National Pumpkin Month…All things Halloween…

Pumpkins will soon be on every street corner and in all the stores and as it is National Pumpkin Month I am going to get into the swing with recipes, trivia and it is also the run-up to Halloween…

I also thought that maybe as y’all make the best pumpkin pies..I mean it is not a Brit thing…not where I come from anyway…Maybe you would share your best recipe for pumpkin pie???

Muffins or pies or maybe a nice latte…You need a  nice Pumpkin Spice Mix…

Here is my recipe for pumpkin spice mix ..Quick and easy you probably have all the ingredients in your store cupboard.

Pumpkin Spice Mix.

  • 4 tsp ground cinnamon
  • 2 tsp ground ginger
  • 1 tsp ground cloves
  • 1/2 tsp ground nutmeg

Mix all the spices together and keep in a lidded pot and use as required for muffins, pies or a nice spiced latte…

How do you greet Trick or Treaters? Do you have ghosts and/or scarecrows and what treats do you hand out? If you are stuck for ideas a quick and easy one to do is fill some apothecary jars with bright coloured candy. It makes an eye-catching display and your guests can help themselves.

Fill old glass jars with plastic rats, toy bugs and doll heads then add a little-coloured water. Use manila tags to name your specimen – shrunken heads, poisonous tarantulas, baby rats and the like – and wrap the jar with twine and the tag.

It is quite easy to make effective decorations from pumpkins or paper lanterns or jars.

But did you know?

The Jack ‘O’ lantern comes from an old Irish tale about a man named Stingy Jack. According to folklore, Stingy Jack was out getting drunk with the Devil when Jack convinced his drinking partner to turn himself into a coin to pay for the drinks without spending money. Jack then put the Devil, shaped like a coin, into his pocket, which also contained a silver cross that kept the Devil from transforming back. Jack promised to free the Devil as long as the Devil wouldn’t bother him for a year, and if he died, the Devil could never claim his soul. Jack tricked the Devil again later, getting him to pick a piece of fruit out of a tree and then carving a cross into the bark when the Devil was in the branches. This trick bought Jack another 10 years of devil-free living.

When Jack finally died, God decided he wasn’t fit for heaven, but the Devil had promised never to claim his soul for hell. So Jack was sent off to roam the Earth with only a burning coal for light. He put the coal into a turnip as a lantern, and Stingy Jack became “Jack of the Lantern” or “Jack O’ Lantern.” Based on this myth, the Irish carved scary faces into turnips, beets and potatoes to scare away Stingy Jack or any other spirits of the night.

Halloween Games :

Toilet Paper Mummies.

This will keep the kids amused for a while so buy some cheap loo rolls and let them wrap each other up like mummies.

Eat the doughnut(donut)

Tie doughnuts on strings and keep the wet wipes handy and watch the little darlings try to eat the doughnut…

Apple Bobbing.

A big bowl or bucket of water and some Apples always fun to watch.

Halloween themed food.

Don’t the kids just love all this spooky Halloween finger food? What is your family favourite food for Halloween…Let me have your recipes with a picture and I will feature them in a Fang-Tastic Friday post…

Today all you need is sausages and pastry strips ..This is an easy one and even the kids could do it…Just wrap the sausages as pictured by winding the pastry round and if you are really good and make your own sausages or know a good butcher even better… Some little white sweets or rice paper eyes and just cook…The kids love them.

Fang-Tastic Friday!…Apple Bobbing and Black Widow Shots!

Halloween…Have you all got your porches decorated or are you still in the planning stages? I know it is big business in the US but not sure when Y’all have everything out and on show… Do you like my effort at speaking like Y’all do???

Making a spooky banner is easy to create and inexpensive,  a banner for any occasion. Print the letters on card stock. Make the ruffled border with a sheet of decorative paper cut into strips, accordion-folded, then glued to the back of each letter. Punch a hole in the ruffles and thread a piece of ribbon or twine through for hanging.

To make your Halloween night or evening party really scary, embellish inexpensive paper lanterns with spiders, bugs and creepy-crawlies made from card.

Halloween….Thai Pumpkin Soup with prawns or crabmeat.

Halloween....Love it or hate it….there are some lovely recipes around and if you live in colder climes just what the doctor ordered to keep away those winter chills.

This recipe is an authentic Thai recipe … Pumpkins and squash grow very well here and are found on every market stall and on every street food stall and so much is done with this versatile  vegetable  lots of lovely Thai desserts and soups…but I digress this lovely soup would look equally at home in your hollowed out Halloween pumpkin shell  and add a bit of Thai spice to your table. If you have little pumpkins then it would look beautiful served as individual portions.

Ingredients:

  • 400 gm  pumpkin peeled and diced into 2 cm cubes
  • 1 tsp white peppercorn
  • 2 coriander roots
  • 2 stalks of lemongrass  very finely sliced
  • 3 small shallots diced
  • 1 tsp fermented shrimp paste…You will be able to purchase this from most Asian stores or online.
  • 300 ml of prawn stock….I always keep my prawn heads and bits in the freezer until I have enough to make some stock.
  • 700 ml coconut cream
  • 1 tbsp freshly squeezed lime juice
  • 2 tbsp roasted chilli paste
  • 2 tbsp fish sauce
  • 1 tsp coconut sugar
  • 16 prawns /shrimp, peeled and deveined or crab meat
  • A handful of fresh Thai basil leaves save some for garnish
  • 2 tbsp coconut oil to stir-fry

Let’s Cook!

Firstly pound the peppercorns and the coriander root into a smooth paste. Then in a large saucepan, over a medium heat stir-fry the peppercorn/coriander root paste, pumpkin, lemongrass, onions and shrimp paste, stirring all the time for about 3 minutes until all those lovely Thai flavours are released.

Reduce the heat to very low, cover the pan with a lid and cook very gently for about 20 minutes until pumpkin is soft, stirring occasionally.

Next, transfer the mixture to a food processor and blend with the shrimp stock until smooth. Pour back into a saucepan and add the coconut cream and bring to a slow gentle boil.

Add your seasonings, lime, fish sauce, sugar, chilli paste and stir to combine, add your prawns/ crabmeat and cook for 1-2 minutes…Now taste and adjust seasoning if required.

Remove from the heat and pour into serving bowl or bowls. Stir in the basil leaves and garnish with extra leaves.

The true Thai way is to also garnish with spring onions or garlic stems, some fried crispy garlic or chicken skin and it always looks so vibrant and you just want to dive in and drown in the lovely flavours.

Carol’s Homemade Squash Soup

We came back from the village with some goodies freshly picked you won’t get any fresher than that will you…Some beautiful squash so I made my basic soup and then when I reheat I just add my customary chillies…Of course, I do….ha ha….The recipe Hunter kindly added to her WP for me so I thought I woud share it with you as well. Elephants Ears?

I was taking part in The Recipe Hunters monthly Challenge and this month’s challenge is the letter E and you can choose your option from a list….Me… I chose Espresso as that was easy I already had the recipes. One intrigued me so I went back to the said list and it was Elephants Ears? Somewhere at the back of my mind, it rang a bell…Ding Dong!

So I asked my friend Mr Google who laughed at me and as soon as he showed me….The penny dropped…..We had them in Phuket by the Rai in the field near our house and the river that runs alongside had massive ones some of those leaves reached 3 feet long and 2 feet wide and the plants can grow 8 feet tall.

The elephant ears thirst for water is why they are so prolific in soggy areas and they are also popular here not only for landscaping but also near water features they are quite an impressive plant.

… The corms or roots are also to be found on every market stall it’s Taro. Silly me!

As it is in most other Asian countries, taro is also a popular flavour for ice cream in Thailand. Like with many plain or ugly fruits they make something quite delicious.

Most Thai sweets & puddings do not include wheat flour, which makes these desserts gluten-free and suitable for those who are gluten-intolerant.

The typical list of ingredients is simply rice or tapioca flour, water, coconut milk and eggs cooked with the taro and or pumpkin the multitude of resulting variations is just amazing.

Ingredients:

115gm taro root, cut into 1” pieces

115gm pumpkin cut into 1” pieces

1 1/2 cup thick coconut cream ( see note below)

3 Tbsp palm sugar.

Let’s Cook!

Add taro and pumpkin to the coconut cream and palm sugar, then bring to boil. Reduce to low heat and cook for approximately 10 minutes, until tender.

Pour into small ramekins or one large dish and when set cut into squares. Sometimes this dessert is also cooked in small pumpkins, either way, it is very nice.

N.B. Coconut Cream:

For recipes requiring coconut cream, do not shake the can of COCONUT MILK before opening; spoon out the thick cream on top. On hot days, refrigerate the can so that the cream will harden and can be easily separated from the lighter milk.

This is a very easy dessert to make and when it is ready to eat just close your eyes, and pretend you are in the lush tropics of Thailand while spooning a smooth cool coconut dessert into your mouth… Heaven on earth.
