Cajun Spiced Salmon with salted Lime Butter…

Salmon one of my favourite fish and a beautiful dish cooked with these Cajun spices and topped with lime butter…

Cajun Salmon with Salted Lime Butter…

Cajun spiced salmon

Ingredients for the Salted Lime Butter.

• 4 tbsp butter unsalted
• ½ Lime zested
• A pinch of sea salt

Method

Mix the lime zest and salt into the butter, then keep in the fridge until required either in a ramekin or make a roll and slice of as required.

Ingredients for the Cajun Spice Topping…

• 2 tbsp of dried oregano
• 2 tbsp garlic powder…
• 2 tbsp paprika
• 2 tbsp mineral or sea salt
• 1 tbsp black pepper
• 1 tbsp dried thyme
• 1 tsp cayenne pepper
• 1 tbsp onion powder
• 1 tsp chilli flakes ( optional)

Let’s Cook!

  • Mix all the dried ingredients together …I always add fresh garlic and chopped onion to mine so I make my mix excluding the onion and garlic and then when required I add the fresh ingredients…
  • Place the salmon on foil and add the amount of  Cajun topping you require
  • seal the foil and cook in the oven at 180 for 10-15 mins until cooked
  • I open the foil for the last 5 minutes of cooking and add my lime butter…
  • Serve with rice or noodles and freshly steamed vegetables.

Just Fish…Or a chemical cocktail??

I love eating fish and prefer it to a meal containing meat I could quite easily eat fish instead of meat…But the fishing industry is in crisis worldwide.

Overfishing, fish farming using chemical and genetic manipulation, pollution of our oceans, bad management the fish flesh we eat now is more than likely a deadly chemical cocktail…

It just scares me that man has no care for our planet they just take and take until either we can’t eat it or are scared to feed our families with it or there is just no more the stock is depleted…

As a consumer and a worried one I feel we must start this protest at home…We are the shoppers, We choose what to buy, We choose what we feed our families …That is the bottom line folks…WE CHOOSE…AND WE MUST!

So what can we do? Well, only buy the fish we know is safe…WE/YOU need to get off our backsides and do some research find the companies that practise sustainable fishing, share that information among your friends and families…

Prove you care…Words are empty…Actions speak louder than words…

I will give you a starter for 10 here…I will tell you what I know and if you know more than me then pray please tell us all we would love to know …

Alaska…Northwest of Canada, is the largest and most sparsely populated U.S. state. It’s known for its diverse terrain of open spaces, mountains and forests, with abundant wildlife.

It is fish country…Yes, they have many advantages over other fishing areas…They also have common sense and set the rules and the rules are not broken. Their fish management is second to none…

Effective state and federal institutions manage fisheries that are productive and sustainable, clean and healthy. Alaska is the only State in the nation whose Constitution explicitly mandates that all fish, including salmon, shall be utilized, developed, and maintained on the sustained yield principle.

Alaska is thousands of miles away from large sources of pollution that can contaminate the human food supply in other parts of the world.

The fish swim in clean, clear water…The fish are safe to eat…

But ok…We all know that you have to adjust and manage properly given your specific circumstances…Don’t we?

The WWF has been working tirelessly to put in place good practises and methods to provide sustainable fishing grounds…and some of the EU countries, although they agreed, have blatantly increased their fishing quotas. Probably due to demand but come on how short-sighted when there are no fish to be fished …What will Joe Public do then??? I’ll tell you …They will wonder why???

We can blame the fisherman, the manufacturers who pollute the waters, the scientists who work hard to find ways genetically to increase the fish yield, the fish farms…But we didn’t care when we were getting all the cheap fish we wanted…

Alaskan fish is safe to eat and yes it is a bit more expensive but you get what you pay for and what price do you put on your health and your families???

Make it a treat …I buy myself a piece Salmon once a month or look for deals and sometimes there are some to be had it freezes well …It is a lovely healthy treat…

Canned salmon labelled “Alaskan Salmon” is a less expensive alternative to salmon fillets.

Smaller fish with short life cycles, also tend to be better alternatives, such as sardines and anchovies, lower contamination risk and higher nutritional value. A general guideline is that the closer to the bottom of the food chain the fish is, the less contamination it will have accumulated.

Just make sure they’re not from the Baltic Sea…Why?? Because the Baltic sea has been grossly overfished, it is contaminated this report tells it all…

You only have to read it to see who is to blame…We all are from the perpetrators to the ones who did nothing… To say you didn’t know…Doesn’t cut it with me any more…I can’t believe that some don’t read or listen to the news and don’t want to know more when they do…Am I alone in wanting to know more?

As I said I love fish but I have to be more selective …I look in the frozen fish section and read the label to see where the fish originated from. Canned fish just read the label if it says Alaskan Salmon then you are ok and I love a Salmon and cucumber sandwich made with lovely brown sourdough bread…

Browse your fish counter and look for bargains…the tail ends of the fish make a lovely fish pie just check the origins make it known to your fish monger what is the only fish you are going to buy…If we all did that and were more conscious consumers we could make a difference.

We are not going to change the world but we can change our own personal world and think what that can do if we spread the word…If you find a fish bargain tell all your friends so they can share in it …

Or grow your own if you are able… I have a little fish pond and when they spawn I tell all and sundry and they come and stock up their ponds and when I want a fresh fish I send hubby out to catch me one …They are happy fish not stressed and I know the origin but I still love a lovely piece of Alaskan Salmon as a treat.

My favourite Salmon Recipe.

Thai style steamed salmon with coriander and fish sauce, chilli and lime

Ingredients:

180 gm Trout or Salmon fillet. ( per person)

For Topping:

1 spring Onion finely chopped.

2/3 stems Coriander chopped finely…I use the stem as well.

1 red birds eye chilli finely chopped help promote the release of pleasure-boosting endorphins in the brain.

1 tbsp Fish Sauce.

A cheek of lime.

Mix ingredients together.

Put fish on foil and spoon topping on reserve some topping to add when serving. Seal foil and put in the oven on 180 for 10/15 mins until cooked.

Serve with steamed rice, boiled new potatoes or over noodles.

Healthy Eating…No More Diets…

Diet-Eat smart-

Welcome back…

That was the week that was last week and as you saw I enjoyed good company, good food and only put on a 1lb…Good going I think and I dropped that  1lb this week and 1lb more so 2 lbs lost in total…

How did I do that?

Well, less alcohol for a start…lol

I upped the daily walks and it is scorching hot here so I probably sweated some off … Started my day with the ginger and ACV( Apple cider vinegar) followed a while later with my daily cuppa…

Still, no biscuits and we had the lovely Lily for a few days and she loves her digestives with a cuppa…But I don’t crave them any more…

Our taste buds are funny creatures but I do believe and it works for me that if you can abstain then the craving decreases and of course if you eat things which are not sweet then they change your taste buds I know mine have…

I actually picked up a bar of my favourite chocolate yesterday and put it back…I didn’t want it enough to drop it in my basket… I came out of that shop feeling really pleased with myself…

Is it to do with personalities? I don’t know much about that but have read various articles on addictive personalities…I am guessing I don’t have one… I have always had the capacity to just stop doing something…Mind over matter??? What do you think??

Or is it just habitual?

I think I err on the side of habitual… I stopped eating the biscuits and after a few weeks, I didn’t want them… Here is a short article which is interesting…

What is it then? What are your thoughts?

Because I love food…I enjoy my meals… I eat curries and stir fries…

I do not snack though or very rarely I eat my meals…

Two main meals a day and a little something with my sundowner…

What am I enjoying this week?

Somtam ( Papaya Salad), Grapes and the loveliest of passion fruits, fresh coconut water I drink one glass a day… The occasional smoothie when I have lots of fruit to use and it has been bananas lately as I was gifted with a huge stalk, a bag of red bananas and a bag of really tiny ones so last week I did the rounds of the neighbours made banana muffins, froze a lot and made smoothies but if I have smoothie I class that as a meal replacement as it fills me up I do put a little greek yoghurt in my smoothies so get my protein.

I enjoyed a lovely Thai Green Curry and some steamed salmon trout..one of my absolute favourites and it will be my evening meal tonight.

Last night hubby and the grandson had liver and onions…I don’t eat many potatoes I much prefer rice…  I had a portion of chilli in the freezer which was my evening meal with of course the mandatory sour cream and parmesan and a portion of vegetables as I cooked too many for the boys…

So as you can see I eat normal food..No diet food…

I will admit to sampling a banana muffin or two but apart from those, it was just my meals and no snacking or biscuits or pies…

I don’t take sugar in my tea so I suppose the only sugar I consume on a regular basis is natural sugars…

I don’t feel I am deprived and don’t crave sugar…I enjoyed the muffins but that was it…I didn’t scoff the lot…

What works for you??? What do you struggle with?? 

How do you cope with a holiday and breaks??? Any tips to share???

Christmas is coming… under a 100 sleeps now… There will also be far more temptations on offer…The shop shelves will be loaded and Pinterest will have all those lovely pies and cakes…

I would like to drop a few more pounds before the festivities begin so that if/when I indulge I have a little cushion and a few additional pounds will soon drop off again after the New Year…That is the plan … What is your plan ???

Good morning I have deliberated , digested  all of that over my G & T(s) and decided that this blog will be all about the “staff of Life” otherwise known as food!

I have cooked from an early age and started with good old British Fare and when I was old enough to cook myself my first dish was one that probably most youngsters start with ” Spag Bol ”

This was in the 60’s and I always remember my father..bless him..saying ” I’m not eating that foreign muck” he was a good old-fashioned Englishman who was used to good old-fashioned ” meat and 2 veg” very ably cooked by my mother.

Life moves on and it was probably a good few years before he did in fact .. eat it!

My aim in this blog is to give you recipes from the Uk and the rest of the world. Recipes that I have enjoyed, picked up on my travels or have been given to me by friends or just that now I have more time to do as I wish am experimenting with …..I make my own Bacon and Ham, bread,and am experimenting with cultures and pickling, all sorts really anything and everything… my minds an open book……..I hope you are as excited as I am…..

I would also love it if any of you had recipes you want to share, have eaten and don’t know how to cook or what the ingredients are in it and just have a name…..I will gladly research, cook it and share it…how’s that for a  good deal ??????

Salmon Trout.

Ingredients:

180gm  Trout or Salmon fillet.

For Topping:

  • 1 spring onion finely chopped.
  • 2/3 stems Coriander chopped finely.. I use the stem as well.
  • 1 red birds eye chilli finely chopped.
  • 1 tbsp Fish Sauce.
  • A cheek of lime.

Mix all ingredients together.

Put fish on foil and spoon topping on. I reserve some of the topping to add when serving. Seal foil and put in the oven on 180 for 10/15 mins until cooked.SAM_6823 SAM_6827 This depends on the thickness of the fish.

When cooked remove from oven and serve with rice.(This is when I remove the skin from fish.) and also add any additional topping. Enjoy!

Thai Pickled Cabbage ( Pak Dong)

  • 1 white cabbage. cut or torn into pieces.
  • 8 large spring onions chopped
  • Coarse Salt.

Let’s Cook!

Layer Cabbage, Onions and Salt in a dish ( with lid)

We then leave the dish on the kitchen top or in the sun for 1 day.

SAM_6824Then refrigerate for 2 days. It’s now ready to eat.

The longer you leave this mixture then it gets sourer so if you prefer you can leave longer.

No liquid is necessary as salt draws moisture from Cabbage and it makes its own liquid.

This can be eaten as a snack or with fish/or chicken.I prefer this to sauerkraut as it’s not so acidic but it’s personal taste.

Bread Pudding.

An old Favorite of my dad’s.

I keep all of my bits of stale bread in the freezer until I have enough for a pudding.

Ingredients:

  • 2/3 Ib of bread ( brown /white) or mixed.
  • 1-2 tbsp Mixed Spice.
  • 2 eggs beaten
  • 3 oz butter melted.
  • 12/16 oz  dried fruit (sultanas or raisins)

Let’s Cook!

Put bread in a large mixing bowl and cover with water or mix or milk and water to soak.

When soft I squeeze out in colander as much liquid as I can.

Add melted butter, mixed spice, eggs, and fruit and  combine.

I like lots of spice and fruit so if I think it needs more at this point then I add it is one of those dishes where you can add what you like for example if I have had some other fruit left over as in cranberries or blueberries I would add.

Put in hot oven 180 degrees for 1 hour if the top seems to be browning too quickly then reduce the heat a little. It should rise a little by end of cooking. Remove from oven and sprinkle with sugar.

004This is when I invoke my rights to cooks perks and have the 1st bit..to try of course as it’s yummy hot and straight from the dish. It is also great served with custard or cold if there is any left..haha. It also uses up all your bits of stale bread.
