July weather for some is mid-winter and if you are in the northern hemisphere it’s summer warm and rainy…The dog days or dog days of summer are the hot, sultry days of summer…

Let’s start the roundup with Monday Musings… 

Monday Musings where normally I share some things that have thrilled me, made me think or smile or even have a mini-rant but generally it is my happy place and I hope yours…July has arrived and is in full swing the sun has followed me halfway across the world and flip-flops and sundresses albeit with a cardi have sufficed…Last week we were in Cornwall which although a tad cold and a little rainy didn’t dampen our spirits…

Monday Musings…4th July 2022…

It’s sunny here and time to kick back and enjoy the sunshine with some chicken nachos and a glass of your favourite summer drink…An easy-to-assemble dish that is loved and enjoyed by many…

My Green Kitchen where I share hints, tips and recipes on how I make my kitchen greener…this month it’s garlic knots who doesn’t love garlic bread or knots we certainly do…of course, its Plastic Free July and I certainly needed that reminder as shops still produce too much plastic in packaging especially black plastic…that can be recycled if you have specialist equipment that many recycling places don’t have…so to landfill it goes it has certainly raised my awareness as especially when the sun shines we/I tend to buy more ready meals…

Saturday Snippets…9th July 2022…Today’s one-word prompt is “Glow”

Thank you for joining me for my weekly roundup…I am having a lovely time catching up with family and friends…cooking for my children and grandchildren again enjoying the sunshine that has followed me here…today is another family meal plus a birthday meal…and not a chilli in sight all lovely but I do love and miss my chillies…xx

Welcome to my kitchen…It’s time for another Chicken Recipe …Last week … Chicken with Mango was a very popular chicken recipe but chicken does go so very well with most fruit and spices…

Chicken is also such a very versatile protein it has little fat(unless we add it)…a healthy alternative to red meat…  low in saturated fat, contains higher amounts of omega-6 fatty acids than other animal meats, and is high in protein and essential vitamins and minerals such as B6, B12, iron, zinc, and copper…

Today I am sharing  Chicken Nachos…always a crowd pleaser it is quick and easy to make and anything goes its ideal on a balmy summer’s evening …plus its good with or without the chicken…

  • 2 cups shredded chicken
  • 3/4 cup barbecue sauce 
  • 1 (18 0z) bag tortilla chips
  • 3 cups shredded cheddar
  • 1 cup crumbled Cotija …that is a delicious Mexican Cheese.
  • 1 cup pickled jalapeños
  • 1 cup of finely diced bell peppers in any colour or mix them.
  • 1/2 small red onion, thinly sliced
  • 1 avocado, thinly sliced (Optional)
  • Freshly chopped cilantro, for garnish

Let’s Cook!

N.B if you don’t have Cotija Cheese then feta cheese and Parmigiano Reggiano are very good substitutes.

Preheat the oven to 400° and line a large baking sheet with foil. In a large bowl, toss chicken with barbecue sauce.

Layer half the chips, cheddar, Cotija, chicken, pickled jalapeños, and onion. Repeat.

Bake until cheese is melty and nachos warmed through for about 15 minutes.

Top with avocado and cilantro before serving.
