mixture pressing down well so the mix is packed tightly or the bars will crumble when you cut the bars using the snack bars into pieces.

Bake on 350 degrees until the mixture is lightly browned around the edges about 20 mins depending on your oven.

Cool the pan on a wire rack for about 15 mins then lift the mixture out using the parchment paper.

Cool completely and cut into squares or oblongs.

Enjoy!

I hope that you have enjoyed reading this and that it proves helpful to you in your healthy eating journey xx

Eat Smart! Eat Healthily!… Recipes, wacky diet corner and some common sense is thrown in for good measure…

As always I start my day with a pot of Green Oolong Tea and I have mislaid another lb this week…I have also upped my exercise as I need to firm those triceps or bingo wings call them what you may but they exist…

Many of you like me were amazed at last weeks wacky diet… the tongue patch…I mean who are these people who think these up?… It is so just about making money out of someone who is so desperate to lose weight without as my good friend Sally said rather than learning to say No! I think if many more people learnt that word the world would be a better place…

Let’s start with this die(t) today shall we and get it over with and then we can talk common sense…

Wacky Diet Corner…The Master Cleanse Diet…

First created in 1941 by Stanley Burroughs he promoted it as a  liquid cleanse a healthy and natural way to flush the body of deadly toxins, pesticides, and other impurities. It was originally intended to treat ulcers and act as a detox.

Some 63 years later…  The cleanse became popular again after Peter Glickman’s book “Lose Weight, Have More Energy, and Be Happier in 10 Days” was published.

Fast forward to the present time and celebrities like Beyonce, Angelina Jolie and Gwyneth Paltrow are spouting the merits of this diet…This diet which has NO supporting scientific evidence that it clears toxins from the body…For those who did not know our bodies are designed to eliminate toxins through our kidneys, liver and lungs…

Why would you exist on lemon, maple syrup, cayenne pepper plus a nighly laxative like Senna and /or a morning salt water flush when it is likely you would also have headaches, nausea, diarrhoea and feel dizzy …Just to lose a few pounds which in all honesty as soon as you eat properly is likely to go straight back on…Could someone explain that to me??? If you still feel the need then please watch the video …I have…Nice lady…But by the time I was halfway through I felt the need to scream…

My thoughts on this… I think that all these words and phrases which are suddenly in words or fashionable whatever handle you wish to apply are all ways of body shaming…all words which people automatically in their minds make a connection…For example, the opposite of clean is dirty….The opposite of good is bad…

Currently, the buzz word is Clean Eating…which has replaced the good/bad food complex…

The phrase Clean food makes one think of food which is as natural and as close to the natural product as possible with minimal processing…But words like that do have the effect of shaming people…They feel inferior if they cannot afford organic produce or buy food at a farmers market …

So what?… you can buy fresh food from stores just make sure it is well washed…Many stores now are selling misshapen fruit and vegetables…So what?… It is fresh and good to eat…You may not have a big garden or any garden…So what? Try container growing this new soil free concept some of which you can grow indoors…Find out if there are any communal gardens in your area…There is no shame in any of this …It teaches your children to be self-sufficient to eat healthily from the best you can find which is available to you…Learn to cook from scratch…No shame in that… See what your local school is doing is it teaching children to grow food…Can you help..Can you get involved? It all widens your contacts …It all shows your children what can be done with very little…

Low carb/Cutting carbs…

Some fruit is high in carbs as are some vegetables it doesn’t mean that they are not good for you…Again it comes back to that good/bad concept…

On this blog…and in my healthy eating…Nothing is banned…You are in charge…You should be enjoying every mouthful of what you eat…End of…

I just keep away as much as I can from highly processed foods …If I can make a healthier alternative…I do…If I can’t …If I really feel the need to use it or eat it…I do…I just use moderation…

Guilty Pleasure(s )

Another phrase which is bandied about which screams at you for a TV advert…Why? Mind games played by advertisers…We should feel no guilt over what we eat…Just pleasure and enjoyment…

Confession Time…

Pieces of Yorkshire fudge

Before I start I will tell you that I mislaid another lb this week…applause…

I also ate nearly the whole bag of Tesco’s fudge…Did it taste good? I kept telling myself it did as I ate another piece…I do much prefer a more solid butter fudge…

Yes, it was probably pure sugar …No probably about it although I opted NOT to read the label…It was! But that is fudge for you…

I just opened the packet…Ate the contents…

Did I feel guilty...NOPE!…Will I repeat the exercise? Probably not…Well if it happened to be a proper butter fudge…I cannot lie…I would… The one thing I would not do is feel guilty…

Tomorrow is another day…

However if unlike me you really want to avoid giving in to temptation…I will be kind and give you this link to Sally’s Blog where she knows everything about cravings…It could be something as simple as being dehydrated…

Did you know?

Air popped popcorn is good for your waistline? 1 cup equals 31 calories and 1 gm of fibre. You can save calories by making it at home substituting Virgin olive oil for grass-fed butter and add your favourite herbs or spices i.e cinnamon, Paprika or thyme for example…

Time for a recipe…

Paella…I love a good Paella and always add a mixture of chicken and seafood…

Mixed paella

Ingredients:

  • 2 cups of Aribo Rice
  • 1 Litre of chicken stock with a few strands of saffron added.
  • 2 Chicken Breasts cubed.
  • A piece of Chorizo about 150 gm sliced and quartered.
  • I onion.
  • 3 cloves garlic.
  • 1 chilli.
  • I red Pepper.
  • Half Kilo of Prawns.
  • 1 kilo of Mussels.
  • 5 baby squid.
  • Half Lemon.

Let’s Cook!

Cook Chorizo in tbsp Olive Oil until lightly browned add chopped onion and cook for 2 mins. Put in a dish and leave on one side.

Lightly Brown Chicken in remaining oil and put on one side.

Cook cubed red pepper, chilli, garlic until softened. and put in a dish on one side.

Add rice to the pan and stir to cover with remaining oil( can add peas at this point) and add stock cook on rolling simmer 5-10mins or until the rice has nearly absorbed all liquid. Add chicken and either continue to cook on the hob or put in the oven on 180 degrees. Check and top up with water or stock if required if rice is too dry for 20 mins.

Add Chorizo and Pepper mix cook for further 10 mins checking or topping up stock if required. Add Prawns and Mussels and cook another 8-10 mins until open. Add squid for the last 3 mins of cooking.

Squeeze over lemon and garnish with lemon slices or quarters and if you have parsley in the fridge add some chopped as a garnish. If the rice still has not absorbed all the stock I cook-off on top of stove until absorbed.

Then serve…….. this is very much a recipe where the amount of stock depends on rice absorption and also what meat or fish you have. If I have some to use or in the freezer then I might add or use chicken thighs instead of breast. The mussels we got yesterday were quite big so we steamed before adding to Paella or if I have just shelled Mussels I stir through.

So really anything goes just you and your imagination, as you make more you will learn how to adjust to your own taste and once the initial prep is done it is quite easy to make…enjoy experimenting. It can also be cooked on a BBQ and then you get that lovely crust the Spanish call socarrat, on the bottom of the pan…lovely.

I hope that you have enjoyed reading this and that it proves helpful to you in your healthy eating journey xx

I appreciate that many of you who have been kindly following the blog for a long time will have seen this post before. However, if you are new to Smorgasbord, I hope you will find interesting.

The Brain – Part Three – Dementia and Alzheimer’s Disease

Dementia is actually a collective name for progressive degenerative brain diseases, which affect our memory, thought, behaviour and emotions. It is not a normal result of ageing and it does not seem to have any specific social, economic, ethnic or geographical links. It can effect different people in different ways, which makes it difficult sometimes to diagnose and to treat.

Certain dementia, such as vascular dementia, where plaque is blocking the blood vessels in the brain are linked to lifestyle related causes such as heavy alcohol consumption. Most dementia is likely to have an element of environmental, diet or lifestyle involved in its development.

Recipes and Rants …My weekly Roundup…

food and lifestyle blog

Wow! What a week and just in case it has been one of those crazy weeks for you… Here is a roundup of all my posts throughout the week so grab a cuppa or in my case a shawl the morning temps are a tad colder here …aka 18 degrees, settle down in your favourite chair. Relax and enjoy …

A subject which I am very passionate about is waste plastic, food and anything which fits in between…We live in a very beautiful world and it is getting trashed by mankind in the name of greed, profiteering or just plain laziness because we can’t be bothered to dispose of it correctly.

Sour Dough…Why on earth can’t sneaky bakers and manufacturers leave our Sour Dough alone or make it properly? I was actually really surprised and pleased at how many people make their own sourdough bread the art is not lost and seems to be growing.

Lisa @ alsworld nominated me for an award and for that I thank her… But it is Lisa who deserves an award for courage and cheerfulness in the face of a wicked debilitating disease …ALS…  A disease which eventually robs you of every faculty and a more cheerful lady I don’t know in the face of this and I am sure there are…She loves ice cream which is all she can eat so any recipes for the unusual she would love … x

One of my favourite times of the month is my monthly post over at Esmes Salon when I trawl through the culinary alphabet…Letter by letter and this month it was the letter J… This month I didn’t get many surprises except for the Jasmine Pearls which make the best Green Tea…brewed correctly there is no bitterness it is just lovely… And of course the lovely Juniper Berries…

Next month it is the letter K…Which again includes many of my favourite foods and maybe I can persuade Kale haters to love Kale…I have a beautiful Thai recipe using kale…

Never, it is a custom from the North of England and one which I will be partaking of this year…So thank you, Sue, for sharing this little gem of a custom..x

About Carol Taylor:

Enjoying life in The Land Of Smiles I am having so much fun researching, finding new, authentic recipes both Thai and International to share with you. New recipes gleaned from those who I have met on my travels or are just passing through and stopped for a while. I hope you enjoy them.

I love shopping at the local markets, finding fresh, natural ingredients, new strange fruits and vegetable ones I have never seen or cooked with. I am generally the only European person and attract much attention and I love to try what I am offered and when I smile and say Aroy or Saab as it is here in the north I am met with much smiling.

Some of my recipes may not be in line with traditional ingredients and methods of cooking but are recipes I know and have become to love and maybe if you dare to try you will too. You will always get more than just a recipe from me as I love to research and find out what other properties the ingredients I use contain to improve our health and wellbeing.

Exciting for me hence the title of my blog, Retired No One Told Me! I am having a wonderful ride and don’t want to get off, so if you wish to follow me on my adventures, then welcome! I hope you enjoy the ride also and if it encourages you to take a step into the unknown or untried, you know you want to…….Then, I will be happy!

Hot Dogs…Do YOU know what is in the Hot Dog you are eating?

Hot-Dogs-

I thought I knew much of what went into the food we eat and when I started this series quite by chance the other week I was shocked…And it takes quite a lot to shock me… I don’t eat Hot Dogs and never have … Unless it was a home-made sausage or a good sausage or I  was at a BBQ and have eaten the occasional proper sausage… So rare for me I haven’t had one yet this year so that tells you how often I eat any sausage…

There are many processed sausages and balls here…All displayed and looking tempting.

sausages - fish balls

Look at that display it is bright, colourful and I can see how it could tempt anybody to eat one…

But, honestly, when I look at anything like that I feel sick… I have always had an aversion to any food when I don’t know the origin and couldn’t guess as to the ingredients…

So taking an educated guess I would say in one way or another that wherever you travelled to in the world you would see fast food brightly displayed…Shouting Eat me!

Before I go any further I will now tell you what shocked me the most during my research…

To be clear hotdogs DO NOT contain human flesh BUT research by Clear Labs found 2% of ALL hot dogs contain Human DNA…More troubling is 2/3 of hot dogs marked as Vegetarian contain human DNA.

Hot Dog sausages are classic pre-cooked processed meat. it is very troubling to me how much an original ok product has and is changed and for nothing less than profit and greed…Proper ones contain beef or pork it is the other % which is very questionable as to the content. The majority who take up the biggest proportion of space on supermarket shelves.

I do think that old saying that ” YOU GET WHAT YOU PAY FOR ” is increasingly true. We all look for a bargain but what are we really getting???

hot-dog-21074_640

Traditionally made from Pork or Beef BUT it is the less expensive ones we should be aware of and avoid as they are made from chicken/turkey using low-cost mechanical machinery to separate poultry…So what are they separating? The good meat from the bad in a nutshell…

By bad I mean what you wouldn’t normally eat…like gristle, fat, offal, skin, lips, pig snouts, organs and other parts.

Mechanical separating machines separate the bits which are not sellable on the chicken carcass 50% of a hot dogs meat is fat, ground bones, blood vessels and connective tissues.

Hot Dogs also typically contain Sodium, saturated fats and Nitrate which when consumed in excess have been linked to health problems.

Hot Dogs are made by a process called ” Meat Emulsion”  even just those two words make me feel sick and I am surprised that I haven’t actually thrown up…Yet!

So what is in your hot dog?

The casing is made from cleaned lambs intestines which many sausage makers use and if you take the Scots then the Haggis that famous dish made of offal and other meat… the meat is encased in an animal stomach if traditionally made…

That I can accept as I would prefer a natural casing over a synthetic one.

Flavours...Is a very grey area as under US law many flavour combinations can be listed as just flavour rather than individually or use the wording “All flavourings contained in this product are approved for use in the Food and Drug regulations”.

In one of my previous posts, I found that many flavouring and colouring banned in Europe and other countries are not in the US and manufacturers go as far as not using banned substances in any exported goods but use them for goods distributed around the US…I am guessing you can read my mind on the one…

BANNED means BANNED

Right??

Potassium Lactate... More confusing than gross being a white odourless solid made with Lactic Acid and Potassium Hydroxide.

Corn Syrup, Sodium Nitrate, Msg and antibiotics are also ingredients…All of these could be a separate post on the dangers to health. So watch this space…

Salt… A single hot dog contains 480 milligrams of sodium which equals 20% of RDA. How many people eat more than one hot dog per meal and more than a few times a week?

Another alarming fact is that 3% of Hot Dogs advertised as containing Beef only do actually contain Pork…Why??

Because a set of USDA Rules 1994 state any meat can be removed from the bone by Advanced Meat Recovery (AMM) and can be added to the Hot Dog mixture.

It seems to me that all of these rules are designed to aid food manufacturers and not the public…Their customers…The people who line their greedy pockets…The people who are trusting who believe the advertising…

walking-454543_640

We should be walking with our feet…We should not be buying any products if it is not clear as to what is in the product. We should not be fobbed off by wording which is blatantly designed to fool.
