CarolCooks2…Weekly roundup…Pomelo Salad, B5, Climate Change…

Happy Easter Flyer

Welcome to my weekly roundup…Before I start I would like to wish everyone who celebrates Easter a very happy Easter Holiday…

It is now time to grab a pew and a drink or some Easter chocolate, relax and have a read…

Not so much this week as I have been busy …Aston came back from his Thai nannies plus 1…Little Lily’s friend went home I think she was pleased after a week of sharing me…she said there are too many people here nannie…Bless her she likes a bit of quiet time and with 4 children in the house that doesn’t really happen…The last one goes home on Monday…Back to some semblance of normal, I hope…haha…

The first post of the week was on Climate change and plastic which is a hot topic now…There have been peaceful demonstrations in London hosted by the Extinction Rebellion… Peaceful protests started on Monday in London today marks the sixth consecutive day of disruption,  echoed in 80 cities, from India to the US the aim to get governments to sit up and start acting now not later when it may be too late. After six consecutive days, I am sure the British government now know what the feelings of the masses are as there has been so much support…Long Live people power…

Healthy eating…It really is too hot here to even contemplate cooking or even eating my diet has been mostly liquid…Water by the gallon…I also included a lovely pomelo salad which is now in season here…

Wednesday it was time for Sally’s and Carol’s post on B5 or pantothenic acid and as I have previously stated I am loving this series and learning so much as well thanx to Sally and her expertise on Health Matters…

Waste Not! Want Not! was my next post…Climate change is high on many peoples agenda this week with protesters out in their 100’s…I really do hope the momentum doesn’t fade and is kept going but it was heartwarming to see the public reacting as they did to make their point and peacefully it now up to those who can to LISTEN …

About Carol Taylor:

Enjoying life in The Land Of Smiles I am having so much fun researching, finding new, authentic recipes both Thai and International to share with you. New recipes gleaned from those who I have met on my travels or are just passing through and stopped for a while. I hope you enjoy them.

I love shopping at the local markets, finding fresh, natural ingredients, new strange fruits and vegetable ones I have never seen or cooked with. I am generally the only European person and attract much attention and I love to try what I am offered and when I smile and say Aroy or Saab as it is here in the north I am met with much smiling.

Some of my recipes may not be in line with traditional ingredients and methods of cooking but are recipes I know and have become to love and maybe if you dare to try you will too. You will always get more than just a recipe from me as I love to research and find out what other properties the ingredients I use contain to improve our health and wellbeing.

The environment is also something I am passionate about and there will be more on this on my blog this year

Exciting for me hence the title of my blog, Retired No One Told Me! I am having a wonderful ride and don’t want to get off, so if you wish to follow me on my adventures, then I bid you welcome! I hope you enjoy the ride also and if it encourages you to take a step into the unknown or untried, you know you want to…….Then, I will be happy!

Waste Not! Want Not! Week 20…Food Waste and Climate Change…

Week 20…Who would have thought I could find so much to write about the news just keeps coming…The world is definitely waking up to what is happening and some sensing the urgency…Just this morning I was reading about a World Forum of environmentalists, chefs, farmers who are looking at how they can ensure that no one in the world will be starving like they are now it may mean changing farming and manufacturing methods a full report is not available yet.

green foot prints eco system

So much is happening in the world around us that there are going to have to be many changes or life as we know it will not exist…Climate change, food. plastic, waste they are all connected to each other they all affect one another…Seriously the world is in trouble it may not seem like that to many of you cocooned in your comfy part of the world but food affects our health as does climate change everything is interlinked…

To me and many around the world, Sir David Attenborough is the voice of climate change…the voice of our planet…Listen to what he has to say he believes that things have escalated far quicker than he initially thought.

Sir David Attenborough

Flies and Fungi…

As the earth heats up it will make our food less safe…Did you know?… Food contaminated with bacteria, viruses, parasites, toxins or chemicals causes more than 600 million people to fall ill and 420,000 to die worldwide every year, according to the World Health Organization (WHO).

We have soup kitchens and places where people can go get dry/tinned goods if they are on the breadline…What I find really sad is the fact that the image underneath was taken many years …People are still starving …That is a tragedy that man and governments have still not solved the problem of the poor and in fact compound that problem in many ways…They should hang their heads in shame…

Community refrigerators is another idea with the aim of stopping food waste…a British environmental charity is turning to an innovative bit of technology: community refrigerators.

However, they help to solve the problem of waste in countries like the Uk but not the problem of the fact children are still starving all around the world …I am guessing there will be no community refrigerators in India( 190.7 million), China ( 150.8 million), Pakistan (39.6 million) appalling figures…

Food waste is a major issue...around the world…about 13 billion pounds worth of food gets wasted every year.

We have zero waste stores springing up around the globe we now have Loop joining the party…Everyone knows food packaging is one of the leading causes of pollution on land and in the sea. From water bottles to potato chip bags, that plastic litter is everywhere. People have tried politely protesting at supermarkets, others try to buy in bulk, and some are so frustrated they try to only buy direct from farms and wholesale markets. That does not work for everyone.

Guinness is owned by the worlds largest drinks company and they have joined Carlsberg in the quest to end plastic rings…Which when dumped in the sea cause problems and death to marine life…Initially, I wasn’t overjoyed with this new concept as I felt it wouldn’t stop littering however in the real world although we are all conscious of our actions and don’t dump some people always will so I suppose I will have to admit they have a place in the bigger picture.

Victoria Zigler who is known for her beautiful children’s books always supports my blog posts and if she comes across anything she drops me a line …These pretty little seed bearing lollipops which are the brainchild of Amborella Organics are awesome once finished the seed-bearing sticks can be planted and will happily grow…

Thank you for reading this post later just in case you weren’t aware I also write a regular monthly post over at Esme’s Salon and at the moment I am trawling through the Culinary alphabet today’s post is about recipes, ingredients maybe cooking terms beginning with the letter O…Please pop over and say hello…

https://esmesalon.com/the-culinary-alphabet-the-letter-o/

Just in case you haven’t cast your vote for your favourite blog…There are a few different categories and all worthy nominees and I am sure if they are like me they are chuffed to have been nominated. and would love your vote…Voting is open until the 24th of April…

great reads a weekly roundup lady with electronic readerA busy week for me…Lily is and has been joined by her little friend Dam and yesterday was Thai New Year aka Songkran which means lots of water which was very welcome as it is extremely hot at the moment…The best option rather than taking to the streets with my water pistol at the ready was a water park…

I spent the day with a book under a lovely wooden gazebo with a coconut straw roof overlooking the action…Thai food, fresh mango and pineapple and lots and lots of kids…Oh and some beautiful koi carp swimming around beneath us…

The downside is I have not done very much cooking this week and next week I have another addition …Aston will be back with another boy in tow…For someone who really doesn’t like kids…well if they are well behaved we get on fine but as Lily has been joined by a friend I really can’t say no to Aston although I drew the line at a 2-week stay… I am just baffled as to why I seem to be a magnet for kids…haha

My first post of the week was Part 3 of Plastic which is such a big topic and I have some really exciting news for you in next weeks post on  Plastic…tomorrow even …

ear budshttps://carolcooks2.com/2019/04/08/plastic-part-3-our-actions-the-consequences/

Waste not! Want Not! Time for me to get moving and rid my house once and for all of everything and anything which is getting into the waterworks and the waste system…Castille Soap…Which I had heard of and have memories of my nan and mother using it …Not so easy to obtain here well only in 250ml sizes so I have ordered some from Amazon and await delivery but I am looking at other options like coconut oil which is plentiful here…

A quietish week in my kitchen…Grandkids, their friends and Songkran…Took over…Lily made cupcakes and very nice they were…I managed to make a pot of Kaffir Lime marmalade and Lily helped with the Beef salad…I have just seen them off with their waterproof packs (money/phone) as it is more water fun…So methinks I may just have time to cook up a little something for a post I need to get off by tomorrow at the latest…Sorry, Sally for the delay…xxx…Snail mail xxx…The best-made plans of mice and men is the saying, isn’t it??? No matter how carefully project is planned, something may still go wrong with it.

Waste Not! Want Not! Week 19…Castille Soap…

Last week (justly) I think… I had the mother of all rants…But I don’t want all my posts about our beautiful world to be rants as…

1. There are so many wonderful things being done to save our natural world.

2. There is so much we can do as individuals which combined will make a difference so today I will be looking at what we can do in our homes and our lives…

butterfly and bee flower meadow

If you missed it the other day in my posts Adele’s wife Becca when she walks their dog Dante she takes some wildlife seeds to scatters where not many people walk which means hopefully there will be more flowers for the bees and butterflies …Such a simple thing to do which if you are walking the dog anyway takes no time at all and will make a difference because when those flowers bloom and die the birds and the breeze will carry those seeds and they will bloom anew somewhere else thus spreading the love…I think that is a wonderful idea…

♦♦♦♦♦

Deodorant… There has been much in the news about the dangers of deodorants and the effect aerosol cans have on the environment…Nasa gets a bird’s eye of the earth here is what they have to say about the effect of aerosols…

A recipe to make your own…

6-8 tbsp Coconut Oil ( solid)

1/4 cup of baking soda

1/4 cup of Arrowroot powder

6-10 drops of essential oil( optional) See note at bottom of the post…

To make…Combine both powders and add to the coconut oil a little at a time working it in and you will have a pliable and firm mixture.

If you find it is too wet then just add a little more Arrowroot powder or salt which acts as a thickener.

If you use the push-up deodorants then scoop it into your cleaned out empty container however if you are eliminating plastic from your home then put into a glass jar.

To apply just use your fingers and keep the jar in the fridge this amount used by two persons a day will last about 3 months not only saving the planet but saving you money…

Or if you prefer a spray then Castile soap can be used to make a natural deodorant. Add 1/2 tsp of liquid castile soap and 1 tsp of sea salt to a small spray bottle and use as needed.

I have heard and read quite a lot about Castille Soap and have a vague memory of my grandma and mum using it but didn’t really know what it was…It has only been since I have realised how much damage store brands do to the environment that I have been looking into it…

Vegetable based it is free od animal fats and any nasties aka synthetic ingredients…Natural, non-toxic and biodegradable it comes in bars or liquid form…First made in the Mediterranean region where it was made from olive oil and its name originates from the Castille region of Spain its popularity soon spread to Europe and beyond.

Image by U. Leone from Pixabay

Now the soap can be made or is made from Coconut, hemp or castor oil…What memories that word evokes as children we were forced to have a castor oil tablet a day…Avocado, walnut and almond oils are sometimes used as well…

As well as being environmentally friendly and safe as well as using it on your body it is safe for your beloved pets and you can clean your house with it…

Always buy pure 100% natural castile soap from a reputable brand to ensure you’re buying a high-quality product.

Washing up liquid…Add 1 part of castile soap to 10 parts of water to make washing up liquid for your dishwasher then mix equal parts of castile soap and water in a bottle. Fill your detergent compartment as normal.

washing dishes

Image by Eak K. from Pixabay

For your laundry...Add 1/2 cup of castile soap to a load of laundry. You can use less soap if you’re using a high-efficiency washing machine. This may be a particularly appealing option for those who get rashes from traditional store-bought laundry detergents.

washing on the line pegs

I am eagerly awaiting the delivery of my Castille soap as I suffer from rashes and the like from many store-bought products which has been a nightmare all my life. Once I find a product that doesn’t affect me I stick to it for life. If I can make my own and help the ecosystem then I will be even happier…

I am also looking forward to using it for many other purposes it definitely seems to be the all-around product…

There are a few things to avoid when using castile soap:

  • If you have hard water, it will react with castile soap and leave behind a white film residue. Install a water softener if it’s possible.
  • Combining vinegar with castile soap can also leave behind a white film. This is because the alkaline nature of the soap reacts with the acid vinegar, and they cancel out each other. This changes the soap back to its original oils.
  • Castile soap shouldn’t be combined with lemon juice for the same reasons it doesn’t combine well with vinegar.
  • Don’t use castile soap on colour-treated hair as it may strip away some of the colour.

This warning about essential oil was also on the site where I ordered my base Castille oil from

Caution: Some essential oils do not mix perfectly with a natural soap base. These may include lemon, lemongrass, clove, eucalyptus, and possibly others. Test carefully when using these oils. Orange oils and other essential oils may leave the mixture and float on top if too much is used. Warm and stir to get them back in. Wait 24 hours to check for separation. Skim excess from the top if needed. Any oil-based or water-based herbal ingredient can potentially be used.

Our Castile Soaps are fragrance-free, but can easily be fragranced with essential oils and thickened with table salt.

Do not consume. For external use only. Keep away from children and eyes.

Do you already use Castille soap? If so what is your experience of it?

Did you know that the humble Cabbage is categorized amongst the oldest vegetable worldwide as it dates back thousands of years? Brassica oleracea, which is the wild forerunner of cabbage, was first discovered in Asia Minor and in eastern Mediterranean regions. Soldiers in Mongolia and China preserved the first pickled version of cabbage in brine.

But it was Beer which holds the title of the earliest recorded recipe…

CarolCooks2…Weekly roundup…Keffir Limes, Microplastics, Glitter, Beans…

Welcome to my weekly roundup time to take a pew, grab a drink, settle down and enjoy if you have missed any posts or if you just like to catch up once a week…

great reads a weekly roundup lady with electronic reader

Starting with a subject close to my heart is plastic…It may be that many of you are thinking …Not again…Well yes, it invades every aspect of our lives and is reaching/reached unprecedented proportions…the improvement of waste management systems across the world is critical to addressing plastic pollution…Overall, approximately 80% of ocean plastics come from land-based sources, and 20% from marine sources…

https://carolcooks2.com/2019/03/25/plastic-the-latest-news/

I don’t think I am alone in wanting a cleaner safer world for my children and grandchildren and I don’t think I am alone in wanting the healthiest body I can have…I just speak my mind… I think food is to be enjoyed and I enjoyed my food…I even have the odd treat…

In fact last night my grandkids bought me a small packet of haribos and gave them to me with the words I know you said you didn’t want anything Nannie but we brought you a small bag …I haven’t had any for months and it was one of those little tiny bags so I ate the few jelly teddies and enjoyed them…It was a rare treat!… So be it jellies or chocolate whatever your sweet treat …No guilt …Enjoy!

Easter is on its way and who doesn’t love a buttered hot cross bun fresh from the oven?

Microplastics…Glitter…Anything glittery I love for parties, weddings, cosmetics, bath bombs, crafts etc etc …No matter how old we are a bit of glitter makes us feel good…

Not so for the poor marine life when it washes down our waste pipes and ends up in the waterways and seas…What goes around comes around …It eventually ends up back with us in our tummies…

It was or is then time for you to join me in my kitchen…I had lots of green tomatoes so it was a green tomato and egg curry…Went down well for my meat-free dinner and the smell of hot cross buns baking is just one of the best …Isn’t it?? Closely followed by the lovely smell of the chicken with Kaffir lime …Just beautiful…

Waste Not! Want Not! Week 17…Microplastics, Glitter and Wild Harvesters?

As you know because I tell you every week I am really heartened by the initiatives which I am discovering that are happening from all around the world…Your comments are also a revelation when I hear from you guys what is going on in your neck of the woods all good stuff…How you are reducing the carbon footprints and coming up with ideas to cut waste and protect the environment.

green foot prints eco system

However…

A few things have greatly disturbed me this last week…Things I am ashamed to say that I didn’t think about and I believe I should have either been aware of or looked into it of my own violation… I didn’t!

♦♦♦♦♦

Microplastics…

Basically, microplastics are miniscule man-made plastic fragments or particles that are  5.0 mm to 100 nanometers in size. These tiny bits are filling oceans, seas, and waterways which in turn end up into the organisms who live in these waters …Now for the scary bit, we swim, we eat fish and shellfish hence they end up in our bodies.

Where do they originate from .microfibers from clothing, microbeads, plastic pellets (also known as nurdles), Glitter…Now what child doesn’t play with glitter, have their faces painted with it… so many uses and it doesn’t stop with the kids…Partytime…Almost everyone I know loves a bit of glitter…

Microbeads.

Microbeads, a type of microplastic, are small plastic particles that are less than 5 mm in diameter. They are used in a number of ways, including as cleansing or exfoliating agents in cosmetics, soaps or toothpaste. …Microbeads are just one type of microplastic that can be found in lakes and streams …

There is no getting away from the fact that they are in most everyday products we use and either throw away or wash down our waste systems…

This article will tell you where the microplastics come from and where they can end up…

Glitter… I love anything sparkly and I am the first one to buy Lily glitter. Partytime we go for anything which glitters don’t we? Christmas all those sparkly decorations and the paper with glitter …I mean how much glitter do we find attached to our clothes do we sweep up ???

I really didn’t give it a thought when I saw media pictures and articles of sea life I didn’t connect the dots…I truly didn’t…

tubes of various glittersSo pretty and so deadly…

I also found out that…

  • Some research has also found that PET, the plastic most glitter is made from, can break down and release chemicals that can disrupt human and animal hormones.
  • As a result, some scientists and campaigners are calling for a total ban on glitter.
  • Festivals in the UK and some companies have already committed to banning glitter.

I was dreading having to tell Lily no more glitter and I won’t have to…

Never fear…

This UK company uses plant-based materials rather than plastic PROVEN through ISO14851 freshwater testing to biodegrade into harmless substances in the natural environment.

This video shows how much glitter is used in a photo shoot and we now know where that ends up and the consequences to marine life and humans… but thanks to Bioglitter there is a bit less…

I think that almost everybody has heard or watched Sir David Attenborough…..

At 92 years of age, he is appalled at how quickly climate change has advanced and is bringing out a one-off programme on climate change the dangers and the solutions…

The climate change documentary is part of a BBC series called Our Planet Matters that kicked off with Blue Planet Live Sunday night.

Sir David Attenborough will present this new ‘unflinching’ documentary about climate change as he fears ‘conditions have changed far faster’ than he ever imagined.

In the one-off film for BBC One – which comes after one of the hottest years on record – the naturalist and broadcaster will look at the potential threats to the planet as well as possible solutions, 20 years after he first started talking about the impact of climate change.

Lastly, I read a thought-provoking article on The Sisters of the Fey yesterday…Again I was horrified at MY lack of thought … I have been in queues in the past when there have been shortages. I have seen empty shelves …Here many products are imported and they are here one minute and gone the next and they may not appear if they ever do again for a good few months …I am NOT perfect by a long way but I would never if there were 6 left on the shelves take all 6 …I may take 3 if it was something I relied on and used a lot but I wouldn’t take all.

I also know people who would and who do stockpile… I have never liked that way of thinking…It doesn’t sit right with me…

forest trees

By the same token if I see anything growing wild and pick I would leave some and would only ever take a small cutting if there was a lot of something and many Thais are the same but there are also the ones who strip everything for themselves or monetary gain… I know because I have heard my daughter in law sound of if she catches anyone …She is mindful of how and what she grows and doesn’t use insecticides…

This post highlighted indigenous and native people who have traditions and rely on certain herbs and roots to carry on those traditions or indeed rely on those to feed their families …

It truly touched a nerve or a chord with me … I loved the post and in future will be asking the questions and be mindful of what I buy and its origins.

Thank you for reading this post which I believe will point the way to a few changes we can make to really make a difference as I know I am not doing enough and should be doing more and that seems to be backed up by much in this post what do you think?… Are you doing enough to Save the Planet ???
