Monday...The official start of a new week saw lots of goods new in my weekly update of recycling and the enviroment…I do think though the single news of how a couple catered for their wedding breakfast using waste food was such a great example of how much good food is wasted when people are starving… my heart as well as being  saddened  as truly no one should starve but it also made me realise that we should all take responsibility instead of just coasting through life without a care or a thought as to HOW we are so lucky to live on this beautiful planet and how we are the caretakers and should be preserving it for future generations…Our children and our grandchildren…

Tuesday...The day for commonsense coupled with a healthy diet …Fads come and go and even work for a short while until we get bored and cannot face another hour of such a restricted regime…Long term they do not work…FACT…Long term…

FACT…I have lost just over 6 stone aka 40 kilos…This last week another llb off…This is over the last 4 years with much of it over the last year…I have given it another little push the more I learn about myself and my body I adjust what I eat as I go along…But I eat normal food and I do not restrict my self I moderate my self and I have cut down a lot on m alcohol this past year which is why the boost in m weight loss…I feel so much better and have more energy…I sleep better and I still enjoy the odd sundowner just not every single evening…So please pop over and join us we are a friendly bunch…and leave your guilt at the door..It is not allowed in…We all enjoy our food…

Friday…Is the day where I give you a peek inside my kitchen what I cook…Last week sees us making lovely jalapeno rolls …All went fine until we cooked them…uncooked jalapeno wraps with cream cheese

We had put too much of the cream cheese and jalapeno filling in them …the fat was too hot and some split…we got crispy bits and they tasted lovely…Nice and spicy but not picture worthy so take two is today…Friday I will show the finished Jalapeno rolls in all their golden scrumptious glory…my mouth is watering already …x

Back from my 5 days od sun, sea and sand and the good was my weight stayed the same…To say that was one of life’s miracles is not true…I did increase my food and alcohol consumption BUT I also increased my exercise …Laps of the said pool and more walking…Who doesn’t like a stroll along the beach???

As I was just back from sunny Phuket and catching up with my daughter I came back on a real high and had an extra spring in my steps…My head was buzzing with lots of ideas but I couldn’t settle so as Saangchai has been bugging me to do a blog post once again I resurrected an old one and let him have a few words and I might just might give him a monthly spot…

Cempedak fruit was a new one on me and my daughter and her other half just loved it…I must say the Thai batter using rice flour is so very light and crispy…I ate way too many of them but they were such moreish little crispy bundles of fruit…and that BBQ mackerel were so moist and tasty but I can get that here …It is my new favourite fish at the moment.

I am having a fabulous time in Phuket and will be back on Tuesday if I get the time between having fun and eating great food and having a cocktail or three and can respond to any comments on my phone I will if not I will catch on my return.

The first post of the week is a subject dear to my heart…This beautiful world and I would love to be sure that my children and grandchildren and their children will have a beautiful world for their lifetime and beyond…

If some are correct we don’t have that long and if others are correct then we have plenty of time to put things right…Who is right and who is wrong.?.. After reading and listening to the videos … I wish I was wrong… Not for the fact that we really don’t have much time to save the world but for the fact that we appear to be being misled by those who we should trust yet again…

Don’t take my word for it…Do your own research and draw your own conclusions…In all honesty, I still don’t know the answer as I am ploughing through the information and misinformation but I am not giving up as it is too important to me and my family…

Time for a catchup if you have had a busy week…I know what it’s like some weeks just fly by and before you know it..gone…Weatherwise we have had blistering heat and tropical storms this last week which are always welcome as it cools the temperature down a little…I am counting the days as I am off to Phuket on Thursday for 5 days so I will pre-schedule posts but excuse me if I am late replying to your comments( which) I love by the way…as we are meeting with my daughter she is popping over from Australia so lots of catching up and a few tears… some good food, a bit of beach with a massage thrown in…

Monday’s post was once again...Plastic, recycling any news I think is interesting and I will never run out of ideas…I watched a beautiful programme yesterday about Japan’s Earths, Enchanted Islands and the water which comes down in abundance from the mountains to the rice fields and the villages below …when it reaches this village …where no detergents are used when washing up the scraps are just washed in this beautiful water and each house has a carp pond underneath being bottom feeders they eat all the scraps and the water stays crystal clear as it was from its source it was amazing to watch…Absolutely amazing programme…A simple, effective system…

I explored using banana skins as fertiliser, Growing food without soil and should we be teaching kids how to grow food in schools…The answer was a resounding yes to that and it is happening around the world so many good news stories in the comments which I will go into tomorrow …

Eat Smart, Eat Healthily is now starting to reap the benefits for me …I have so much more energy..even in this heat…I am the lightest I have been for many, many years and I can’t believe I have taken this long to get my brain in gear and realise that…Yes, I still enjoy the odd treat…I eat food I love I just watch my portions…The best thing is I can go shopping here as the clothes sizes are smaller than the UK equivalent …I can pick from the racks for the first time in a long time and it is fun…Between my ideas and recipes and Sally’s health tips, I have cracked it…I hope you can too xx

I am back! Wednesday every fortnight over at Sally’s….This week I kicked off with measurements as they vary around the world and ingredients as well I still get stumped at times and have to look it up…I kept seeing a stick of butter in the ingredients list …We don’t all know what it is…I didn’t…I do now…So a plea to all you lovely home cooks spare a thought for those of us who may not know what some of your ingredients are…Pretty please…

Healthy Eating I can’t stress the benefits enough…However, stress can also kill…Of course, it can provide us with thrills and get that adrenaline going…But it can also KILL…Sally is the lady to listen too as she knows her stuff she delivers her knowledge clearly and concisely…She doesn’t( like) me pull any punches she tells it like it is… but leaves the reader feeling positive and knowing what to do…Keeping our heart and other major organs healthy can ensure we have a chance of living a longer life …Worth a read? Doesn’t time fly? No sooner has the week began it seems to be over. I hope you enjoy this weeks roundup a few changes I was getting bored…haha…So you know the drill…A comfy chair, a drink, settle down time for a good read…Lots of goodies for you this week…A good mix and something for everyone…Well unless you are a rocket scientist…haha.

To start the week its waste, plastic, climate change an update of what is going on…One of my concerns and something I am passionate about as we only have one world just like we only have one body…I have watched many videos and clips made by normal everyday people who are trying to do their best and the amount of rubbish in the seas is mind-blowing and the damage it is doing more to the point it seems however hard we try the local councils and government are dodging the issues.

How does plastic get into the sea?… It is the subject of many news desks, question time, documentary’s, in fact, it is on the news, it comes up on your FB news feed, magazines, newspapers..everyone is talking about plastic…But although plastic is a huge problem so are discarded fishing lines and nets so let’s not forget those and the distressing photos of turtles and fish with hooks in their bodies or caught in discarded nets and they can’t free themselves…So much abuse of the natural world is caused by man.

Squid or Calamari...I call it squid purely out of habit and it is called squid here in Thailand whereas in Europe it is called Calamari. What I buy here is definitely Calamari family but I refer to it as squid.  Squid is different it is cheaper and not so tender…If you are not sure ask your fishmonger or check out this post to see the difference between the two …Either way, the recipes are Squidilicious…
