Retired no one told me…Weekly roundup…The letter B, blood pressure and Jalapenos.

Carol's weekly update 22 march

Welcome to another weekly roundup of my posts and what a week it was last week I finally got back on-line properly after nearly a week on Sunday…

Starting the weekly roundup was my post for the recipe for Jalapeno peppers stuffed with cream cheese…They are really quite yummy and judging by the response the post got so did many others think so as well.

Next was my monthly post over on the Recipe Hunter...It was the letter B in my trawl of the culinary alphabet… Not many of you had heard of Barding which sort of surprised me …If you haven’t either then all will be revealed and so much more if you read the post.

It was then Fruity Friday but it was not published until the Sunday when I was finally back online.

Not being able to get on-line sort of threw me somewhat and it has been a funny week this week I have felt a bit disjointed and not quite with it…

Monday saw the re-posting of one of my older posts about Healthy foods which may help reduce the blood pressure…Again a very popular post…Blood pressure is something so many people suffer from and much can be done by exercising and looking at what you eat…Moderation...my word of the year…haha

Bootcamp was next… How to eat the foods you love and lose weight…Moderation and no excuses is my mantra…as if we don’t follow a sensible eating plan then we are just letting ourselves down…No one else just yourself!

No More Excuses

Who do you cheat??? Yourself!

Now I eat meat...Yes, I do and fish… But I also like meat-free days…My friend Richard whom I first met in Phuket and who moved to Germany shares his love of cooking with me…We both love experimenting and he made this awesome Chilli with lentils...He also made a Thai dish with lentils which I will share with you very soon…

Richards vegetarian chilli

Lentils I can do…It’s this Tofu which I haven’t yet tried and my OFFER is still open if anyone cooks with Tofu please share with me and I will promote you on my blog if you have tried and tested recipes with Tofu you can guest post…I DON’T AND HAVEN’T EATEN TOFU…EVER…DO I WANT TO? NOT PARTICULARLY….I am being honest here…Tempt my taste buds!

I try most things...Come on this is the girl who eats ants eggs, crispy fried insects and has tried fermented fish and Durian…Not Tofu! NOT YET!

Wednesday it was over to Sally’s for my weekly Food column and this week I had a recipe for some lovely lemongrass skewers,,,I was watching MKR today and two of the contestants made some quite similar but moulded the meat mix around sugar cane which sounded very nice although I love lemon so would probably prefer using lemongrass skewers still.

Happy Weekend xxx

Wat Tung Tookham, Udon Thani, Thailand.

After the normal..you know.. Weekend food shopping etc

We decided to take a trip out and just 15km from Udon Thani Town is Wat Tung Tookham …well we went round the houses a bit and then were pointed to this little, very little soi….Big Red men Working sign across entrance….

So we travelled along a bit and thought nought here… so went back just as said workman was removing his barrier…Ah ha so down this track we went ..just one car wide and now we saw signs …so we followed the signs through a little Thai village and there it was…. Looking a bit in need of some TLC….not a bit like the pics in the tourist brochure…

It is a charming temple ..we were the only visitors and the only human life we saw were 2 lone monks and 5 laughing children… as well as Buffalo grazing in the field..it was lovely!

Some of the many Buddhas here are covered in Thai coins, both old and new and with the sun on them they glisten and this is made even lovelier as the temple is among the trees… it was so calm and peaceful.

Beneath the temple is a spirit ball and holy water seeps through the floor..this is a little temple which is only opened during important holy days so people can collect some water…  the water is said to bring good luck.

The roof and walls of this temple are adorned with over 8,400 images of Phra Somdej Wat Rakhang ( Amulets) it is very beautiful.

Close by is also a Thai Silk Village so if you like traditional Thai clothes then it is the place to shop.

By this time we were starving so headed back to Udon Town and joined the hordes who were eating seafood along the front of the shops it was very busy and then I had my first fried ice cream??? No pics I afraid… too hungry… will take them next time as it was all lovely, freshly cooked succulent mussels and ?….That’s just your taster for another time…I am kind to you guys … Ha Ha

Until next time stay safe, have fun and laugh a lot …..Love you all x

Wat Phra Nang Sang(Seng)

The oldest temple in Phuket dating over 500 years old hosts this Annual Market each year. It is a mix of old and new , the temple  its exact age unsure has been renovated and rebuilt in parts over that time. One story says a powerful southern Thai ruler had the temple built for his wife. Another story says that the temple was built-in honour of a princess who was due to be executed, although she had been framed and was innocent. When she was executed she bled white blood, thus showing her purity. The temple is also called Wat Luad Khao (White Blood Temple). At that time Thalang was the main town in Phuket.

Tonight it is hosting some amazing Thai Food and we are awed at the site of some lovely statues and buildings. The food includes insectsSAM_7518SAM_7491 of all sorts which are a delicacy here, Thai sausagesSAM_7516 of all sorts, glorious sweet dishesSAM_7494SAM_7513 to tempt your palate and so much more.SAM_7490Quail spit roasted. Lovely fresh vegetables to make a delicious papaya Salad or Som Tam as it called in ThaiSAM_7497

SAM_7498    I could go on tempting your taste buds as there was soooooo much lovely fresh food. Bamboo filled with black and white sticky rice.SAM_7501     Delicious squid SAM_7514SAM_7515 dipped in an amazing, hot chilli sauce. Our senses and taste buds were just zinging!

That’s all for now, in another post I will tell you more about this lovely temple but for now I will leave you maybe wishing you were here.

Stay safe, laugh a lot and be happy..Love you all 😉
