Project 101 – Resilience is aimed at developing a strong immune system and a body that can fight off disease at any age. One of the key factors in achieving that level of robust health is being a healthy weight. There have been a number of risk factors identified that put certain groups of the population at a higher risk of a critical outcome from being infected with Covid- 19 – Opportunistic pathogens like nothing better than an acidic environment to thrive in.

Here we are again…I hope you all have had a productive week and are still safe and well…Time to tell you what has made me laugh, cry or cringe this week…time to tell you what I have been cooking…of course…

https://carolcooks2.com/2020/06/13/saturday-snippets-3/

Lastly… I just love roundups…Like many of you, I don’t always get the time to read every single post …This week I have been on to WP as I can’t like posts, I can’t always see all my comments it takes time to do that…intermittent faults I agree with Jim it either works or it doesn’t..who invented the sometimes?…,

I have been testing out recipes, cleaning, researching, shopping, writing, washing, writing, sleeping, trying to improve my photography skills, sorting out cupboards., reading, cooking with Lily…I think by now you get the gist…we all have busy lives and a roundup is just great for me…I also purchased another book…from a roundup..Silent Heroes which I am looking forward to reading.

This is Sally’s weekly roundup which is full of lots of books, reviews, recipes, health and music and laughter as we all agree here that laughter is the best medicine…

If anyone has a weekly roundup they love or they write then please send me the link and I will share here…Happy to help spread the good news and views..x

God bless you all in these turbulent times…be safe and stay well…

My hopes…for the future…

When this is all over my hope for the future is a cleaner world… I do want to see communities, and caring for your neighbour becoming the new norm…WORKING TOGETHER INSTEAD OF WORKING AGAINST EACH OTHER…Being kind to each other…Loving someone whatever their religion or skin colour…Can we make this happen? We have to but in the right way…Are we willing to make a stand? Personally, I would love to see lessons learnt ..realistically I have my doubts…

Thank you for reading be well and stay safe xxx

About Carol Taylor: Enjoying life in The Land Of Smiles I am having so much fun researching, finding new, authentic recipes both Thai and International to share with you. New recipes gleaned from those who I have met on my travels or are just passing through and stopped for a while. I hope you enjoy them.

I love shopping at the local markets, finding fresh, natural ingredients, new strange fruits and vegetable ones I have never seen or cooked with. I am generally the only European person and attract much attention and I love to try what I am offered and when I smile and say Aroy or Saab as it is here in the north I am met with much smiling.

Some of my recipes may not be in line with traditional ingredients and methods of cooking but are recipes I know and have become to love and maybe if you dare to try you will too. You will always get more than just a recipe from me as I love to research and find out what other properties the ingredients I use contain to improve our health and wellbeing.

Exciting for me hence the title of my blog, Retired No One Told Me! I am having a wonderful ride and don’t want to get off, so if you wish to follow me on my adventures, then welcome! I hope you enjoy the ride also and if it encourages you to take a step into the unknown or untried, you know you want to…….Then, I will be happy!

Thank you once again for reading this post I hope you all stay safe and healthy xx

Monday…The latest news on recycling and climate change…

I love that around the world much is going on to minimize rubbish and clean up the world…But Christmas is coming…

How much extra waste do you think will be generated around the world over Christmas and the New Year?… What can we do to minimise this waste?

Remember the 3 R’s…Recycle, Reduce and Re-use…Wrapping paper is a great example…

gift wraping-4649684_640

Habits are learned...That is a proven fact…Please show your creativity especially to the young ones …Get them to help…Teach them …

Try using colorful pages torn from magazines to wrap small gifts, and old maps or the Sunday comics for larger boxes.

Use reusable decorative tins, baskets or boxes…

Tuesdays...Time to pickle…Cabbage, eggplant, beets and watermelon rinds…

Let's Pickle

Someone commented that I was the pickle queen…I don’t know about that but I do make a lot of pickles…I am also saving my pickle juice to put in my Christmas Bloody Mary(s)

https://carolcooks2.com/2019/12/10/mistletoe-and-wine-time-to-pickle-cabbage-eggplant-beets-and-watermelon-rinds/

Wednesday…Whimsical Wednesday…with Carol…

Whimsical Wednesdays where I unashamedly indulge myself…I do hope you enjoy my meanderings today…Come with me and let’s begin…These posts are never planned… if I come across anything which I love or which tugs at my heartstrings then I save it for Whimsical Wednesdays… the rest just happens…It is wherever my thoughts take me at that time…Mainly they are random and unplanned…I mean they are the best thoughts…Enjoy! xxx

Christmas…gaining momentum…In our house, the tree is up…and so were the scales yesterday morning…3lb…Guess who gave themselves a big talking too…Yep…Moi…I have been cold I mean for me 9 degrees is cold aka freezing… Cardi weather…That was last week …I am happy to report the 3lbs have gone and I am now warm the temperatures are rising…

https://carolcooks2.com/2019/12/11/whimsical-wednesday-with-carol-22/

Wednesday…Also saw me over @Sally’s where Cranberries were the star…Not only are they very healthy as Sally will reveal to you but they are awesome to cook with and make a wicked cocktail…A very healthy and versatile little berry…

https://smorgasbordinvitation.wordpress.com/2019/12/11/smorgasbord-health-christmas-cook-from-scratch-sally-cronin-and-carol-taylor-cranberries-bittersweet/

Thursday…Christmas…’ Tis the season of love and laughter…Have you chased the Green Fairy?

Chrismas is in my soul and I hope that I can share some of the magic I have always felt at Christmas time with you and of course make you remember and smile…

Christmas is about memories, isn’t it? Old and new ones they all add something…

I am still waiting for some images of Christmas jumpers or have you read what I read and how they are not very environmentally friendly???

https://carolcooks2.com/2019/12/12/christmas-tis-the-season-of-love-and-laughterand-a-glass-of-good-cheer/

Friday…Christmas…In my house…Traditions, Treats and a touch of Trivia…

Saturday…

Saturday was meant to be my homemade sweet days …my disaster put me off a bit so I made another Christmas cake instead…I had lots of fruit to use and thought I would make one for my neighbours they love mince pies so I am sure they will love cake…

Sunday…Time to think of our pets…

I always cook Saangchais food fresh and Thai dogs eat rice not dried food etc so I just cook extra for him when I cook our rice…Sally posted a lovely post about what we shouldn’t feed our pets but also some great ideas on what we can feed them…Aptly titled What about Us?

Lily will be pleased as there was also a recipe for treats so she will love to make them for Saangchai…

https://smorgasbordinvitation.wordpress.com/2019/12/12/smorgasbord-blog-magazine-christmas-what-about-us-christmas-treats-for-pets-and-homecooked-dinners/

Christmas is also the time to think of those for whom Christmas can be a sad time …which is why when Sally asked for festive stories I penned Snow Storm…I hope you enjoy it as I am not an experienced writer and quite unsure of myself…My blog may make me seem confident but writing a story or a novel is another ball game…

It is for me anyway …I do hope that you enjoy my not so festive story but hear the meaning behind it and think of anyone that you know who may just feel a little better for a kind word or a cuddle at this time of year when their memories are sad ones…

Thank you, Sally, for sharing Snow Storm…xxx

https://smorgasbordinvitation.wordpress.com/2019/12/14/smorgasbord-blog-magazine-christmas-festive-stories-snow-storm-by-carol-taylor/

That’s all for now ..Enjoy your weekend xxx

Lastly, remember not everyone is fortunate and some people dread this time of year be aware and if you can add a little cheer please share your joy but also remember the other 364 days of the year pass your smile around and be kind…

Back from my 5 days od sun, sea and sand and the good was my weight stayed the same…To say that was one of life’s miracles is not true…I did increase my food and alcohol consumption BUT I also increased my exercise …Laps of the said pool and more walking…Who doesn’t like a stroll along the beach???

As I was just back from sunny Phuket and catching up with my daughter I came back on a real high and had an extra spring in my steps…My head was buzzing with lots of ideas but I couldn’t settle so as Saangchai has been bugging me to do a blog post once again I resurrected an old one and let him have a few words and I might just might give him a monthly spot…

Yeah…my mistress has given in…woof …I will be back peeps..but before then I do have a guest spot over at the lovely Tori’s blog with the very pretty Lilley…on 23rd August…My guest spot debut…I might even get asked for my pawprint…Fame at last…woof

https://carolcooks2.com/2019/08/01/dogs-are-not-our-whole-life-but-they-make-our-life-whole-saangchai-and-soi-dogs/

Cempedak fruit was a new one on me and my daughter and her other half just loved it…I must say the Thai batter using rice flour is so very light and crispy…I ate way too many of them but they were such moreish little crispy bundles of fruit…and that BBQ mackerel were so moist and tasty but I can get that here …It is my new favourite fish at the moment.

Monday saw me posting about What is Processed Food?

processed Foods

Processed food is any food which has been altered in some way during its preparation. Some examples are freezing, canning, drying and baking… Which means that not all processed food is unhealthy we just need to be aware of the foods which we may need to eat in moderation or totally avoid if we can…

I do hope that you are finding these posts helpful I myself am enjoying my research as there ARE somethings which I wasn’t aware of and as I only have one body I want it to stay as healthy as it can…

https://blondieaka.com/2018/11/05/what-is-the-definition-of-processed-food/

soup on the hob or fire

Eat Smart, Eat Healthy on Tuesday’s covers healthy Eating and also this week I covered Intermittent Fasting which is the eating plan I have adopted unknowingly I will add or not knowing what stages your body/digestion goes through during the day and how that way of eating can be good for you… It also contained some soup recipes which are handy to have on the go especially this time of year where in some parts of the world the weather is getting cold and if you have been busy shopping or working it is so easy to heat up…

https://blondieaka.com/2018/11/06/eat-smart-eat-healthily-no-to-diets-2/

Wednesdays are my regular Cookery Columns over @ Smorgasbord Magazine and the topic this time was how to cook a great stir fry something which took me a while to master my early attempts were like my fried rice you just wouldn’t want to go back for seconds or indeed even eat it…

https://smorgasbordinvitation.wordpress.com/2018/11/07/smorgasbord-blog-magazine-the-food-and-cookery-column-carol-cooks-stir-fries/

Thursdays are now my Waste not! Want Not! days and it has morphed into something much bigger and for sure I am learning much but also pleasantly surprised at what many of you already do..So a big well done…Give yourselves a pat on the back!

Waste and Pollution

It is when I see beaches with all that rubbish it breaks my heart I mean how can little children play on that sand?  If that is on the beach what is in the sea and poisoning the marine life?

So sad to see how man is spoiling our beautiful world…

https://blondieaka.com/2018/11/08/waste-not-want-not-part-four/

Friday was more joyous as yes we are entering the Season of Goodwill to all men…There are recipes and trivia..All sorts of festive cheer… and a recipe for Irish Cream which if you love Bailey’s you will love this …Easy to make and even easier to drink…x

box-christmas jumper -christmas-balls-714696 (1)

https://blondieaka.com/2018/11/09/christmas-treats-traditions-and-trivia/

That’s all for this weeks roundup please keep those comments coming I have had some great responses and ideas and I will be writing to a certain chairman and making a suggestion on how they can help reduce waste…An idea from the lovely Will Dare but more about that next Thursday…I thought his idea was a brilliant one 🙂

Thank you for reading and enjoy the rest of your weekend and try not to let the festivities stress you out…Remember to take time out for yourself if you can xxx

Welcome to my weekly roundup which I hope you are enjoying so get your favourite cuppa, sit down put your feet up and enjoy.

This week we are starting with a fruit which many of you are not familiar with the Pomelo fruit…much larger than the grapefruit but very similar just without the bitterness and one which makes a lovely salad.

Pomelo Salad

https://blondieaka.wordpress.com/2018/06/01/fruity-fridays-pomelo/

Next, we have The Charade which is a tale of mystery and intrigue the plot of which is being published chapter by chapter. Co-written with the lovely Steph ( SC Richmond) who you may be familiar with …Can I ask that you all say a little prayer for her as things are tough for her at the moment and she could do with some TLC.

https://blondieaka.wordpress.com/2018/06/01/the-charade-chapter-21/

Moving on I have taken you for a trip around some of my favourite London Markets.

London Markets

It was then the turn of the USA and my trawl through some countries which we are all familiar with and their place on an obesity chart… I couldn’t help myself … I had a little rant…I really am not a fan of greedy manufacturers and governments and I think I may well have expressed my displeasure just a tad…

https://blondieaka.wordpress.com/2018/06/05/healthy-eatingno-more-dietsobesity-around-the-world-the-us/

After all that exertion I took you on a long tail boat ride to a lovely Sea Gypsy Village in Thailand. the beautiful village of Koh Panyee.

Street food…I love it and am so lucky to be able to just pop down the road and buy some…Lovely fresh from the drupe coconut water, spicy little rice balls( my treat) and of course my favourite Som Tam ( Papaya ) salad…I could live on that… I think if I had to choose my last meal that could be it!
