CarolCooks2…This week in my kitchen…Everything cooked from scratch…

In my kitchen… where you will get an insight into what I have been cooking this week…Plus a bit of chat and trivia it would be boring otherwise…wouldn’t it? I am also guessing that for many of you life has changed this last month or two and if you are now at home it also gives the chance to cook more especially as you have time and maybe cannot buy as much or any of the things you normally buy so are having to make your own or improvise…and make do…

Having grown up in a family where my mother and grandmothers cooked from scratch maybe it was a little easier for me…I then had children (6) that meant a minimum of  8 to cook and feed every day plus the extra kiddies who would wangle a dinner invite…haha…It was a bit of a home for waifs and strays at times…

Then I moved here…Many of the ingredients I cooked with I cannot get here or are imported at cost and often very rarely available so at times ingredients have proved a challenge however it has forced me to improvise and substitute ingredients but overall I believe I am a better cook for it…

I have also learnt that many foods I took for granted and thought I couldn’t make …Well, I can…Always cheaper, bigger portions than the sometimes tiny jars and packets you buy…no chemicals and fillers…and not as time-consuming as I thought they might be…Taste-wise always superior…

Over the next few weeks, I will give you some hints and tips using minimal basic ingredients most of the time and healthy most of the time for foods you can make at home …Also if you are really struggling to get meals on the table tell me what ingredients you have and I will come up with a meal plan…Just e-mail me if you would rather…carolcookstwo@gmail.com   Happy to help…xx

I am being preventive so have opted to stay in where possible and keep away from people…I made my favourite biscuits anything with golden syrup and I am hooked…These little biscuits well they are not really biscuits more like cookies as they have a softish very slightly chewy texture…Carol’s Coconut Cookies…

These cookies are my basic recipe and are my experimental recipe I am already planning what I can add to them but this time I left the recipe as it is..no walnuts or raisins…

Ingredients:

  • 150gm rolled oats
  • 100gm plain flour
  • 100gm light brown sugar( I used raw sugar)
  • 100gm dessicated coconut
  • 100gm butter
  • 2 tbsp golden syrup
  • 1/2 tsp of bicarbonate of soda
  • 2 tbsp of boiling water.

Let’s Cook!

Set oven to heat at 175C, gas mark 4.

Line a baking tray with parchment paper. Combine the sugar, flour, coconut and oats mix to combine well.

In a small pan add the butter and golden syrup and melt the butter. meanwhile, bring the kettle to the boil and add two tbsps of boiling water to the bicarbonate of soda in a small cup. Add this to the melted butter/syrup mix. It will foam a little.

N.B if you leave it on the heat…like me…and turn back to line your tin…It will foam and went all over my ceramic hob…the rest you can guess…

Make a well in the centre of your dry mix and pour in the melted butter/syrup mix. Stir to thoroughly combine and it will form a slightly sticky dough.

Roll out balls and put on a baking tray leaving a space as they will spread on cooking ( the mix made 15 balls) Slightly flatten with your hand.

Put in the preheated oven and cook for 15-20 minutes, remove from the oven and cool on a wire rack.

Enjoy!

If the bread counter is empty…Grab some flour if you can any flour as bread is very adaptable, some yeast, Oats, baking powder and baking soda you are then equipped to make some beautiful bread…Can’t get yeast …no worries we have that covered…Milk and we are sorted you can now make some beautiful bread.

The second recipe is a favourite of mine… Buttermilk Bread…

Both easy to make and great spread with butter or jam, toasted, eaten with soup…both lovely loaves of bread and who doesn’t love the smell of fresh bread?

Buttermilk Bread…

Ingredients:

  • 2 1/2 cups of lukewarm water.
  • 1 cup of Buttermilk.
  • 1 tbsp quick yeast.
  • 1 tbsp salt
  • 1 tbsp sugar
  • 6 1/2 cups of bread flour.
  • Melted butter to brush the top of the loaf.

Let’s Cook!

Mix water, buttermilk, yeast, salt, sugar in a bowl. Add the flour. No need to knead..lol

Just combine all the ingredients  together..lightly cover the bowl and leave to rest/rise for 2 hrs.

The bonus of living here is dough rises quickly...I love using yeast now.

You can use the dough immediately, or store covered in the fridge for up to 5 days or in the freezer for up to 3 weeks.

If you are using now preheat oven to 350 degrees.

Dust the dough with flour and very lightly knead, shape into a round. Cover and rest for 90 minutes.

Oh, and I made a cut into the top of my dough just like a cross.

Bake in the middle of the oven for approx 40 minutes until golden brown and delicious.

Remove from the oven and brush the top with melted butter.

Leave to cool before slicing.

If like me you can’t always get Buttermilk or it is very expensive then here is a recipe to make your own Buttermilk.

Any leftover bread…SAVE IT…I always keep a bag or container in the freezer for all my leftover bread…

It is then handy to make breadcrumbs to coat fish or chicken, to make a bread pudding or a bread and butter pudding, to make stuffing or bread sauce…

Have you half a pack of cream cheese a couple of rashers of bacon, a slice or two of ham or a small piece of chorizo sausage lurking in the fridge…some breadcrumbs and some Jalapeno peppers…Fancy a snack..easy…Although I have used bacon with mine any of the above will be great just crumble the chorizo and cook then add to the cream cheese which if you haven’t enough cream cheese bulk it out by adding some feta, sour cream any other cheese play with the flavours use up your odds and ends…

Next week flatbread and pizza bases…again so easy…so if you are faced with not a lot on the shelves check out the herbs and spices, always grab some flour and milk…cheese if you can any sort it can all be used…cheese sauces for starters, pizza topping…

No tinned tomatoes then buy a couple of kilos of beautiful red ripe tomatoes and make your own it is so easy…You can then make soup, pasta sauce topping for pizzas…Fresh herbs can be frozen so pick them up they will all add a zing to your sauces and pizza…

It will also save you money...ready meals are expensive and not healthy and often not big enough for a growing lad or hungry hubby…

I hope this has given you some ideas...the stockpiling and panic buying has horrified me  I have family and friends in the Uk who can’t even get milk for their babies ..yet it is on e-bay for extortionate prices…If anyone I know is doing that and profiting from other peoples misery and worry then I will unfriend without hesitation…It is disgusting behaviour there is no need if everyone just shopped as normal there would be enough for everyone. Appalling behaviour…

This week in my kitchen…Bread Pudding, Jalapeno Poppers and Coorg Mango Curry…

Here comes the rain again it is low season here and although the mornings are lovely and bright and sunny as the day goes on the clouds come in and the tropical storms start…This morning I was up bright and early so as to get to market before the rain descended…Hubby cleared the debris from last nights tropical storm it was quite windy and the trees took a bashing so he had some branches to dispose of but nothing serious and no plants damaged as they came down…I still haven’t got used to how very loud the thunder is here it always manages to make me jump at some point…

As it has been a bit dull and dreary hubby has been indoors and not in the garden so much he has been picking and routing through the fridge etc so I thought it was time to use up some of the bits of bread in the freezer…I save all the crusts and ends of a loaf and use to make either breadcrumbs or as was the case yesterday Bread Pudding. This recipe is one which has been passed down through the generations from my nan from her mum to her daughter etc, etc and you can make a small one or a big one in fact when I cooked the lunches on a local building site it was what attracted my hubby to our canteen…My bread pudding…40 years later he is still enjoying it…

Ingredients:

  • 2/3 Ib of bread ( brown /white) or mixed.
  • 1 tbsp Mixed Spice.
  • 2 eggs beaten
  • 3 oz butter melted.
  • 12/16 oz  dried fruit (sultanas or raisins)

Let’s Cook!

Put bread in a large mixing bowl and cover with water or mix or milk and water to soak.

When soft I squeeze the bread out in a colander to get as much liquid out as I can. Normally I have my little helper( Lily) getting stuck in and squeezing the bread dry…Kids just love the mucky bits…lol

Nanny always pours the melted butter in and Lily adds the dried ingredients and gives the mix a good stir… I do miss my little helper…

I like lots of spice and fruit so if I think it needs more at this point then I add it is one of those dishes where you can add what you like for example if I have had some other fruit left over as in cranberries or blueberries I would add them.

Put in hot oven 180 degrees for 1 hour if the top seems to be browning too quickly then reduce the heat a little. It should rise up a little by end of cooking. Remove from the oven and sprinkle with sugar.

This is when I invoke my rights to cooks perks and have the 1st bit..to try of course as it’s yummy hot and straight from the dish. But I gave up my cooks perks yesterday as I only have one stubborn pound to shift to get down to the next stone…

It is also great served with custard or cold if there is any left..haha. It also uses up all your bits of stale bread.

Today I made a new curry the recipe came from Trupti @ MyCulinary Saga...Called Coorg Mango Curry…Pop over and have a look Trupti has some lovely recipes…

Mangoes are very plentiful here and everywhere you go are all types of mangoes the squirrels are also enjoying the mangoes on our tree I just haven’t been quick enough or lucky enough to catch him on film yet…haha

INGREDIENTS:

  • 3 semi-ripe mangoes
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Red chilli powder
  • 1/2 tsp Coriander powder
  • 1/4 tsp Cumin powder
  • 1 tbsp grated palm sugar
  • Salt to taste

For the seasoning:

  • 1 tbsp Oil(I used ghee)
  • 1/4 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • a pinch of Fenugreek seeds ( I used fennel)
  • 4-6 Curry leaves
  • 2-3 cloves of Garlic, crushed or finely sliced
  • 1-2 green chillies, slit and deseeded
  • 1 medium-sized Onion, sliced thinly

Let’s Cook!

The original recipe recommended washing the mangoes and cutting up leaving the skin on…The skin on my mangoes was quite marked so I removed the skin and cut up roughly.

To the mango add chilli powder, turmeric powder, coriander powder, cumin powder and salt. Mix well and let it marinate for 10 minutes.

Heat oil/ ghee in a pan on medium heat. Add mustard seeds, cumin seeds, fenugreek (fennel)seeds to it and when it sputters, add the green chillies and curry leaves followed by garlic and sliced onions. Fry until the onions are soft and translucent.

Add the marinated mangoes and mix well. Then add about a cup of water and cook the mangoes with lid covered on a low heat for approx 5 minutes my mangoes took a little longer it depends on the ripeness of your fruit.

Add the palm sugar and cook until it thickens about 5/10 mins.

Coorg Mango curry

Serve hot with bread or rice…

N.B I fried some curry leaves for the top as a garnish…

I liked this curry ... I try to have a couple of meat-free days a week…Hubby wasn’t as keen he likes his protein so he had Thai green curry… Thank you Trupti a recipe I would make again…

I also was just in time to pick up a few bags of jalapenos when I went shopping they don’t come in on a regular basis and fly off the shelves at The Royal Project Shop so the boys struck lucky and snacks this week were Jalapeno poppers

Stuffed jalapenos cooked

Back by popular demand was my Chicken and Prune Tagine/Stew…I am so pleased that the men in the house loved it and I don’t have to be sneaky about the prunes although I couldn’t get away with brown rice they are so fussy men at times aren’t they?

Ingredients:

• 4 large chicken breasts, skinned and cut into cubes
• 1 tbsp Vegetable Oil I used coconut oil
• 1/2 tsp Ground Allspice
• 1/2 tsp fresh ground Black Pepper
• 1 tsp Ground Cinnamon
• 2 tsp Cumin Seeds
• 1/2 tsp Ground Nutmeg
• 1 tsp Ground Turmeric
• 200g/7oz pitted Prunes
• 2 large Onions, sliced
• 1 tbsp freshly grated Ginger
• 3 Garlic Cloves, crushed
• Salt to taste
• 14fl.oz fresh Chicken Stock

Let’s Cook!

Heat the oil in a large heavy-bottomed pan then add the chicken pieces and brown on all sides.

Add the spices, garlic, ginger, and onions and cook stirring over medium heat until the onions have softened.

Add the stock and season with salt then bring to a slow rolling boil and reduce the heat to very low, cover and cook for about one hour stirring occasionally.

At the end of the cooking remove the lid and increase the heat to reduce the sauce.

Serve with rice or couscous…

You would think to be hot here that I would be making more salads, wouldn’t you? but not this week it must be all the rain and storms… It is making the men hungry…

Bread…The staff of life or is it???

Bread has been around virtually since the beginning of time… A staple in many diets but also something to be avoided in many cases…I mean who has eaten that tasteless sliced bread which sticks together and makes for a very unappetising sandwich ?

Bread is made in many different ways and from many different flours  it comes in all sorts of shapes and sizes and is also prepared in so many different ways around the world…

Bread may be leavened by methods which have a reliance on naturally occurring microbes as in the process of bread making using sour dough, or by using chemicals which are used as is industrially produced yeast or even now high pressured aeration… In commercial breadmaking. Some of the bread making processes would now probably cause many traditional bakers to turn in their graves. Because of this there has been a revival and an upsurge of traditional Artisan bakeries springing up which is good for all of us who appreciate good bread rather than the mass produced unhealthy rubbish which maskerades as a loaf of bread …Whoever said this is the best thing since sliced bread was obviously deluded.

Bread is basically flour, water, yeast and a small amount of salt. If it is properly made and allowed to rise properly and yes it takes time but as  bread rises it is also fermenting. Fermentation neutralises the part of the wheat protein that is most likely to trigger bowel disease and other auto immune diseases and inflamation which is a reaction to gluten.

Of course using traditional dry or fresh yeast and adding no preservatives  or other additives means the shelf life of the bread is shorter  and the bread is best eaten the day it is baked …

 

But who doesn’t love day old bread toasted ? It also makes lovely breadcrumbs for making stuffings or for coating meat or fish alternately freeze the odd bits and make a bread pudding there is no excuse for wasting good bread.

Bread can come with the addition of fruits, nuts and other fats  it is also served in various forms with any meal of the day. It is eaten as a snack by making it into sandwiches, fried used to coat other foods in the form of bread crumbs when frying as it prevents the food from sticking it can be made into bread pudding as an addition to stuffing mixes it has untold uses it also plays an important part in religious rituals and secular culture many sayings or expressions in language refer to bread, in prayer ” Give us this day our daily bread ” or “He stole the bread from my mouth

Adding other products to bread is fine such as honey, seeds, nuts or fruit as long as it is natural or naturally produced so if you have an artisan baker near you then you are very lucky and enjoy of course in moderation as too much…I am a party pooper aren’t I? but it can have that effect on the waistline…

Did you know that the lottery has funded a Real Bread campaign??? 

Now we come to the bad bread the bread you really don’t want to be eating …commercially produced bread generally contains additives to improve the flavour, texture, colour, shelf life, nutritional and for speed of manufacturing.

Most bread in the UK is made using the Chorley Wood Bread process which came into being in the 60’s and is still used in many bakeries to this day…The bread is mixed at high speed using intense energy, many additives and preservatives are added, increased amounts of yeast are used and the bread is given no fermentation time.

This modern practise of increasing the yeast element in bread and modern bakery practises have lead to many medical researchers believing that this is a factor in the extraordinary rise in digestive illnesses such as gluten intolerence and coeliac disease.

Who doesn’t stick a slice or two of this into the toaster ? Who hasn’t eaten cucumber sandwiches? the pictures look quite inviting don’t they? But they are empty of healthy ingredients and may aggrevate or cause any illnesses or disease you may have and for what?…They can and should be avoided at all costs…

As a consumer who reads the labels …Yes I do…The enzymes which are used to aid rising and give lightness and freshness to bread DON’T have to be declared in the list of ingredients…Why? Because they are processing aids …REALLY.?..One of the most common is called Amylase which is known to cause asthma and this is also one of the most common diseases among bakers…

So please when you buy bread think about what you are buying…I think it is about time that we all backed The Real Bread Campaign….Don’t you???

Old fashioned Bread Pudding just like Grandma used to make …

Bread Pudding.

Retired? No one told me!

29 days to Christmas …yikes…. Best get that ham curing …I have  lots of different recipes on my Pinterest  Boards but I will also give you my tried and tested  home cured ham recipe next week….promise!

This week sees me having my 1st Thai Language lesson. So watch this space…..I’m sure progress will be slow…even very slow…ha ha but at the moment I only speak Nik noy Thai ( very little.)

I have also been ploughing through Word Presses how to..for beginners..thats me! ….. Have managed to add FB, Linked In and Pinterest buttons so that’s a result…. so my aim is to be able to do one thing a week sooooo…..what does that mean for you…my faithfull followers ?…….who knows? certainly not me!…….Could be change of header or pictures absolutely anything!…So…

Good morning I have deliberated , digested  all of that over my G & T(s) and decided that this blog will be all about the “staff of Life” otherwise known as food!

I have cooked from an early age and started with good old British Fare and when I was old enough to cook myself my first dish was one that probably most youngsters start with ” Spag Bol ”

This was in the 60’s and I always remember my father..bless him..saying ” I’m not eating that foreign muck” he was a good old-fashioned Englishman who was used to good old-fashioned ” meat and 2 veg” very ably cooked by my mother.

Life moves on and it was probably a good few years before he did in fact .. eat it!

My aim in this blog is to give you recipes from the Uk and the rest of the world. Recipes that I have enjoyed, picked up on my travels or have been given to me by friends or just that now I have more time to do as I wish am experimenting with …..I make my own Bacon and Ham, bread,and am experimenting with cultures and pickling, all sorts really anything and everything… my minds an open book……..I hope you are as excited as I am…..

I would also love it if any of you had recipes you want to share, have eaten and don’t know how to cook or what the ingredients are in it and just have a name…..I will gladly research, cook it and share it…how’s that for a  good deal ??????

Salmon Trout.

Ingredients:

180gm  Trout or Salmon fillet.

For Topping:

  • 1 spring onion finely chopped.
  • 2/3 stems Coriander chopped finely.. I use the stem as well.
  • 1 red birds eye chilli finely chopped.
  • 1 tbsp Fish Sauce.
  • A cheek of lime.

Mix all ingredients together.

Put fish on foil and spoon topping on. I reserve some of the topping to add when serving. Seal foil and put in the oven on 180 for 10/15 mins until cooked.SAM_6823 SAM_6827 This depends on the thickness of the fish.

When cooked remove from oven and serve with rice.(This is when I remove the skin from fish.) and also add any additional topping. Enjoy!

Thai Pickled Cabbage ( Pak Dong)

  • 1 white cabbage. cut or torn into pieces.
  • 8 large spring onions chopped
  • Coarse Salt.

Let’s Cook!

Layer Cabbage, Onions and Salt in a dish ( with lid)

We then leave the dish on the kitchen top or in the sun for 1 day.

SAM_6824Then refrigerate for 2 days. It’s now ready to eat.

The longer you leave this mixture then it gets sourer so if you prefer you can leave longer.

No liquid is necessary as salt draws moisture from Cabbage and it makes its own liquid.

This can be eaten as a snack or with fish/or chicken.I prefer this to sauerkraut as it’s not so acidic but it’s personal taste.

Bread Pudding.

An old Favorite of my dad’s.

I keep all of my bits of stale bread in the freezer until I have enough for a pudding.

Ingredients:

  • 2/3 Ib of bread ( brown /white) or mixed.
  • 1-2 tbsp Mixed Spice.
  • 2 eggs beaten
  • 3 oz butter melted.
  • 12/16 oz  dried fruit (sultanas or raisins)

Let’s Cook!

Put bread in a large mixing bowl and cover with water or mix or milk and water to soak.

When soft I squeeze out in colander as much liquid as I can.

Add melted butter, mixed spice, eggs, and fruit and  combine.

I like lots of spice and fruit so if I think it needs more at this point then I add it is one of those dishes where you can add what you like for example if I have had some other fruit left over as in cranberries or blueberries I would add.

Put in hot oven 180 degrees for 1 hour if the top seems to be browning too quickly then reduce the heat a little. It should rise a little by end of cooking. Remove from oven and sprinkle with sugar.

004This is when I invoke my rights to cooks perks and have the 1st bit..to try of course as it’s yummy hot and straight from the dish. It is also great served with custard or cold if there is any left..haha. It also uses up all your bits of stale bread.
