Welcome to the slightly different fruity Friday…It’s Tropical Friday and today it’s my favourite fruits…I love all fruits but these fruits are the ones I eat regularly and would pick first if I was given a choice…
Pineapple…
My favourite ways to eat pineapples are raw, in sweet n sour chicken, pineapple shake, pickled with jalapenos, grilled or caramelized and it’s a great meat tenderiser…Pina Colada…
To tenderise steak…
Coconut…
Where do I start…it’s my early morning drink a few times a week, the oil I cook with and the milk I cook with…the sweet soft flesh of the coconut I just eat straight from the shell…To learn more about the coconut please click this link
It is used in curries here…for me, I use it as a cooking oil…I make non-dairy cream from coconut cream…there are many coconut products here both culinary and beauty products…Again a very versatile tree…nothing is wasted here…Like the banana tree, every part is utilised…The kernel is often used to make kitchen tools (forks, spoons, etc.) or souvenirs. Husks from ideal flowerpots, rugs and baskets.
Coconut leaves are used to wrap cooked food and also to make roofs for houses. The trunk is also handy when it comes to construction work and good material for furniture and décor.
Mango…
So many mangoes I think everyone has a mango tree…so many types From 1000 mango species around the world, alphonso mango is surely the number one in taste and flavour. The main producer of this delightful variety is the Maharashtra state of India.
Mango is lovely eaten raw and unripe it is so crunchy and delicious ..one of Lily’s favourite fruits as well if I am not quick she will munch the lot…It makes a lovely Indian Mango Chutney...perfect with a chicken curry… a lovely mango preserve or add to a chicken dish… chicken and mango is delicious or as a dessert with coconut rice just beautiful…
Bananas…
I never realised there were so many different varieties, sizes and colours of bananas until I lived here…Green bananas make beautiful koftas absolutely delicious. bananas are to be found fried on every street corner and market…a banana smoothie anyone, banana bread, just eaten as they are…such a healthy beautiful fruit I think almost everyone has a banana tree in their gardens and where I was used to buying small bunches my bananas as come like this now…fresh cut from the tree
Although it isn’t actually a tree…it’s a herb a distant relative of ginger …It is a herb because it does not have woody tissues and the fruit-bearing stem dies down after the growing season. It is perennial because suckers, shoots arising from lateral buds on the rhizome, take over and develop into fruit-bearing stems…The leaves and all parts of the plant are used …no waste…the leaves are used to cook and serve food on…the stem fibres make natural craft materials …Nigella even makes a curry from banana skins…it sent social media into overdrive, however…as it happens, using banana skins as an ingredient isn’t that obscure an idea. In Indian cookery some vegetarian dishes feature banana skins shredded and cooked as a meat replacement.
Raspberries…
One of my all-time favourite fruits, not something I have been able to get fresh here but the frozen ones are good…raspberries freeze well…Fruity Friday…The Raspberry
One of my favourite fruit smoothies is beetroot and raspberry it is a glorious colour and the taste IS out of this world…
Passionfruit…not yet ripe they turn red and wrinkled when ripe…
Ugly and wrinkled and that was probably why when I lived in the UK I passed them by…not so any more this amazing fruit has such a beautiful taste …used in smoothies it makes delicious passion fruit curd it pairs well with savoury dishes…makes a glorious topping for cheesecake and brulleed and placed on a cocktail..amazing and also try your grapefruit with a brulee topping…The Passionfruit…
