Welcome to this week’s edition of my weekly roundup of posts…Especially for you just in case you missed a few posts during this last week…Time is marching on…

 We are now just into the middle of September time just flies…already I am hearing mutterings about Christmas…sigh…although it will soon be time to make the Christmas Cake, Sweet Mincemeat and the Puddings…I will most certainly though be researching any chocolates I buy for Christmas this year as we all know or should know that child labour still happens and the checks that are made before issuing a Fairtrade certificate are not always very stringent…This brings me nicely to my first post of the week which was about Chocolate as it was International Chocolate Day..but you know me I can’t help just checking credentials…so please when buying Christmas chocolates please check their origins and if they are a bargain and cheap just spare a thought for those who pick the cocoa beans and imagine just how little they will be paid for your enjoyment and the companies profits…Just saying!

Plastic…The Latest News…Week 7… Climate Change and Renewable Energy…

Welcome to my Environmental A-Z…today it’s the letter P…I have been heartened to hear how many of you feel like I do that we need to take our own steps to avoid pollution wherever we can…You may have been surprised that as it was the letter P that plastic didn’t feature front, middle and top…it was deliberate… as I bang that particular drum on many occasions and it isn’t all about plastic there are other important areas of concern which can and do affect our health and our families health…like Pharmaceutical waste and Pesticides…

I sometimes get fed up with silly days of the year but when they happened to be something like National Potato Month then I will promote it as I think it is such a versatile vegetable that is used in so many cuisines it deserves to be highlighted as it is not just something fit for soggy chips it is so much more…This week I will be highlighting sliced potatoes and their uses and there are far more than just crisps/chips.

Friday Nostalgia…Apple Dumplings…

It’s that time of year when apples are plentiful and there is nothing like an apple dumpling with custard…How do you like your Apple Dumplings?

The Punch for mean initially conjured up…fruit punch and Punch and Judy…although I found many references to a “Punch”…There were many other references that didn’t involve violence of the worst kind although Punch and Judy shows in the early days were quite graphic…I hope you enjoy my foray through the world of “Punch”

Saturday Snippets…18th September 2021…Punch!

 

Once again I would like to extend my thanks for the emails, messages and calls of support for our dear daughter and for us stuck here at the moment so far away…it helps enormously…Lauren now knows what lies ahead for her going forward it will be a long road ahead starting with 6 months of aggressive chemotherapy but we hope with support and her fighting spirit she will get through this…on the plus side, her consultant has said she can attend a family wedding in a Cyprus before her treatment starts this cheered her up and she is busy sorting out her wardrobe…Thank you once again I do appreciate all the support…Much love and Hugs xxx

Friday Nostalgia…Apple Dumplings…

It’s Friday!… I don’t know if it’s because I am now another year older but I seem to be maudlin and thinking about past times…hence the change for a Friday…Nostalgia who knows where that will take me..Hula Hoops, Hopscotch, 5 stones, Cat’s Cradle, Old Maid(card) game, today as it’s National Apple Dumpling Day it revived memories of my nana’s and mothers Apple Dumplings…my grandmother encased hers in pastry my mother used suet pastry…

For those of you who live in the Northern Hemisphere… fall or Autumn is here…Apple Harvests and Apple dumplings were/are an easy dessert to make and pop in the oven or in the steamer…served with vanilla custard they are delicious…

Where did they originate because every country has its own version of the Apple dumpling…Though the first recorded apple dumplings were made in England in the 18th century and traced throughout history across many communities…All with slightly different versions…These English Heritage dumplings are just how my mum used to make them…

In the United States, they’ve really become known as an iconic Pennsylvania food…In Pennsylvania culture, apple dumplings are eaten for breakfast with milk poured on top of them. Of course, they are also served as dessert, usually with a scoop of ice cream or a dollop of whipped cream…They are also often found among the delicious Amish recipes…

Of course so iconic was the Apple Dumpling that even Walt Disney made a film…who remembers this film? …

Bavarian Apple dumplings sound delicious…Delicious Bavarian Knödelgröstl … roasted dumplings served with sauerkraut, horseradish sauce and apple pieces…Different and delicious I like the sound of these…

Australian Golden Syrup Apple dumplings…these dumplings are baked in the over with golden syrup…I know someone who will like these my supply of golden syrup arrived yesterday and Lily absolutely loves anything with golden syrup…I think I might surprise her with these…

How about making a dipping sauce to go with your apple dumplings…a traditional vanilla glaze, orange cranberry ginger, salted caramel and maple bacon…Oh Yes!

  • 3 slices maple bacon
  • 10 tbsp salted butter
  • 1 1/2 cups light brown sugar firmly packed
  • 2 tbsp water
  • 1/4 tsp salt
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract

In a medium, pan cook the bacon over high heat until the bacon is cooked and crunchy…once the bacon is cooked remove it from the pan and drain.

Leaving the bacon grease in the pan add the butter, brown sugar, water and salt then over medium to high heat stir constantly until the butter melts then reduce the heat and bring to a rolling boil for 5 mins stirring occasionally.

Chop the bacon up into very small pieces. Once the caramel has boiled for 5 mins remove from the heat and stir in the cream, bacon crumbles and vanilla extract.

Return to the heat and cook for 1-2 minutes remove from the heat and let the caramel rest and thicken for 10minutes…Seve with your dumplings and enjoy!
