Fruity Friday’s…Pomelo…

 

Welcome to Fruity Friday’s today I am showcasing a fruit which is similar to the grapefruit but without the bitterness associated with the grapefruit called the Pomelo.

The Pomelo is native to Asia and grows in abundance here it is also one of the original citrus species.

We were lucky to have a pomelo tree in the garden in our previous house…

It ripens from a pale green to yellow when fully ripe and has a sweet white flesh it also comes in a pink and red which is rarely seen much here.

With a thicker skin and a much larger fruit than the grapefruit, it is very popular in Thailand and can be found everywhere, segmented and sold with a  chilli/sugar mix for dipping.

Mostly the skin is discarded but makes a lovely marmalade it is also sold candied here or dipped in chocolate.

I freeze part segments and use instead of ice cubes in my drinks…A tip I was given by my Russian friend and it pairs very well with Vodka…

Did you know? The Liqueur made with honey and brandy was one of the ingredients in a cocktail called Forbidden Fruit which dates back to the early 20th century. It is also an ingredient in the famous Dorchester Cocktail…The Martinez!

The pomelo is also known as Jabong or Jambola and in its early days was also called grapefruit or Shaddock named after a Captain Shaddock who sailed ships for the East India Shipping Company. Which is why in very early recipes you will find a reference to the grapefruit but also reference to the sweetness which the grapefruit does not have. Quite confusing…

Thais eat it raw or use it in salads if you can’t get pomelo then pink grapefruit can be used as it is sweeter and not as bitter as the yellow grapefruits. Pomelo is also drier and not so messy as other citrus fruits to eat raw.

Packed with vitamin C and lots of Potassium it is a beneficial fruit to eat healthwise and is found to be helpful in combating urinary tract infections.

My favourite recipe is called Yum Som O  in Thai.

Pomelo Salad

Pomelo Salad or as it is known here Yum Som O is a wonderful light refreshing salad made with Pomelo or( Pink Grapefruit) can be substituted and there is very little difference in flavour.

Ingredients:

  • 2 Pink Grapefruit or 1 Pomelo.
  • 12-16 peeled prawns.
  • 1 Sm cucumber diced.
  • 1/4 cup finely sliced shallots.
  • 1/4 cup fresh Thai Basil or Mint.
  • 1/4 cup Fresh coriander.
  • 1/4 cup unsalted peanuts/cashews.
  • 2 tbsp shredded coconut.
  • 1 Red Chilli finely sliced.

Dressing:

  • Half to 1 lime.
  • 3 tbsp Fish Sauce.
  • 1-2 tbsp palm sugar.
  • 1 -2 red chillies finely sliced.
  • Kaffir Lime leaf very finely sliced for garnish.

Let’s Cook!

Set a pot of water to boil on the stove. Add the prawns and boil for just a few minutes, until the prawns turn pink and are plump and firm to the touch. Drain and set aside to cool.

Place shredded coconut in a dry frying pan or a wok over medium-high heat and stir until coconut turns light golden brown and fragrant. Tip coconut into a small bowl to cool and set aside. Repeat with the shallots frying in a little oil until golden and crispy then tip into a small bowl and set aside to cool.

Prepare your grapefruit or pomelo:

Remove as much of the white peel/pith as possible from the fruit. Break into bite-size pieces or as I do shred a little finer – 3 to 4 cups is a good amount.

Put the prepared fruit in a salad bowl.

Add the cucumber, basil/mint, coriander, and fresh chilli.

Combine all dressing ingredients together in a cup, stirring well to dissolve the sugar.

To put the salad together:

Add shrimp to the salad bowl, then pour over the dressing. Toss well to combine. Add most of the toasted coconut, shallots and nuts, reserving a little for garnishing, then toss again. Taste-test the salad for a balance of sweet/sour/spicy/salty. Adjust to your liking, adding more sugar if too sour. For more depth of flavour, add a little Fish Sauce.

Your salad is now ready to serve.  Top with reserved coconut, nuts, shallots and shredded lime leaf.

Enjoy!

Tip: Like most Thai salad dressings, this is an oil-free dressing, so it doesn’t appear to ‘cling’ as well as oil-based dressings, naturally collecting at the bottom of your salad bowl. This isn’t a problem – just be sure to toss a little more than you would for a regular salad

This salad is better served and eaten immediately, the fresher the better. If preparing for a party, keep the dressing apart from the salad until you’re ready to eat, then toss them together just before serving.

I do hope you enjoy as this is one of my favourite salads, I do shred my Pomelo much finer though rather than having too chunky. But as with anything, it is a personal preference.

Pomelo is also lovely mixed with rocket, walnuts some feta cheese and a light dressing…Play with it …It is a lovely fruit mixed with salad ingredients.

They make refreshing sweet fruit salads when combined with pomegranate seeds and lychees.

Despite their size, pomelos only yield enough flesh for one person if eaten plain for breakfast.

When buying a Pomelo choose a fruit which is heavy for its size.

That’s all for the pomelo if you are lucky enough to be able to find one then enjoy…it pairs very nicely with just chillies and fish sauce or as in the salad above.

I am really watching what I eat this week as Easter is coming and I love a Hot Cross bun or two…Don’t you??

What is this I hear about the word Easter being taken of the Easter Egg boxes???  Well apparently it is old news and not quite TRUE..the word Easter is on the back of the box and not the front… I am guessing that it won’t be long before it disappears from the back of the box… Maybe I will take a bet on that…

What have I eaten today…Som Tam ( Papaya Salad)and sticky rice for my brunch…my early morning drink was Coconut Juice fresh and lovely.

Thai Beef Salad

Doesn’t it look lovely and fresh? That is why I love Thai Food  …It is quick to make and when I was working I just froze my meat in portions and took it out of the freezer before I went to work..so when I come home I just had to put on the rice and chop the salad ..flash fry the beef and slice thinly and mix it together and add the chillies etc…20 minutes tops and my dinner was ready…

I also owe all of you who were looking forward to some Tofu recipes this week an apology... I was hoping to get some tried and tested recipes that I could make but no… I won’t go into the why’s and wherefores but if anyone would like to do a guest post on Tofu with tried and tested recipes then please Pm or e-mail me… I am so sorry to have let you down…I myself don’t cook with tofu and haven’t ever wanted to but I know many of you do and I was hoping to be able to feature some on here this week and try some for myself but it didn’t happen I am afraid… So sorry 😦

Next week I will have another protein drink for you… Also, some recipes using Mango as at the moment Mangoes are plentiful and in season here and I have many mangoes some I eat green and raw with a chilli dip and I also make my own Mango chutney for when I have an Indian Curry which I do maybe once every two weeks…I did tell you that this eating plan does not count anything we just apply MODERATION…

No foods are barred just the ones that I choose not to eat…What do you choose not to eat?? Come on…Be truthful…

It is easier to get older than wiser!

I am in the process of updating my older posts… spellcheck was definitely required… lol…This one gives you an insight into my daily life and my favourite salad and the first one I was taught to make…The jewellery making now is on the back burner for the moment… So much to do and so little time… 30 hour days would be nice at the moment…Only kidding about the days xx

Retired? No one told me!

Well, that’s true… am I wiser…Depends…lol……….TIT ( This is Thailand )
TIT ONLY IN THAILAND……..I  never cease to be amazed at how much or how many people you can get on a bike a or in car or lorry.

Do you know if I could have just 1 wish ……it would be to pick this up and drop it smack in the middle of the M25…Ha Ha and watch the reaction……..For anyone who hasn’t experienced the M25 car park, it’s in the UK.

It’s  Thai lesson time soon, my young grandson is helping me with my pronunciation and tones and I am feeling quite pleased so far…..but long way to go…..the teller is when you go out and ask for something in what you think is brilliant Thai and you get that blank look that says ..what!…..but hey ho will keep trying…..

Fish Friday!……Beautiful Thai Steamed Mussels.

It’s # Fish Friday# what else could be nicer than a lovely steaming bowl of fresh mussels?

 

Which we had yesterday evening even though it wasn’t Friday but why not? They were calling my name when I went shopping and I couldn’t resist and once you have bought them they just have to be cooked.

The worst job is the debearding and they can tough little buggers to get out but well worth the effort and no one likes to eat the beard do they? It doesn’t look appetising either.

Ingredients:

  • 2lbs fresh mussels scrubbed and debearded.
  • 1tbsp oil
  • 2 shallots sliced
  • 1 cup of chicken broth
  • 3 stalk of lemongrass crushed
  • 3 slices of fresh ginger
  • Zest of half a lime
  • 1 sm chilli sliced
  • A handful of Thai basil.

Let’s Cook!

Heat the oil in a large straight-sided pot and add shallots and cook for 2-3 minutes add the other ingredients except for the mussels and bring to the boil, stirring then lower heat and simmer for 8-10 minutes.

Turn the heat up to medium add mussels and put on the lid cook for 2-3 minutes then stir and cook further 1 minute all the mussels should then be open. Discard any which are not.

Spoon the mussels into individual bowls or one serving bowl and spoon over liquid.

These are lovely served with a spicy chilli dip.

STEAMED MUSSELS WITH CHILLI AND LEMONGRASS

If you want something a little more special then try this instead.

Ingredients:

  • 1 stalk of minced lemon grass
  • 2-3 kaffir lime leaves
  • 1/2 cup chicken stock
  • good 1/4 cup white wine
  • tbsp rice wine vinegar.
  • 2/3 tbsp fish sauce
  • 1/2 chillies sliced
  • 1/2 cup chopped coriander.
  • tbsp finely chopped garlic
  • tbsp brown sugar
  • 2tsp cornstarch dissolved in a little water.

Let’s Cook!

In a large straight-sided pan bring the chicken stock to the boil. Add wine, vinegar, fish sauce, chilli, sugar, lime leaves, garlic and 1/2 cup of chopped coriander when the sauce is gently boiling add the mussels and stir gently, put on the lid.Cook for 2/3 minutes remove lid and stir and cook for further 1 min any mussels which are still closed remove.

Push mussels to one side and add dissolved cornstarch cook 30 seconds and it should have thickened gently stir in mussels.

Now taste and if too salty add lime juice and if not salty enough add more fish sauce.

Sprinkle with Thai basil.

Serve in a large bowl or individual bowls.

Fish Friday….Thai Squid Salad.

 

Another authentic Thai recipe…

Squid Salad

I used to hate squid with a passion…..the only squid I had ever tasted was those squid rings in batter..fried to death and tasting like a rubber tyre…that is until my son bought his Thai girlfriend home and she introduced me to this amazing salad with the softest squid I have ever tasted. Doesn’t that just look amazing?

Ingredients:

  • 400 gm(14 oz) baby squid.
  • 5 Spring Onions. (sliced)
  • 5 sm shallots.( thinly sliced)
  • 20 cherry tomatoes. ( halved)
  • half sm cucumber sliced and quartered.
  • Coriander big bunch or again to taste…I like lots…(chop)
  • Mint. ( optional)
  • 1-3 birds Eye Chillies chopped( seeds optional)
  • 2 tbsp Fish Sauce.
  • Half lime,  juice.
  • Palm Sugar ( up to 2 tbsp ) again optional I don’t use it but depends on personal preference.

Let’s Cook!

Clean the squid. Getting all membrane off and remember to pull out the plastic quill.

Cut head/parrots beak off leaving the  tentacles(the best bit)

Slice squid into 3/4 to inch slices.

Heat a small amount of water in a pan and add squid,  cook until opaque less than a minute, Drain on kitchen paper and combine with other ingredients.

Again TASTE and check to season. You cannot taste too much. It is just getting those delicious Thai flavours of sweet, sour, spicy and salty just right for you..it took me a while so just keep tasting…

Squid Salad

I just love Thai food one because of the taste and also because of the ease of preparation. It takes longer to chop ingredients than to cook the dish the majority of the time. And as long as you remember to TASTE, taste and adjust seasoning to your personal taste and as you know by now I love chillies, fish sauce, coriander and mint in abundance.

Enjoy!

Serve with Sticky/ Steamed Rice or noodles.
