CarolCooks 2…Weekly roundup… Wildlife bridges, Durian, Treacle Tart and Pepper curry…

Welcome to my weekly roundup if you have missed any posts  …Take a pew, grab a drink, settle down and enjoy!

great reads a weekly roundup lady with electronic reader

I will be joining you shortly and taking a pew because what with one thing and another it has been one of those weeks…A few of the bloggers/writers I know have had immense problems with FB and this has had all had a knock on effect on everyone I think… I for one will be taking any statements about free forever sites as it seems sooner or later they all want their pound of flesh…or disappear never to be seen or heard of again…

The first post of the week was an interview with the lovely Debby Gies and it was lovely to learn a little more about Debby…I hope you enjoy this interview as much as I did…

https://smorgasbordinvitation.wordpress.com/2019/03/17/smorgasbord-blog-magazine-the-sunday-interview-getting-to-know-author-d-g-kaye/

It was then time for Sally’s weekly roundup which included moi, Mexican getaways, Italian food, music, humour and much more so poop on over and say hello…

Time for my first post of the week…Healthy Eating… No more Diets and my increased exercise( walking) encouraged by my very smart watch…In 11 days I have mislaid 2.4 kilos…

Wednesday was over to Sally’s for our new series of Nutrient deficiencies and vitamin B 2 with recipes …I am enjoying this series as I am learning quite a lot about food and vitamins …Of course I knew or know what food is good and what is not so good and could take an educated guess as to what food contained but so much I didn’t know about not lesser vitamins but ones which are maybe not promoted as much we all hear about food which contains iron, more fibre, omega 3 and Vitamin C but I didn’t know about all the other vitamins certain foods contained…

Waste Not Want Not! …What an eye-opener this series is becoming…So many good projects but also so much harm still being done to bees, marine life, the ecosystem all by man who is the earths biggest enemy and abuser… Because if the bees die and the fish die then so will the earth as everything plays its part in the ecosystem…

Friday in my kitchen saw a hot curry from my Indonesian friend Mamik, Durian Chocolate and some treacle tart…A recipe or two…

Why is it called treacle tart when golden syrup is used …According to an  Original Receipt from ‘Newcastle Courant‘ – Friday 01 July 1887.

Where it was stated that …Treacle Tart is another excellent but homely dish and is of north-country origin. Line a shallow dish or tin, with scraps of-pastry which have been rolled out thinly. Make a paste with four tablespoonfuls of treacle and one of flour. Add also as much grated ginger as will lie on a fourpence piece, and also a, beaten egg. Half cover the centre of the paste with this preparation, place thin strips of paste across in transverse lines,

A slice of treacle Tart with custard

Tarts made with Golden Syrup but retaining the name treacle tart didn’t appear until the 19th Century…

About Carol Taylor:

Enjoying life in The Land Of Smiles I am having so much fun researching, finding new, authentic recipes both Thai and International to share with you. New recipes gleaned from those who I have met on my travels or are just passing through and stopped for a while. I hope you enjoy them.

I love shopping at the local markets, finding fresh, natural ingredients, new strange fruits and vegetable ones I have never seen or cooked with. I am generally the only European person and attract much attention and I love to try what I am offered and when I smile and say Aroy or Saab as it is here in the north I am met with much smiling.

Some of my recipes may not be in line with traditional ingredients and methods of cooking but are recipes I know and have become to love and maybe if you dare to try you will too. You will always get more than just a recipe from me as I love to research and find out what other properties the ingredients I use contain to improve our health and wellbeing.

The environment is also something I am passionate about and there will be more on this on my blog this year

Exciting for me hence the title of my blog, Retired No One Told Me! I am having a wonderful ride and don’t want to get off, so if you wish to follow me on my adventures, then I bid you welcome! I hope you enjoy the ride also and if it encourages you to take a step into the unknown or untried, you know you want to…….Then, I will be happy!

There is something for everyone this week…Who enjoyed their pancakes? I sure did and had maple syrup and lime juice on mine…

I am kicking all those foods out that have little nutritional value in my healthy eating plan and focusing on things which have more nutritional value …Like a pancake…What does it contain?  Eggs, milk, maple syrup, lime juice, grass-fed butter…5 out of 6 sounds good to me…In moderation…I thoroughly enjoyed mine…

After my weekly roundup, it was over to Sally’s where again there was something for everyone from how to cook the perfect roast dinner, numerology, book reviews, music and so much more…Enjoy!

CarolCooks2…Weekly Roundup…Rambutan and Sourdough

Welcome to my weekly roundup of posts I hope you have all had a productive week with lots of creative thoughts, no kitchen disasters and if you have please tell…haha

My week started with sourdough starter Take 3 which I decided to feed for another week as it didn’t float in water and if a spoonful doesn’t float to the top then it is not ready…Today…This morning it floated…Hallelujah…So it is shaped and kneaded and proving( we hope)

My weekly roundup…Let’s begin!

You know the routine by now…Settle down in your favourite chair, grab a drink and enjoy!

great reads a weekly roundup lady with electronic reader

This week started with a challenge not that every day isn’t some sort of challenge …haha I  was nominated for a getting to know you challenge …The questions were not too daunting so I accepted the challenge…It doesn’t really give too much away about me …We ladies have to keep a little to ourselves it all adds to our air of mystery doesn’t it ladies?

https://carolcooks2.com/2019/02/17/getting-to-know-you-challenge/

It was then that time again when we looked at our eating and our health… I am pleased to report that even if one’s eldest son came to visit that I didn’t waver and I am now 20 days into my alcohol-free challenge …There were all sorts of bets placed as to how long I would survive especially going out and with my boy here but he was also on his new eating challenge so we both did well …He is following the keto way of eating and has researched it a lot and explained much to me…That is this weeks spoiler alert! All will be revealed on Tuesday…

Before we knew it was Wednesday and time for the Sally and Carol show…Something new and exciting…How many of you have been told by your doctor or health professional that your body is nutritionally deficient in something? Then the panic sets in as you wonder how or what you can cook or eat to replenish and increase that deficiency in your body?  Never fear we have it covered Vitamin by Vitamin Sally will cover what you need to eat and I will supply the recipes …

Thursday bought us to week 12 of Waste Not! Want Not!… There were brilliant ideas of dispensing books instead of sweets from a school vending machine and the idea of 6 pack plastic holders being food for turtles instead of a danger to them…On one side it seems like a good idea but on the other side, it won’t encourage people not to dump their waste…What were your thoughts?

Friday bought my sourdough update and it is proving in the basket as we speak, some recipes and other bits and pieces…Blackberries and Rambutan Fruit was on the menu.

It was also an exciting day for me as my big boy arrived for the weekend and as we haven’t seen each other only online for 3 years it has been a lovely weekend which ended this morning as he had to return to Malaysia for work on Monday and then he is back to the UK on Wednesday…He travels a lot for work but we have decided that next time he is in Malaysia for work we will meet in Bangkok for a weekend and not leave it so long…

CarolCooks2…Weekly Roundup…The sourdough saga continues…

Welcome to my weekly roundup of posts I hope you have all had a productive week with lots of creative thoughts, no kitchen disasters and if you have please tell…haha

My week started with sourdough starter Take 3…I also found new Green Tea and some beautiful wild rice as I am making adjustments to my eating habits …Day 12 and no sundowners( daily tipple aka booze…Go ME!…being more vigilant on the added sugars and getting really excited as my big boy (son) Numero 1 is visiting next weekend…Yes, I will shed a tear as it has been nearly 3 years although Lily told me I was too old to cry…haha…

Weekly roundup…Let’s begin!

You know the routine by now…Settle down in your favourite chair, grab a drink and enjoy!

great reads a weekly roundup lady with electronic reader

Let’s Begin…

Valentines Day Roses, hearts and flowers and maybe a cuddly toy… I hope you all had a lovely Valentines day with your sweethearts…The cuddly toys and flowers were lining every street and corner here…Outside the schools…Isn’t young love grand???

My darling grandson came home with a bunch of flowers for me…Bless him… I am guessing bought from his lunch money which made them all the more special.

lilac and white flowers wrapped in brown paper

https://carolcooks2.com/2019/02/12/be-my-valentine-13th-february/

The subject of fibre in our diets was the subject of my Healthy Eating post and how most of us fall short of the daily recommended guidelines. Processed foods lack fibre having generally been stripped of all their goodness…white rice, pasta and bread all are low on fibre…Fibre keeps us fuller for longer…so we are less likely to snack…I know it is hard to introduce brown rice, wholemeal pasta and better bread to ourselves and our families…Many kids and adults are resistant to change…Introduce it slowly as the saying goes…Slowly, Slowly catchee monkey…I wrote a post on the subject and the origins of the phrase…Truly…haha

https://carolcooks2.com/2019/02/12/healthy-eating-no-more-diets-fibre-are-you-getting-enough/

Still, on the Valentines theme, my weekly food column over at Sally’s was a valentines menu …Sally picked some of my recipes and collated them and very nice choices she made…Thank you, Sally x

https://smorgasbordinvitation.wordpress.com/2019/02/13/smorgasbord-blog-magazine-food-and-cookery-column-with-carol-taylor-st-valentines-day-thai-three-course-dinner/

Time for my weekly Waste Not! Want Not! The subject was plastic and cigarette butts…

Did you know? For 32 consecutive years, cigarette butts have been the single most collected item on the world’s beaches, with a total of more than 60 million collected over that time. That amounts to about one-third of all collected items and more than plastic wrappers, containers, bottle caps, eating utensils and bottles, combined.

https://carolcooks2.com/2019/02/14/waste-not-want-not-week-11/

It was then over to Esme’s for my monthly column on the Culinary Alphabet…Please head over and check it out the letter this month is M … Mango, Miso, Mirepoix and more…

mango sticky coconut rice Thai dessert

How many culinary terms /food items can you think of beginning with M? I challenge you!

https://esmesalon.com/the-culinary-alphabet-the-letter-m/

Next, I take you through my week in my kitchen ..triumphs and disasters…Oh Yes! I have them…haha

I am trying to show you that my recipes are all cooked from scratch contain healthy ingredients which have proven health benefits…I am trying to break the mould or the myths that healthy food is bland and/or boring…There seems to be a barrier to me… we just need to know our food and what the benefits to our health is and cook accordingly.

I don’t spend hours in the kitchen and I don’t think that I buy special foods or expensive foods and I certainly don’t feel deprived in any way at all…It is also foods which we all eat ..grandkids included although we limit the heat for little Lily or take her portion out before we add all the chilli.

This week I also tried something I never thought I would…I read about it over @ John Reiber’s blog and made my comment and forgot about it…That is until one’s grandson came in and asked for some money as 7/11 had this new wonderful drink I didn’t take much notice and he then came home with a Tea and cheese drink… Yep, all in the same cup…To read all about it…Head over to my Friday’s post…

matcha tea with cheese

https://carolcooks2.com/2019/02/15/week-7-in-my-kitchen-my-sourdough-is-alive-and-kicking/

Finally to end the week it was over to Sally’ for Size Matters…The sequel…

Sally’s posts on Health Matters are easy to read, factual and you don’t need to buy special foods it is just knowing what part the foods we eat play in our overall health…Balances and healthy…Also about our feelings and why sometimes we cannot shift that weight …This week it is looking at Candida Albicans a very informative post and it included much I didn’t know or was aware of…Sally knows her stuff xx

https://smorgasbordinvitation.wordpress.com/2019/02/16/smorgasbord-health-column-size-matters-the-sequel-candida-albicans-sally-cronin/

Spoiler Alerts!

whats next post it note

Chinese New Year…Part 2 The Lantern Festival…Great new incentives to cut our carbon footprints and reduce packaging…six pack ( no ) not those…haha…although I could oblige with a pic, ladies??? Seriously six-pack rings which are food for turtles instead of killing them…

No more spoilers…You will have to wait and see…xxx

Enjoy your Sunday and thank you for reading …xx

CarolCooks2…My weekly roundup of recipes, Christmas traditions and Trivia…

Recipes and reveals what is in our food

Welcome to this weeks roundup…How are your Christmas preparations going? I am happy as my Christmas supplies have arrived, my sweet mincemeat and puddings are now made. My new oven is set up and ready to go so now I can bake some cakes … Not so many mod cons here…but I manage with a few improvisations and have surprised myself over the last few years as to how resourceful I have become…

Beef Bourguignon is an old family favourite and a lovely dish if you have a few friends around over the Christmas period it is a one-pot dish and cooks itself.

Next up are some dessert recipes Bingsu which you may not have heard of before but which is a popular dessert here in Asia…A lovely dessert to share, Mango and sticky rice is almost iconic and can be found almost everywhere here and very nice the mango offsets the sweetness of the coconut rice, Fruit Salad ours is a bit more tropical due to living here but always a crowd pleaser and lastly, my all-time favourite dessert is Creme Brulee and this one has a slight twist a touch of chilli and some lime…

Mince Pies and Sausage rolls don’t need too much of an introduction for many and a firm favourite in this house…and yes I make my own sausage meat as I cannot purchase it here…

Next, it is over to Sally’s for my last post until after the New Year and my second Christmas Menu which is a traditional one with a few twists… Sally, however, has her 12 days of Christmas posts and what a star she is… Not only is she promoting other authors and there are some great Christmas books to be had which would make lovely stocking fillers, but she is also promoting my recipes…Thank you, Sally xxx

You all know I love chillies, don’t you? Well, my big boy sent me a bottle of vodka infused with Naga Chillies which are apparently the hottest chillies on the planet and not for the faint-hearted…Shot of the said vodka is not advised and apparently a little in Bloody Mary spices it up somewhat…

There are also some recipes for some tamer tipples…Like a  winter Sangria, Mulled Wine, Irish Cream, Limoncello and more xxx

Monday saw me posting about What is Processed Food?

processed Foods

Processed food is any food which has been altered in some way during its preparation. Some examples are freezing, canning, drying and baking… Which means that not all processed food is unhealthy we just need to be aware of the foods which we may need to eat in moderation or totally avoid if we can…

I do hope that you are finding these posts helpful I myself am enjoying my research as there ARE somethings which I wasn’t aware of and as I only have one body I want it to stay as healthy as it can…

Eat Smart, Eat Healthy on Tuesday’s covers healthy Eating and also this week I covered Intermittent Fasting which is the eating plan I have adopted unknowingly I will add or not knowing what stages your body/digestion goes through during the day and how that way of eating can be good for you… It also contained some soup recipes which are handy to have on the go especially this time of year where in some parts of the world the weather is getting cold and if you have been busy shopping or working it is so easy to heat up…

Wednesdays are my regular Cookery Columns over @ Smorgasbord Magazine and the topic this time was how to cook a great stir fry something which took me a while to master my early attempts were like my fried rice you just wouldn’t want to go back for seconds or indeed even eat it…

Waste and Pollution

It is when I see beaches with all that rubbish it breaks my heart I mean how can little children play on that sand?  If that is on the beach what is in the sea and poisoning the marine life?

So sad to see how man is spoiling our beautiful world…

About Carol Taylor::)

Exciting for me hence the title of my blog, Retired No One Told Me! I am having a wonderful ride and don’t want to get off, so if you wish to follow me on my adventures, then you will be made welcome! I hope you enjoy the ride and if it encourages you to take a step into the unknown or untried, you know you want to…….Then, I will be happy!

Recipes and Rants …My weekly Roundup…

food and lifestyle blog

Wow! What a week and just in case it has been one of those crazy weeks for you… Here is a roundup of all my posts throughout the week so grab a cuppa or in my case a shawl the morning temps are a tad colder here …aka 18 degrees, settle down in your favourite chair. Relax and enjoy …

A subject which I am very passionate about is waste plastic, food and anything which fits in between…We live in a very beautiful world and it is getting trashed by mankind in the name of greed, profiteering or just plain laziness because we can’t be bothered to dispose of it correctly.

Sour Dough…Why on earth can’t sneaky bakers and manufacturers leave our Sour Dough alone or make it properly? I was actually really surprised and pleased at how many people make their own sourdough bread the art is not lost and seems to be growing.

Lisa @ alsworld nominated me for an award and for that I thank her… But it is Lisa who deserves an award for courage and cheerfulness in the face of a wicked debilitating disease …ALS…  A disease which eventually robs you of every faculty and a more cheerful lady I don’t know in the face of this and I am sure there are…She loves ice cream which is all she can eat so any recipes for the unusual she would love … x

Halloween ...And what a great post to celebrate Halloween with a night at The Stanley Hotel…

Well, the Halloween celebrations didn’t stop there… Sally and I brought out the garlic and Onions and as the saying goes we both know our Onions…No vampires bothered us…

Waste not, Want Not…I can hear my mum saying that to us as kids and I am trying really hard not to…Waste comes in many forms and this post discusses that…

One of my favourite times of the month is my monthly post over at Esmes Salon when I trawl through the culinary alphabet…Letter by letter and this month it was the letter J… This month I didn’t get many surprises except for the Jasmine Pearls which make the best Green Tea…brewed correctly there is no bitterness it is just lovely… And of course the lovely Juniper Berries…

gin tonic juniper berries

Next month it is the letter K…Which again includes many of my favourite foods and maybe I can persuade Kale haters to love Kale…I have a beautiful Thai recipe using kale…

I love Christmas cake and pudding with cream…I also adore marzipan…I love cheese… Have I taken 2 slices of Christmas cake and put cheese in between them? No! Never, it is a custom from the North of England and one which I will be partaking of this year…So thank you, Sue, for sharing this little gem of a custom..x

Which bought me nicely to my first post on Christmas treats and traditions with the occasional bit of trivia thrown in…Christmas beetles are the most spectacular little creatures which hail from sunny Australia…

Finally, if you are still with me is another of my short stories …I am flexing my writing muscles and I do hope that you like them…This one is very pertinent to where I live…A sad fact of life for many…
