Healthy Eating… No More Diets…

Welcome to this week’s Healthy Eating…

How has your week been? Good or bad? Mine has gone well…I will get this over with my first sourdough loaf is cooked, eaten and was divine…I was so chuffed at the lovely comments I received…Of course, I had to sample it in the name of quality control and with proper butter as well…haha…

It was lovely I thoroughly enjoyed it…No guilt…Just pure enjoyment…It was healthy( wholemeal) grass-fed butter and my home baked bread …I savoured every mouthful…

Hubby ate the rest either a sandwich or toasted…

The rest of the week has been just normal healthy eating and walking which has increased due to 2 factors one is that our granddaughter is staying with us for 8 weeks( school ) holiday and two my smartwatch is keeping tabs on my steps…The daily recommended guidelines are 10,000 steps which sounds a lot but doable…

As you know I advocate eating healthy balanced meals I don’t believe in cutting out food groups like meat, most fruits or pasta/rice/potatoes…I do believe we should avoid or eat little highly processed foods, food with added sugars, we should choose good quality cooking oils, avoid excessive intake of high mercury fish like tuna…Alcohol enjoy just not in excess. 

For me, that is easy to follow and coupled with the 16/8 intermittent fasting and exercise I am seeing results.

That hasn’t always been the case...At this moment I am the lightest I have been for a good few years …I have also accepted I will never be the weight I was when I married… More fat on a chip my husband used to say…haha

Life happened, I got married, I had kids… I ate what they didn’t, I worked and shopped in my lunch hour and while queuing to pay eyed the strategically placed sweets by the till ( those stores) know how to tempt one don’t they? The mums and friends who mean well…Just have one…That won’t hurt…

I feel your pain I know what you have been through or going through so does my friend Sally…Who is a Certified Nutritionist and knows the pitfalls and curve balls life throws at us …Both of us have struggled with weight at times during our lives …

It ain’t easy and while I may make it appear to be …I have eaten my share of what I shouldn’t and moderation did not come into it…I am now older and wiser…haha…Believe what you will…But I have realised I need to cherish this body as it is the one and only one I have or will have…Better late than never…

How to manage people…The well-meaning ones of course…

And remember…Losing weight is not a sprint, it is a marathon and your mental and emotional attitude towards the project is a key factor in your successful weight loss.

Sally’s posts are both informative with a little humour and she will tell you it is not easy she knows but I will let her tell you her story…

Diets come and go...Faddy things aren’t they? Mostly a flash in the pan and not sustainable…A new one has arisen…A hybrid of the Paleo diet and the Vegan diet…All the good bits…The Pegan Diet…

I know it just had to happen, didn’t it?

The basics of the Pegan Diet…3/4 vegetables and 1/4 meat/fish @ each meal, the meat/fish from good quality sources…( no hormones and antibiotics)…It focuses on eating more fibre and low glycemic index fruits, eliminating sugar, dairy unless it comes from ( goat/sheep) products eating little or no highly processed foods thus avoiding foods produced using chemicals and pesticides…eliminating legumes except for lentils…

Great in theory and first glance and sounds similar to what I believe in however it is quite restrictive and would need some planning and the bottom line is we need a Healthy Balanced Diet…No eliminating essential foods… It seems to me that the people who market and promote all these diets think they have to come up with something new all of the time and I suppose celebrity endorsements don’t help that trend…

Frankly just because a celebrity endorses a product doesn’t mean it works…No one size fits all, no one’s lifestyle is the same as Fred’s next door we are all individuals with different needs, Stress levels, family commitments, work commitments so much factors into the equation…

Healthy Eating is a lifestyle choice and takes time to adjust…You will have blips or bad days/weeks but it is how you deal with it…

We just need to eat sensible, normal healthy foods and a balanced diet…Most of the time.

Smartwatch Corner.

Smart phone and watch

I am still impressed with my new toy…I will say it keeps me focused…

So far I use the step counter…It does have other functions like running and workouts but I enjoy walking …The recommended daily steps are 10,000 which is doable…..Last Thursday I achieved 14,000 plus steps in one day…I was out and about doing kids things and shopping so although tired it was a revelation as to how many steps I did do that day…An average day for me is 6-7000 I am working on getting to 10,000 more often…

The other function I love is the sleep function...

It shows 3 levels, Deep sleep, light sleep and Rem sleep plus gives you the normal range and tells you where you are in that either normal, high or low. Plus it gives your overall hours of sleep, how many times you woke up with an explanation of your total hours of sleep and how long you were in the stages and what happens to your body while you are in each stage of sleep…

It also offers an explanation as to what causes any changes and how you can remedy it with links to other sites for further info.

I am finding this really interesting as I am gradually seeing a pattern forming and am realising which factors are influencing my sleep for example what I am doing prior to sleep or what I have been drinking as I don’t eat after 8pm.

It also tells me my heart rate …An explanation can also be found on heart rates.

What I do find amusing is the little green man who buzzes and waves at me when I have been inactive for a while…

It also has other functions which I don’t use yet or may not as I purchased this mainly to keep a little eye on my health. Which while it may not be exactly spot on but accurate as these can be but as the watch is on your pulse give or take a few beats it is accurate enough for me…

Healthy Eating…SmartWatch…

Welcome to Tuesdays Healthy eating post…It seems like last weeks post on Intermittent fasting is something many of you are following or thinking about it certainly seems to be the way forward and is on many health professionals radar…

Healthy eating is not about deprivation but about choosing foods for the well-being of the one body we have been given…I believe as do many that we need a healthy balanced diet and the occasional treat is fine and to be enjoyed…

When I stated what I had cut out last week it was foods I believed were having a negative impact on MY body…It is foods which have empty calories, do not add anything healthy to MY diet…That’s it!

You are in charge of yours and nothing wrong with having a drink of alcohol or a biscuit or two if you fancy it… for me altogether they were having a negative impact …

Enough of that…I have attached this little chart of Sally’s for you to check out if you want…No pressure here…just conversations as to what works for us as individuals no one size fits all…

Smartwatch Corner!

I have a smartwatch….Yeah…It is smarter than me…Honestly not something I would ever have envisaged buying…Why? I am really not a gadgets person…Or one who has to have the latest phone person either…However when I could not have the apps I wanted on my phone because Samsung loaded all their bloatware and by the time they had done that it left me very little to play with and I ended up having to uninstall an app to add another app and my needs are small…I don’t play games, pay with my phone or any shopping channels not of my choosing…

This made me have a rethink and consequently, I bought another phone which allowed me to install the few apps I do have …It also had a pre-installed fitness app which one’s grandson alerted me too…Thank you, Aston x

It also focussed my mind…Told me how many steps I have taken in a day…Also, lots of other stuff if I wanted…I found I did…

Hence some research into smart watches …So starting next week there will be a smartwatch corner as I discover new things about it…That saying about there is life in the old dog yet is coming true…Haha

The lovely girl in the shop set it up and synced( get me) it to my phone…It has just waved at me and shown an image of someone getting up and walking…Please, I am writing…haha…

But joking aside it is showing me the error of my ways..She who tries but is not perfect..is listening oh hallowed smartwatch… just don’t get too smart…

It has however piqued my interest about my sleep pattern for example…I was normal on all counts the first night..It also explained every step with links …I was impressed as I like to know that statements on health are backed up by research…

Then life in the form of my grandsons birthday cake stepped in…I had two pieces and enjoyed them (I also) knew I should have stuck at one…The second was I am loving my Green tea but not a good idea to have a late night pot of the said green tea( caffeine)…My smartwatch had a hissy fit yesterday morning reflected in my sleep pattern stats…

It bloody knew…Haha

Once I had digested those stats and I didn’t like them one lickle bit but I also knew what caused the blip…This morning I woke up bright and bushy-tailed unlike yesterday and my sleep pattern was much better so hopefully, tomorrows will be back to absolute normal …Smartwatch it is… I am impressed (so far)

I am also impressed by how our bodies react…A wonderful piece of machinery which we can abuse and abuse and then we can much of the time apply a little moderation and TLC and it purrs like a well-tuned car…Mine will never be a Rolls Royce but maybe, just maybe a little Honda Jazz…

Healthy Eating…No more Diets…But a way of life…

Good morning…After the mother of all storms last night the watery sun is trying to come out…The birds are singing and the squirrels are playing on the trees outside my window…

It is day 21 of no alcohol and going well… 3 nights out and I stayed on the water…I also feel much better and have lost a few inches which is a bonus…A dress last worn on Christmas day is a lot looser around the hips and tummy area …My new phone tracks my steps which is another incentive to up the ante…

How is your healthy eating going??? Have you any tips to share?

Salads… If any of you buy ready prepared salads I read there was yet another recall…Not the first I will add over the years and there have been fatalities in the past… it can take a couple of weeks for greens to get from the farm to your plate when they come in the form of bagged lettuce, and nutrition is lost during that time. Another thing that adds to the degradation of vitamins and minerals in bagged salads is the washing they go through before being bagged.

Then there is the water issue…triple washed? If it’s in [California’s] Central Valley, then it most likely becomes the single most important environmental consideration, and the triple-washed thing becomes very difficult to defend.”  90% of U.S. lettuce is produced in California and Arizona.

Plastic bags…It’s just another one …So many issues surround these pre-packed bags of salad…I for one don’t touch them with a barge pole…

If it is just the fact that you love a plate of salad greens…

Lettuce greens are the easiest to grow at home…

So really, what’s the point of buying supposedly clean lettuce that isn’t really clean at all?

As you probably know my big boy came to visit it was lovely and has been 3 years since I saw him in the flesh…We have planned our next visit we are not leaving it so long next time we are meeting in Bangkok in May which is his next visit to Kl, Malaysia for work a short trip for us both with no stopovers…

One of our conversations was the Keto Diet which he is currently following properly I may add he has done his research and is tracking his carbs and fibre to make sure he is getting the correct amount.

I believe in a healthy balanced diet and I get the fact that Keto targets the burning of fat and how…Long term isn’t his plan just a means to an end…I understood everything that he said and the why’s and hows and wherefores…

He sees the problem as being that people who were not brought up to eat proper food and cook from scratch are the ones who are just eating everything that they like and can now eat…As much as they like and still lose weight and inches…A recipe for problems later on…

Sean is eating the good fats and making sure he gets his recommended fibre and carbs as fresh food does contain carbs e.g starchy vegetables, legumes, grains, bread so it is opting for lower carb vegetables so drilled down it is a more sensible diet than I originally thought…I still think a healthy balanced diet is the best way as weight loss is not so easily gained…

How am I losing weight and inches?? 

By cutting out alcohol, processed foods, no more biscuits, swapped English tea for green tea which avoids the need for a biscuit to dunk, changed to brown/wild rice and eat rice once a day instead of twice a day and substituting cauliflower rice or zucchini pasta, eating more fish which cuts down on the red meat.

That’s about it…Update it is working my clothes are looser and a great tip my son gave me was instead of using a tape measure use a ball of string and hang them up every time you measure yourself and you will soon have a decreasing line of strings showing your inch loss….I thought that was a great idea!

My recipe this week and it is my favourite soup…Tomatoes, chilli, egg, mince, spring onions and Dill…. A virtual assault on my taste buds… The fresh taste of tomatoes is intense and heavy on dill which I love this is one of the best soups ever…

Egg drop Soup.

Ingredients:

  • 1 1/2 tbsp oil ( I use coconut)
  • 3 spring onions
  • 3/4 lb ripe tomatoes ( chopped and cored)
  • 1 tsp salt
  • 1-2 tbsp Fish Sauce
  • 1/3 lb finely minced pork/ chicken
  • 1-2 chillies diced diagonally
  • 2 eggs beaten or you can just drop the egg in whole and the heat of the soup will cook the egg.
  • 2 sprigs of coriander or dill or more
  • 5 1/2 cups water
  • Black Pepper to taste

Let’s Cook!

Heat the oil over medium heat in a large pan. Add tomatoes and salt, cover and cook until soft about 4-6 minutes. Stir occasionally to prevent sticking or burning.

Add fish sauce and chillies….I would add I tbsp of fish sauce and taste and adjust seasoning before serving.

Add mince and move around to break up any big clumps.

Add water, bring to boil and skim off any scum that arises.

Reduce heat and simmer for 10 minutes add spring onions and simmer for another 10 minutes.

If you are not serving immediately then remove from heat and keep the lid on.

To Serve:

Bring soup to simmer, Taste and adjust seasoning, fish sauce or salt.

Pour beaten egg into a bowl in a wide circle; stir gently to break up into strings.

Ladle soup into a bowl, add a generous sprinkling of pepper and garnish with Coriander or Dill.

Healthy Eating…The bonus? You may lose a few kilos… Anti-inflammatory foods…

Welcome to Tuesdays healthy eating post…It is a tad cooler here in the mornings and the fan is staying firmly off my shawl is around my shoulders albeit the sun is shining…I can hear you… I know many of you are experiencing extremely cold weather so never fear the recipes here today will warm the cockles of your heart…

Here I am clocking up the digits so I am going to have a little corner for food which will help alongside a healthy diet to help keep those wrinkles at bay… and hold back the sands of time…

It is also a known fact that if you eat half, walk double, laugh triple and love without measure that YOU will live well and longer!

I know that some health conditions are caused all or partly by inflammation and doctors may advise following an Anti-inflammatory Diet.

On hearing these words many people just freak and think what! It is going to be expensive, it will be foods I don’t like, I am going to have to eat different food to the rest of my family… all manner of thoughts…

It is Healthy Eating no more no less…It is knowing which foods cause inflammation and which foods help calm inflammation…Pure and simple…

Let’s have a look, shall we? Break it down…

Firstly reassess your lifestyle as stress plays a huge part in this…Chill out!

Exercise goes without saying...It doesn’t need to mean expensive gym fees…Walking, riding a bike, using your bottom stair for step ups, using cans of beans to get those arms working, a hula hoop, a skipping rope, cleaning those windows, play ball with the kid’s, if they have a trampoline need I say more…Unleash that fun side…

Many little bursts of exercise through the day can work wonders.

What to eat?

Fewer highly processed foods...You knew I was going to say that …Didn’t you? Look on the bright side it will save you money…

Spices...Turmeric contains curcumin, garlic a wonderful bulb which adds flavour to foods and helps curb inflammation, ginger may reduce muscle pain and soreness and its anti-inflammatory properties can help with Osteoarthritis.

Reduce caffeine as in  tea and coffee drink and replace with

  • Chicory Coffee
  • Matcha Tea….more info here 
  • Golden Milk. Golden milk is a rich, caffeine-free substitute for coffee. …
  • Lemon Water. …
  • Chai Tea. …
  • Rooibos Tea. … I know this as Redbush Tea and love it!

Red wine has known anti-inflammatory properties…There seem to be 2 camps on this consume or avoid…My take try moderation…

Oily Fish for that Omega 3… Salmon, tuna and sardines are all good…Just know your source and that it is sustainable fish.

Olive oil and avocados…

Eat plenty of fruit and vegetables…Spinach and kale are both rich in Vitamin K and help curb inflammation as do broccoli and cabbage…Cherries, raspberries and blackberries whose colour is a type of pigment which helps inflammation. Go for colour and variety.

Whole grains…Oatmeal, whole-wheat bread, Brown Rice all may help lower inflammation.

Beans contain so much fibre and are loaded with antioxidants to help reduce inflammation.

Nuts just a handful a day… Almonds and walnuts…

Now, what to ditch… Or cut down gradually…You will notice the difference guaranteed!

  • Refined sugars and starches
  • Sodas and other highly sweetened drinks
  • Hugh fat and processed meats
  • Fried Foods
  • Transfats

None of these should come as a surprise to you unless you have lived on a desert island with no radio, newspapers or the internet for the last 30 years…

After following this you should notice a difference in any joint pain, stiffness, swollen joints or redness…

To give you a start here is a day’s food plan starting with breakfast.

Porridge and a lovely berry compote made with frozen berries just cook some and reduce down…Too sour add some honey.. or as I often have…

Pineapple Smoothie

Full of fibre and protein, which makes people feel fuller for longer.

Pineapple contains high levels of bromelain, which has anti-inflammatory properties. Bromelain supplements are an emerging market due to its anti-inflammatory properties.

Lunch… A lovely bowl of soup

  •  1 small squash, peeled and deseeded. Cut into pieces.
  •  1 brown onion, peeled and cut up
  •  1 carrot washed and cut
  •  4 cloves of garlic finely chopped
  •  Piece fresh ginger finely chopped
  •  3 Broccoli stalks, peeled and cubed (I always save the broccoli stalks) for when I make soup. Waste not, want not and I think ideal for soups for flavour.
  •  1-1½ litres fresh home-made vegetable stock

Let’s Cook!
Heat a glug of olive oil and gently cook garlic ginger and onion to just soften and not colour.
Add other vegetables gradually and cook while stirring for about 5 minutes, then add the stock and seasoning.
Simmer gently for about an hour or until vegetables are lovely and soft and remove from heat. I let it cool down before I blend.
This makes a lovely vegetable soup but I also use it as a base and freeze in portions.
When I reheat I add little-dried chilli flakes and 1 or 2 tbsp of coconut milk.
It just gives it a creamy flavour.
Sometimes I add crushed lemongrass stalk and a little fish sauce, it depends on how I feel, it is a versatile soup base so play with it, have fun.
Add some curry powder, a squeeze or 2 of lime juice or coriander, whatever you fancy. Enjoy!

Dinner… Salmon with Greens and Cauliflower rice.

Salmon Trout my way…

  • 180 gm  Trout or Salmon fillet.

For Topping:

  • 1 spring Onion finely chopped.
  • 2/3 stems Coriander chopped finely.. I use the stem as well.
  • 1 red birds eye chilli finely chopped.
  • 1 tbsp Fish Sauce.
  • A cheek of lime.

Mix all ingredients together.

Put fish on foil and spoon topping on. I reserve some of the toppings to add when serving. Seal foil and put in the oven on 180 for 10/15 mins until cooked.

Saute some kale or spring greens and serve with Cauliflower rice… recipe here

These are just some ideas of foods to eat and cook with if you need to follow an anti-inflammatory diet…Not so daunting is it?

Many of these foods are foods which you may have in your fridge/larder or buy already.

Anti- Ageing Food Corner:

Let’s start with a treat…Dark Chocolate ( Not milk) is loaded with nutrients which can have a positive effect on your health. Made from the seed of the Cocoa Tree it is loaded with antioxidants…Studies show that it can improve your health and we are talking proper chocolate here..Not your cheap stuff but one with a high cocoa content dark chocolate with 70% or higher cocoa content.is rich in fibre, iron, magnesium, copper, manganese and a few other minerals just apply the moderation bit as it does contain sugar but the fats are mostly saturated and monounsaturated, with small amounts of polyunsaturated fat.

A couple of squares a day my father swore by it and had his two squares with his afternoon tea so go on treat your self to a good bar of dark chocolate and some of them now have chilli and chilli and chocolate is good…

Healthy Eating…How to shift those Christmas Kilos…

Well, January is nearly over and I think by now most of you will have finished those boxes and tins of chocolates or maybe you have been really good and given them away??

Who am I kidding?? Who does that???

Who’s waistband is feeling a little snug?

So now you have enjoyed that awesome Christmas dinner …Just to recap what was your favourite part…I just love bread sauce and stuffing with cranberry sauce and the Christmas pudding and cream…After eight mints you know the ones with the little hard pieces of crunch in them? Or the peppermint creams…

But I have now finished the red cabbage we have had a little portion with our meals since Christmas…

But it is now time to get real once again…Christmas just knocked me off my little healthy eating path..a few potholes…

Normally I am fine…I walk every day or 6 out of 7 days… Eat generally what I like 80% of the time and occasionally my 20% kicks in when I fancy something a bit naughty but nice…Who doesn’t???

I also only eat between certain hours normally 8am to 8pm…That way my body has a good fast…

My weight has dropped 4 stone since  I have been living here and my tummy is quite flat…There is not so much temptation here as the food is entirely different and the diets… Lots of fresh produce and eaten raw as well most of the time…so I guess not so much temptation and now I don’t crave sweet things like I did…I can make that box/ packet of goodies last a week or more..happy with 1 piece of chocolate a day instead of the whole box…

But to be fair, I shop at local markets and they don’t sell crisps and goodies like chocolate bars so it is easier for me.

Do I love food?… Of course, I do… But I love my health and wellness better…

Do I love spending hours in the kitchen?? In this heat, you must be kidding!

So as I need…No want to kick those few extra kilos into touch I have gone back to watching what I eat just a little closer as generally, I am ok… I have also been researching and trying new recipes which are healthier and tasty and will make your taste buds sing..

I also have the added incentive as my big boy is coming for a short visit in Feb so I want to just drop a few pounds… 

So Tuesdays are still going to be my healthier eating day when I will bring you some tasty food and of course some chatter those of you who know me … Just know I love a chat! So talk to me, tell me what you want, where you need help and if I can I will…

Just know I am not quiet, shy and retiring…I love to chat and I love finding out about the food I eat and it is harder for me than most of you…I don’t have fancy cooking pots and pans here…I am lucky I have a kitchen most Thai houses don’t!

Just a two ring burner and a BBQ ..most of the time outside and not even a kitchen sink… I am luckier than most here…I have a sink…lol… and a ceramic hob… the oven has now arrived but is basic, no numbers on the thermostat just a dial so I have a little oven thermostat so I can get the right temperature although it will be bottled gas as there is no mains gas here…It is a tad more difficult to regulate but I am getting there.

But if you have visited Thailand then you probably have seen the marvellous tasty amazing food which is produced by the side of the road, on a street market stall …Who needs a state of the art kitchen??? Look at that beautiful squid!

SAM_7514I will bring you tasty healthy recipes which take longer to cut your veggies than cook..most of the time…I can hear your thoughts…I bet I can’t get the ingredients…Yes, you can…Well, not all of the time…But most of the time you can and if not I will suggest a substitute…

It won’t all be delicious Thai food, it may be European, Indian I have some wicked recipes given to me by my Indian friends…It won’t come from a packet it will be cooked from scratch…For those of you who can’t cook or don’t cook it will be easy… I don’t do complicated very often and I don’t do many cakes and puddings…But I will for those of you who like them..only sometimes…haha… as a treat… I can be mean…Who needs a pudding when you have just eaten the most delicious lunch or dinner???

Ok, Ok…I know sometimes you do…

I can do snacks like lovely fresh salsa…and yes Doritos or crackers…You have your 20% … Don’t you???

Use it wisely…

I want you to love your food and lose weight…But we all know that it is not always easy for some and some go into it half-heartedly but I want to live as long as I can…by watching what I eat…I am not fanatical…I eat proper food… I just like to know what is in my food… I don’t do gyms for exercise I walk..but if a gym is what you like and enjoy then go for it…That is half the battle won…

If we love our chosen exercise and food we do it and eat it!  stay healthy and lose weight… No fads..No get slim quick..no fancy foods…No going without…Think moderation… No right way or wrong way ..Just your way! It has worked for me but I am a single-minded cussed old cow sometimes who loves a bit of Christmas pudding and cream…I don’t follow a rigid diet or exercise plan… I enjoy my life and want it to continue as disease free for as long as I can…

It works for me…Will it work you?? Only you can answer that…

Moderation is all I ask and honesty… be honest…So don’t feel guilty about what you eat..Enjoy it! Love it!….We are all grown ups and we know what is good for us and what is not…

If that television advert, or magazine spread or that famous celebrity or doctor is telling you about something marvellous…They are laughing all the way to the bank…If it sounds too good to be true…It is!

Healthy Eating…No More Diets…

Welcome to 2019  how was your Christmas and New Year? Did you enjoy your Mince Pies and Sausage rolls I certainly did…

I was pleasantly surprised when I plucked up the courage to check out the damage of all that lovely festive fare it wasn’t as bad as it could have been.

How did you do?

As you know I don’t believe in diets or fads or fashion foods…What is that about?  Most diets fail because they are so far removed from our normal eating patterns and often we are eating something not as nice as we have cooked for the rest of the family and we feel deprived…

We need a balanced diet, A healthy diet and yes there are some foods that are better for us that contain antioxidants or more fibre, more of certain vitamins but it needs to be balanced it will do no good to empty the shelves of tomatoes for example and fill ourselves up with tomatoes any which way we can for a few weeks…Will that do us any good??? I think not…It is moderation, common sense whatever way you want to put it…

I am not going to bash any other eating plans or fad diets and sometimes we need to follow a diet because we have an allergy or a proven, medically diagnosed condition where we cannot eat a certain food or food group…

But if we don’t then we need a balanced, sensible diet coupled with regular exercise…Normal everyday foods…

I also think we need to take more notice of food packaging instead of just picking it off the shelves because something catches our eyes…

 Fat-Free…Generally means it contains High Fructose Corn Syrup… We need a certain amount of good fats …Our body will not run efficiently if we don’t…Just like our cars need oil…

Cholesterol Free…The first time I saw this on a label I went home and double checked with Mr Google…I thought maybe I had missed something…Of course, I hadn’t… Cholesterol is only found in animal products i.e Meat, dairy, eggs, butter etc…Vegetables and fruit do not contain cholesterol …It is a very clever marketing ploy based on the fact many people read the headline and buy a product without thinking.

Multi-grain…Could mean 2 or 20 grains of which some are processed grains just like white bread… Buy Whole Grain…

Skinny Teas… Seems to be a new fad to me… I get behind the times and am not au-fait with many of the latest fads…They contain laxatives pure and simple  …drink too many and you may have a case of the back door trots…

Energy Drinks… Contain high levels of caffeine and are now banned in the UK for purchase by under 18’s, there have also been a few recorded deaths obviously my favourite word of moderation was not applied and they haven’t been around long enough for any long-term studies to be conducted but early signs are not good… So please if you do drink them heed the warnings.

Super Foods… Unless you have been living on a desert island with no contact with the outside world then we have all heard of those Super Foods and yes some foods are extra healthy as part of your healthy balanced diet…No one food alone on its own will help.

Sugar-Free… replaced by what? Mannitol, sorbitol…. look for natural sweeteners.

Natural Foods… There are no regulations about putting that on a packet…What does natural mean…I want to know and so does apparently the FDA …

I think we all need to be more label conscious… Believe nothing is my motto …If a packet or jar has more than 3 ingredients then I put it back…My prime example is Coconut milk…sold here and 100% and that’s it!

Sold in the UK and probably the US and other countries NOT SO …MANY ARE BELOW 50% and contain fillers and guar gum. Why? My carton keeps the milk fresh until opened the answer? I will tell you to cut costs…Pure and simple…

How am I doing since Christmas well I have lost my Christmas lb’s just by going back to my intermittent fasting, 2 meals and only 1 snack or maybe 2 at the max…

I have started drinking more Green Tea… my new favourite drink as the weather turned a little colder my coconut oil turned white and solid for a week…My dear grandson also bought me a lovely Green tea set so I can brew my tea and sit and enjoy in the peace and quiet.

Isn’t it pretty and I have a choice of 4 different cups all pretty ladies…Now I can brew it properly no bitter taste it is lovely…so twice a day I sit and sip my green tea…

What is your favourite beverage?

When I was working I ate 3 meals a day but I am older and retired although I still work( write ) I don’t eat as much as I did when I was working and running about after my children so it boils down to what your needs are…If you are eating sensibly and healthily with regular exercise you will lose weight…Promise…

I have also gone back to mainly eating Thai food which I enjoy and it is quick to prepare and cook…

My advice to you…

Ditch the empty carbs and processed foods find other foods that you enjoy… I do not advocate eating any food I do not like or enjoy…Eating should be a pleasure and if that means a slice of cake …So be it… that is my pleasure …The whole cake is being a piglet and is not moderation…

That premise does not apply when it comes to wine... I know how to live to enjoy my food, stay healthy and lose weight.xxx

Eat Smart, Eat Healthy…No more Diets

Winter warming Soups and chilli

Good morning from sunny Thailand… we are warm here as we are coming into our High Season soon while many of you I know are feeling the winter chills… This week some healthy lunches…which will warm you up …

It is quite difficult to think of what to suggest as when I worked in my last job although we had the heating on  the doors were continually opening and closing so if you were working on the ground floor it was a tad cold most of the time so a warm bowl of soup or a jacket potato was very welcome at lunchtime.

I always used to make extra if I made a stew or chilli and freeze in portions it was then easy to take to work and I know from experience that if I ventured out at lunchtime as I hadn’t bought anything in with me it was over to Marks & Spencer who do the most divine sandwiches and of course all their yummy sweet things are by the till…Do I need to say more???

Not taking in lunch is a trap many of us fall into without realising, isn’t it? Plus it is more costly…

As I am at home and  Lunch is my main meal I generally have a stir fry they are quick to do and cook while the rice is cooking which Is why I like them…

Fried Fish with peppercorns in black bean sauce.
Serves 1.

  • 100 gm white fish cut into smallish pieces and rolled in rice flour.
  • Small onion roughly cut
  • 2 spring onion sliced
  • 1-2 chillies sliced diagonally
  • 1 stem of fresh peppercorns
  • 1 tbsp black bean sauce
  • 1-2 cloves of garlic finely chopped
  • Sm piece fresh ginger minced or finely Julienne
  • Fish sauce to taste.

Lets Cook!

Heat up the oil in a wok and shallow fry fish quickly on each side until it becomes golden brown, it will take around 2 to 3 minutes on each side.
In the same wok where fish is fried sauté garlic, chilli, onion and ginger.
Add green onion and peppercorns then stir-fry for a minute. Then add fish.
Add splash water, black bean sauce bring to a rolling boil, add fish and turn over once to coat with the sauce and simmer for 2 mins. If the sauce is thin you can add a bit of cornstarch/arrowroot slurry to thicken it.
Flavour with fish sauce and season with freshly ground black pepper.
Serve with steamed rice and a chilli dip( optional)

You could also make this at home and heat gently at work for lunch or microwave it.

Jacket Potatoes…Easy to do and will fill you up…If you have an oven at work then in your pop one in the oven and take a portion of chilli, baked beans, cheese, coleslaw, sweetcorn, caramelised onions and mushrooms what is your favourite topping?

My favourite is chilli be it a meat or vegetarian one or cheese and coleslaw if it isn’t too cold.

Carol’s Chilli Con Carne

Ingredients:

  • 500 gm lean minced Beef ( I use pork) as I can’t get minced beef here.
  • 1 tbsp Olive oil
  • 1 large onion chopped
  • 1 red or yellow pepper chopped
  • 3/4 garlic cloves, peeled and chopped
  • 2-inch piece of fresh ginger finely chopped
  • 1-3 heaped tsp hot chilli powder (or 1 level tbsp if you only have mild)
  • 1 tsp paprika
  • 2 tsp cumin seeds
  • 1-2 bay leaves
  • 1 pint of fresh made beef or vegetable stock
  • 400 gm fresh chopped tomatoes
  • 1/2 tsp dried marjoram
  • 1/2 tsp sugar…I sneak this in when no one is looking as it brings out the sweetness of the tomatoes.
  • 2 tbsp tomato purée
  • 410 gm can red kidney beans, drained or pre-soaked dried kidney beans.

Let’s Cook!
Put the olive oil in a large pan and heat add the chopped onions, garlic, ginger, bay leaves and cumin seeds cook until onions are translucent about 5 minutes.
I like to add my cumin seeds with the onions as it brings out their full flavour and we love cumin.
Add the minced meat and cook, stirring until nicely browned.
Add the tomatoes, stock, peppers and tomato puree stirring in well and bring to a soft simmer.
Add the paprika, marjoram and sugar.
Cook for 20 minutes now this is where I taste and add more chilli and usually more cumin seeds and then add the drained kidney beans and cook for a further 30 minutes.

Serve with steamed rice and sour cream sprinkled with smoked paprika ( optional)

NB. HELP! I would rather use dried kidney beans rather than tinned HOWEVER I soak them for hours then cook then add to my chilli and they are still not soft…I don’t have a pressure cooker but is there anyone who can give me some tips and I don’t add salt while soaking.

My second Chilli recipe from a friend of mine …Richard and it is his vegetarian chilli…Thank Richard it is very nice. It is Richards recipe with a Thai twist and tasty…

Vegetarian Chilli with lentils.

Ingredients:

  • 1 large onion roughly chopped
  • 1 carrot finely chopped
  • 1 stick of celery finely chopped
  • 1 tomato finely chopped
  • 3 cloves of garlic
  • 3 chillies
  • 125 gm mushrooms chopped
  • A handful of chopped green beans
  • 100 gm black lentils
  • 1 tbsp each of fish sauce, soy sauce, oyster sauce and sugar
  • Basil Leaves

The instructions are as I received them as Richard obviously knows I can cook ( there wasn’t any) just ingredients …he is also male…lol

For anyone needing more details then cook as my chilli recipe above but adding lentils instead of the meat. I did add a couple more tomatoes and some kidney beans to Richards original recipe….I also soaked my lentils… he doesn’t as he likes his lentils al dente…

Cooking is all about personal taste and I sometimes just chuck it in the pot and take it from there… That’s how I cook most of the time and TASTE…

Both of these make great toppings for jacket potatoes or with rice …

Soup is also very good...You make a batch at home and freeze in portions it just needs reheating or take it in a thermos flask…

Yesterday I made a lovely mushroom soup …a new recipe and it needs tweaking my little taste tester told me what I needed to do….lol

It pleases me though because it means that he tastes the food and knows when it needs something else so that is good for a child.

Mushroom Soup…

2 lbs of mushrooms…mixed I used straw, button, crimini and some small ones which I can’t remember the name.

1 onion sliced

6 sprigs of thyme tied together

3 cloves of garlic

6 cups of chicken or vegetable stock

2 cups of water

1 cup of cream

Salt and pepper to taste

Let’s Cook!

Melt the butter and add the mushrooms and add a pinch of salt and cook until they give up their juices and reduce the heat. Cook stirring until the juice has evaporated and the mushrooms start to brown.

Pick out a few nice pieces and set to one side for the garnish.

Mix the onions into the mushrooms and cook until the onion softens about 5 minutes.

Add the thyme and garlic and pour in the stock and water simmer for 1 hour.

Remove the thyme before blending the soup, if the consistency is still too thick then add more stock/water…Return to a pan and add the cream…Taste and season with salt and black pepper…

All of these you could batch cook every two weeks and freeze in portions and you would never have to worry about what is for lunch… Just add your garnishes and herbs if required…
