CarolCooks2…Weekly roundup…Recycling, Recipes, Banana Fertiliser and so much more…

Where is the time going? My regular readers know the drill…A comfy chair, a drink, settle down time for a good read…Lots of goodies for you this week…A good mix and something for everyone…Well unless you are a rocket scientist…haha.

great reads a weekly roundup lady with electronic reader

The Kombucha scoby is getting fatter and showing some white so I am guessing from what I have been reading that it is happy and doing its thing…Any hints and tips would be gratefully received for this newbie ( hopefully) successful Kombucha brewer…x

To any new readers…Welcome and if I haven’t personally thanked you for the follow it is because either your blog shows as private or your profile doesn’t link to your blog…I do however appreciate the follow…Thank you 🙂

To all those spammers...unlucky if I can block you I will or just get rid…You are not wanted or even read you are wasting precious energy and time…Begone!

Monday’s post was once again...Plastic, recycling any news I think is interesting and I will never run out of ideas…I watched a beautiful programme yesterday about Japan’s Earths, Enchanted Islands and the water which comes down in abundance from the mountains to the rice fields and the villages below …when it reaches this village …where no detergents are used when washing up the scraps are just washed in this beautiful water and each house has a carp pond underneath being bottom feeders they eat all the scraps and the water stays crystal clear as it was from its source it was amazing to watch…Absolutely amazing programme…A simple, effective system…

I explored using banana skins as fertiliser, Growing food without soil and should we be teaching kids how to grow food in schools…The answer was a resounding yes to that and it is happening around the world so many good news stories in the comments which I will go into tomorrow …

Eat Smart, Eat Healthily is now starting to reap the benefits for me …I have so much more energy..even in this heat…I am the lightest I have been for many, many years and I can’t believe I have taken this long to get my brain in gear and realise that…Yes, I still enjoy the odd treat…I eat food I love I just watch my portions…The best thing is I can go shopping here as the clothes sizes are smaller than the UK equivalent …I can pick from the racks for the first time in a long time and it is fun…Between my ideas and recipes and Sally’s health tips, I have cracked it…I hope you can too xx

Thai Duck Larb

I am back! Wednesday every fortnight over at Sally’s….This week I kicked off with measurements as they vary around the world and ingredients as well I still get stumped at times and have to look it up…I kept seeing a stick of butter in the ingredients list …We don’t all know what it is…I didn’t…I do now…So a plea to all you lovely home cooks spare a thought for those of us who may not know what some of your ingredients are…Pretty please…

Thailand…My home and The Land Of Smiles…I was told today at the market that my Thai was good…Go me…I was certainly smiling at those words…

Beetroot…One of my favourite vegetables…and it seems many of my readers favourite as well…Please if you have any recipes using beets share with us and I will link back to you…

Red Beetroot with leaves and one cut beet

Healthy Eating I can’t stress the benefits enough…However, stress can also kill…Of course, it can provide us with thrills and get that adrenaline going…But it can also KILL…Sally is the lady to listen too as she knows her stuff she delivers her knowledge clearly and concisely…She doesn’t( like) me pull any punches she tells it like it is… but leaves the reader feeling positive and knowing what to do…Keeping our heart and other major organs healthy can ensure we have a chance of living a longer life …Worth a read? I think so…x

I hope you have enjoyed this post and the variety and found something which you enjoyed or learnt about…Thank you for reading…x

About Carol Taylor:

Enjoying life in The Land Of Smiles I am having so much fun researching, finding new, authentic recipes both Thai and International to share with you. New recipes gleaned from those who I have met on my travels or are just passing through and stopped for a while. I hope you enjoy them.

I love shopping at the local markets, finding fresh, natural ingredients, new strange fruits and vegetable ones I have never seen or cooked with. I am generally the only European person and attract much attention and I love to try what I am offered and when I smile and say Aroy or Saab as it is here in the north I am met with much smiling.

Some of my recipes may not be in line with traditional ingredients and methods of cooking but are recipes I know and have become to love and maybe if you dare to try you will too. You will always get more than just a recipe from me as I love to research and find out what other properties the ingredients I use contain to improve our health and wellbeing.

The environment is also something I am passionate about and there will be more on this on my blog this year

Exciting for me hence the title of my blog, Retired No One Told Me! I am having a wonderful ride and don’t want to get off, so if you wish to follow me on my adventures, then welcome! I hope you enjoy the ride also and if it encourages you to take a step into the unknown or untried, you know you want to…….Then, I will be happy!

Healthy Eating…How to lose weight and eat the foods you love !

Hello, there and welcome back to Carol’s boot camp…lol…As you know I do not believe in diets I believe in healthy eating and moderation…Also called…

I have however over the years subjected this bod to many strange diets none of which worked for any length of time and the only thing which got slimmer through these diets was my bank balance …

At the end of this tongue in cheek look at various diets… I will be giving you a recipe for a Protein Drink… Protein drinks in my book…I wouldn’t touch with a barge pole… I am the most unbelieving person on this earth when celebrity’s and manufacturers tell me that their product is the best thing since sliced bread… Yes and look how good sliced bread is for you…NOT!

The first diet gimmick on my list is:-

Cream…No girls, not the cream you put on your strawberries…

NO..you rub it in where you wish to lose weight or fat from, sit back after you have wrapped yourself in plastic wrap and watch it miraculously disappear and at $24.99  an 8 oz pot…HaHa… One says 300 recommendations…pfff the only thing slimming down is your bank balance…sucker!

7-minute workouts…

Seriously with all those repeats, the reality is at least 20  minutes or longer unless of course, you are an excise ninja who can move at the speed of light…

The What!

A pill that you swallow which turns into a balloon which a doctor then inflates in your stomach so you need less food…so if you are such a pig and ignore the full signs it gets squashed and you get the scenario where the said balloon explodes…

Come on have you not heard of Mr and Mrs Will Power who live in moderation avenue???

Diet Pills.

The saying is we eat with our eyes first… You must have some imagination!!!

No Carbs!... That works… we starve our muscles, lose water and feel crap… When all we have to do is eat Good Carbs…Sweet potatoes and whole grains.

Other elimination diets!

Too good to be true… Cookie Diet and Candy Diet…Whatever next???

I now rest my case…do any of you know any diets that really work where you can eat what you like ..when you like …That is free and all it requires is a little willpower and moderation.

Now for those who exercise quite hard and take or think you should take protein drinks then how about making your own?

I know many people who exercise who take these… So I thought I would do a little research and make my own… Cost-wise it is a no-brainer against the cost of some most Protein powders I made one today and it was nice…It tasted good..my son was my guinea pig/taste tester and has been a protein drink customer in the past and it got the thumbs up from him.

The protein shake is 3/4 cup of liquid and 1/3 cup of your main protein…

Coconut milk or water or Soya milk… It is important to get the right balance not what liquid you choose.

Greek yoghurt, Silken tofu, nut butter i.e raw cashews ( which) require soaking overnight to soften.

Extra proteins:-

Chia seeds, hemp hearts, ground flax or whole oats.

Today I made a Raspberry Protein shake and for an extra boost could have used chia seeds.

Raspberry Protein shake.

Raspberry Protein Shake

  • 3/4 cup of coconut water
  • 1/3 cup of Greek yoghurt
  • 1/2 cup of frozen raspberries
  • 1/2 medium beetroot(raw) peeled and diced.
  • 1 tbsp honey ( optional)
  • 1 tbsp chia seeds ( optional)

Let’s, Blitz!

Measure all the ingredients into your blender and blitz away… The colour was amazing a beautiful colour and it tasted very nice not too sweet and I did add honey.  Having never had a protein drink I do not know what they taste like although I have listened to others who say well they don’t taste great but I drink them anyway…Really!

I like to drink something which tastes pleasant.

Next week I am going to test a Tropical Protein shake and I might give you a typical days menu for me (what ) I eat in a day and still lose or maintain my weight.

Until next week ..just have fun, enjoy your food and moderation…

Beetroot Thoran (South Indian Style Sabzi/Veg)

Good morning from sunny Thailand…I came across this lovely recipe as I was doing my early morning catch up…I love beetroot, coconut and as you know Chilli…This recipe has it all so a definite one for me to try…I hope you enjoy it also 🙂 Have a lovely day 🙂

Masalachilli - A Complete Vegetarian Food Experience!

Beetroot Thoran – A South Indian Style Beetroot Sabzi / Vegetable

I try & include beetroots in our diet by adding them in our weekly meals. Usually it’s a raita (yoghurt based) or boiled, sliced & stuffed as a sandwich for breakfast or the humble Thoran from Kerala that is most loved at home so much so that there are second helpings demanded. People who hate beetroots – Are you listening??

I find a lot of people dislike this vegetable for many number of reasons but the most important being the earthy flavor & aroma. I feel the problem can be solved by steaming them in the right way (excessive steaming leads to nutrition loss & under steaming makes it tough & difficult to digest). Now there is a growing trend amongst bakers to include beetroots in chocolate based cakes, brownies etc. I haven’t tried it yet but will get there…
