Welcome to my weekly roundup …August has arrived…August was originally named Sextilis it was later renamed after Julius Augustus, the first Roman emperor it seems the sun is still shining in the UK…which means BBQs are still on the menu or beautiful healthy salads…For some August brings the best bounty of the season—ripened tomatoes, ripe melon, sweet corn on the cob, and zucchini, summer squash, eggplant, peaches to name but a few…in 4 days’ time the end of “Dog Days of Summer” is marked…

Although we should be doing all we can to preserve the “Honey Bees” …August 20th is “World Honeybee Day” where I’m sure there will be many tips and ideas on how we can play our part in the preservation of the honeybee…Here are a few tips on how we can play our part…

Monday Musings…

Last Monday there were no fun things or recipes but rather the bare necessities of life…originally sung by Phil Harris (Baloo)and Bruce Reitherman (Mowgli) in the 1967 Disney film Jungle Book…Monday Musings however was slightly more serious…a plea for something very close to my heart Scanning for breast cancer – Sign the Petition! chng.it/vKjWSyVB plus the scale of “Factory Farming”, and a look at the diet and lifestyle of “The Inuit” people who I hope against hope that they never fall foul of the pitfalls of processed foods and the like as it will be detrimental to their good health.

Saturday Snippets…

Today’s word prompt is “ Tickle” for me there is nothing like the sound of a baby or child being tickled it makes me smile at just the sheer happiness and joy…I also thought of Ken Dodd…my father always watched it and he did have the knack for being entirely stupid but it made people laugh…there was his tickling stick and the diddy men…and if you are younger then maybe you remember ” Mr Tickle” by Roger Hargreaves…it was noted and I was congratulated on not mentioning “Slap and Tickle” although it is something many of us still enjoy!

Welcome to my Green Kitchen where I aim to cook chemical-free food, in season and grown either by myself or purchased locally in season…it is also to minimise waste…

Produce which has just come into its season has far more taste than produce which is forced and grown out of its natural season …I also think it is the anticipation and the taste of the first of the season’s crops…those first root vegetables…are sublime! or those first strawberries there is nothing quite like the first strawberry of the season!

August…as you know I am concerned about the chemicals in food plus we now have food shortages, Covid looks like it is here to stay for a while and there are rumbles about monkeypox I was even handed a card at the airport…

The 7th-14th is National Farmers Market Week(US) It is a great opportunity to show the nation how much value markets bring to their communities. With fun events, specials, contests, and activities, the week helps to boost market attendance and visibility – while at the same time being loads of fun! If you have an event near you then please go along and show your support and you may also find some beautiful local grown fruit and vegetables in season…Personally, I think it is important wherever you live in the world to get to know your local farmers they need your support and you need to know that the food you are buying is chemical free…

From the  8th-14th of August, it’s National Allotments Week in the UK…National Allotments Week started in 2002 as a way of raising awareness of allotments and their role in helping people live healthier lifestyles, grow their own food, develop friendships and bolster communities. The campaign week is still thriving 20 years later and interest in growing your own fruit and vegetables has never been stronger since the WW2 Grow for Victory campaign.

This month’s Bread Recipe…just hasn’t happened I am not back into the swing of baking after my 2-month sabbatical..the plan was blueberry and lime bread hence the picture of blueberries but that didn’t happen…lol…however Tandy reminded me that it is soon to be International Scone Week from the 8th of August to 14th August…scones can have butter like bread…although these ones I’m sharing was last years entry for International Scone week and they were very delicious if I say so myself…Banana Scones with Coffee Drizzle

Now I need to come up with another yummy scone recipe…although plain scones with clotted cream and jam are always a winner…I have whittled it down to four which are, Gingerbread Scones, Lemon Squash Scones with mascarpone and lemon curd, Traditional Tattie Scones or Sweet Potato Scones with Beetroot Jam…as I love anything beets or lemon they are calling to me…however yesterday I found some Nduja so I’m thinking Nduja and ricotta…are you going join in scone making week? if so what are your thoughts…

What’s in season…here is a good resource for eating ” Seasonably around the World” from Foodtank…eating seasonably nearly always coincides with eating locally…which minimises the carbon footprint of our food and there is nothing like the taste of fresh seasonable fruit and vegetables…

It’s a known fact even if we don’t know the figures that Covid marked the increase in the takeaway(takeout) food deliveries BUT at what cost to the environment?

Picture this…but before we go any further “it’s not our fault”…you order a burrito…it comes wrapped in foil, with plastic utensils and a paper napkin all wrapped in plastic…plus 3 packets of ketchup plus hot sauce…All in a paper bag that is then placed in a plastic bag…you may even get extras like those little salt and pepper packets that we last used in our packet of Smiths Crisps…the irony is we eat our burrito with our hands????

What we can do is to let our local takeaway know that it will also save them money if they used a little common sense and ditched the unnecessary…that should goad them into action if nothing else…Just in case you really want to know the effect it has on the environment please click this link…

For those of you for whom it’s summer sun and an ice cream popsicle is a very welcome cooler…then let’s beat the heat!…almost any liquid freezes well(bar neat, heavy alcohol)…from double cream to coconut milk…my preferred option (of course)…fruit? That watermelon is calling well here’s a quick way to pulp it…slice off the top of the fruit then take your hand blender and blend the inside then strain how easy is that?

If you want texture in your popsicle then add pieces of fruit, bits of cookies, chocolate chips, slivers of fresh coconut, fudge, the options are endless…don’t want bits then swirl through some fruit puree for perfect popsicles freeze the mixture in a tub first then blitz and put in your moulds and freeze…

Like creamy healthy popsicles? adding yoghurt for protein and probiotics for digestive health creates a natural creaminess that adds a smooth texture. Pureed bananas with juice can also create a soft bite. Unsweetened coconut milk adds a creamy popsicle texture with a subtle sweet flavour. Mixing or blending juice, whole fruit, and something creamy also make for a consistently creamy popsicle…of course, freezing time depends on the ingredients.

No moulds…No problem!…paper cups, smartie tubes, even egg cups or ice cube moulds…just freeze until slushy and add your sticks…Enjoy!

Welcome to this week’s edition of my weekly roundup of posts…Especially for you just in case you missed a few posts during this last week…Time is marching on…

We are 2 weeks into August already…some August trivia…

August…depending on where you live August brings a new season of fruit and vegetables here the lovely Pomelo has just come into season…It tastes exactly like a grapefruit but without bitterness or sour notes. It’s not particularly sweet, nor is it tart.

Like grapefruit, you’ll find pomelo in both pink and yellow varieties. Most fruit sellers will have their pomelo ready peeled and packaged. The reason is that it’s a nightmare to peel. The green outer skin and white pith surrounding the fruit is extremely thick, and it’s quite an ordeal removing the fruit from its casing!

A lovely fruit with which I make one of my favourite salads Yum Som O…a lovely refreshing salad made with pomelo, prawns, cucumber Thai basil and some herbs…

Today is also National Lemon Meringue Pie Day…

It’s Lime meringue Pie here as I have so many limes rather than lemon and making meringues is a great way to use up egg whites…

Tomorrow August 16, 1977 …Elvis Presley, died, the “King of Rock and Roll” …

So many tracks and who could pick a favourite…Not me…

The Culinary Alphabet …..A-Z…Series 3… the letter L…Jelly or Jello?

I absolutely love writing these A-Z with a twist always something to learn and discover…

Last week it was words where the middle letter is L...A little easier than J which was quite difficult… What kiddie big or little doesn’t love Jello or Jelly…yes I know before you tell me you call jelly… jam…Jelly to me (a Brit) is what you call Jello although I prefer Jelly as it is not so sweet and has more of a fruity taste than Jello plus for a treat my mum would give me a square of the jelly when she was making it…you can’t do that with Jello…as its a powder…or we could take Potluck and see what was cooking on the Skillet…to eat with our Salad.

International Scone Week…Banana Scones with Coffee Drizzle…ish

These banana and brown sugar scones with a coffee drizzle were the best scones I have ever made…I am not a scone maker at all but as it was International Scone Week I thought I had better make an effort… these scones had sliced bananas in the middle sprinkled with some raw sugar they were delicious…

Tropical Friday…Snake Fruit(Salak) is one of my favourite fruits it has a slightly sour note and is not too sweet…it is also lovely when pickled…It was thanks to Pete as I totally forgot about it when I was writing my A-Z probably because I call it snake fruit but kudos to Pete he thought of it not me…

It’s a little weird in so much that it grows around the base of the Palm Tree …It is not a fruit that many you will find fresh but it is sold in syrup and has been stocked by Amazon and probably other speciality or Asian stores.

International Scone Week…Banana Scones with Coffee Drizzle…ish

 

Welcome to my kitchen where I cook from scratch…mostly savoury dishes as you know as apart from bread I am not a baker or a cake maker…my mother was the scone and cake maker she used to win prizes for her cakes and scones and would really frown up me if she knew I used (whispered) very quietly baking powder…

But I thought I would take up the challenge and make some scones for International scone week

Bananas are very plentiful here and always sold in huge bunches or that is how we cut them from the tree….so Banana Scones it is with sort of a drizzle certainly not perfect drizzle like I see in everyone else’s pictures but my taste tester did not wait until they had cooled down or been drizzled he dived in…

His verdict was a big thumbs up he liked the bananas sandwiched in the middle of the scones…and the fact that they rose well was a bonus…

Ingredients:

  • 3 cups (400g) all-purpose flour
  • 1/4 cup (55g) brown sugar, packed + 1 tbsp, divided
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup (110g) unsalted butter, cold and cubed
  • 1 large egg
  • 100g finely mashed ripe banana (about 1 medium banana)
  • 1–2 medium bananas, sliced 1/4 inch thick
  • 3/4 cup (155g) heavy cream or whole milk
  • 2 tsp vanilla extract

Coffee Icing:

  • 2tsp coffee mixed with a little water
  • Powdered (icing)sugar)…This was sort of ..it was a guess… I just mixed the coffee with a little hot water and added the powdered sugar until it drizzled…

Lets Bake!

In a large bowl, whisk together the flour, 1/4 cup brown sugar, baking powder, baking soda, cinnamon, and salt.

In a separate bowl or large measuring glass, combine the egg, mashed banana, 3/4 cup cream, and vanilla. Mix until smooth and set aside.

To the dry ingredients, add in the cold and cubed butter and use your fingers to work it into the dry ingredients. Don’t worry if you have small lumps of butter that is fine…I have to work really quickly here as it is sooooo hot…

Pour in the banana cream mixture and use a rubber spatula to fold the dough together. It should turn pretty shaggy and dense. Don’t over mix, just try to incorporate as much of the dry ingredients as you can. Scone dough does not like too much handling.

Take half of the dough (scooping up any dry bits as well) and press it into a 7″ round disk onto the baking sheet. Lay your sliced bananas in an even layer, leaving a small gap around the edge, and crumble the extra 1 tbsp of brown sugar over top (see the photo ).

Scoop the other half of the dough on top and press it down evenly. Alternate between patting it down and pushing in the sides until it’s about an inch thick and 7″ wide (see photo )

Put the pan in the freezer for 20 minutes and preheat the oven to 375/190C.

After 20 minutes, the dough should be pretty firm. Slice the disk into 8 wedges and space them about an inch apart from each other. They might be a little sticky on the bottom, but try your best to use a knife or spatula to pry them loose. If they’re really sticking, pop them back in the freezer for 10 more minutes.

The is where mine went a little haywire I forgot to brush the tops with a little milk and sprinkle with sugar however my taste tester liked them as they were he thought it might have made them too sweet.

Cut and ready to bake for 25-30 minutes or until golden brown on top.

Allow the scones to cool for 15-20 minutes while you make the icing.

Slice the scones apart from each other and transfer them to a cooling rack.

Drizzle with the icing and Enjoy!

Both Lily and Hubby have now tried them and although not drizzle perfect they got the thumbs up and according to Lils, we are making Lava Cake tomorrow ..mmmm…Oh well at least I won’t have to drizzle it…sigh
