CarolCooks2…weekly roundup 5th April-11th April 2020…

Good morning …welcome to my weekly roundup… I do hope you are all keeping well and practising social distancing…I am…It is getting a bit unreal though…silence everywhere although the birds are still twittering and tweeting the squirrels are amusing me running around on the branches of the mango tree just outside my window playing catch me if you can while stopping for a munch on the mangoes every now and then…

Much is closed now and a nightly curfew is still in place as are roadblocks to prevent people from unnecessary travel between provinces…Hotels are closed to new guests, alcohol buying is prohibited in most provinces now and ours from yesterday to stop celebrations happening in villages and homes during Songkram (which) has been cancelled but there were fears people would buy alcohol and celebrate at home in groups. I have stocked up with water balloons and orbeez for the pool so the kiddies can enjoy Songkram in the safety of our home. It is becoming very real and surreal but communities are coming together even more than normal which is lovely to see.

Enough chatter from me for the minute let’s have a look at this last week…Grab your favourite drink…at the moment as I have already drunk my Oolong tea it is Coconut water…It is so hot I need to keep hydrated…settle down in your comfy reading place and let’s have look at the posts from last week…

Nature is ever powerful and can regenerate so much faster than maybe even the learned scientists knew…Will any lessons be learnt?… I do hope so…Amongst all this tragedy we have to take some positives we have to believe that the world and its inhabitants can and will change for the better and respect nature more…Around the world, we are seeing blue skies and so much more…

Tuesday: Down on the Farm…Tom Kha Gai and the Takhop Fruit…

My lemongrass is nearly ready to blitz into powder…I have mango peelings and pits soaking to make a syrup, broccoli stems make a lovely extra vegetable on your plate and my galangal is now frozen…My quest to use every single piece of what we eat..No waste is well underway…..The Tom Kha Gai was also delicious…

Friday: CarolCooks2…This week in my kitchen 10th April…Homemade Bread …Pork and Peppercorn sauce.

Fresh peppercorns are one of my favourites and used in many Thai dishes…This Pork and Peppercorn sauce is very nice and quick to cook which is always a bonus especially here given the heat in the kitchen.

Saturday: Not for a few weeks…

Saturday Morning trip to the MarketNot this Saturday morning or until further notice although as it is a food market it is still open…I passed it yesterday as we were travelling to Makro for our monthly shop and it was heaving… no social distancing that I could see so my plan to avoid this market stays firmly in place…

I will be sharing some of the fruits and vegetables which I cook with here and some recipes until such times as normal service is resumed…

Monday…The day when I try to find the good news on recycling and Climate Change…The day when I try to decipher just what is happening around the world and it certainly is a mish-mash…a hot potato…Lots of truths and half-truths…The bottom line methinks is we have to start doing just that little bit more, teach our children and grandchildren …make them aware…we need to be more aware…I also will name and shame as you know…I also think as a consumer we need to be calling out those companies who are blatantly flouting the rules…The shipping lines although this week I found one the 1st one in the world to announce they are plastic-free…

Thursday  Another no blogging day where I cook, test and research…Of course, a lot of ideas keep popping into my head for blog posts but I am sticking to this reduced blogging calendar…

 

Friday where I invite you into my kitchen …I was given lots of green bananas this week and a beautiful watermelon, some Chinese pears and some lovely little snacks made of fruit, coconut milk and bean curd steamed in bananas leaves…Very moreish we have such kind Thai family and neighbours…My plea for recipes for green bananas goes out again…If I let them all ripen before I use them we will never eat them all, of course, I can share around the neighbour’s but as they all have bananas trees in their gardens it is a bit like taking coals to Newcastle…One of my mum’s old sayings…

Retired no one told me…Weekly roundup…The letter B, blood pressure and Jalapenos.

Welcome to another weekly roundup of my posts and what a week it was last week I finally got back on-line properly after nearly a week on Sunday…

Starting the weekly roundup was my post for the recipe for Jalapeno peppers stuffed with cream cheese…They are really quite yummy and judging by the response the post got so did many others think so as well.

Next was my monthly post over on the Recipe Hunter...It was the letter B in my trawl of the culinary alphabet… Not many of you had heard of Barding which sort of surprised me …If you haven’t either then all will be revealed and so much more if you read the post.

It was then Fruity Friday but it was not published until the Sunday when I was finally back online.

Not being able to get on-line sort of threw me somewhat and it has been a funny week this week I have felt a bit disjointed and not quite with it…

Monday saw the re-posting of one of my older posts about Healthy foods which may help reduce the blood pressure…Again a very popular post…Blood pressure is something so many people suffer from and much can be done by exercising and looking at what you eat…Moderation...my word of the year…haha

Bootcamp was next… How to eat the foods you love and lose weight…Moderation and no excuses is my mantra…as if we don’t follow a sensible eating plan then we are just letting ourselves down…No one else just yourself!

Now I eat meat...Yes, I do and fish… But I also like meat-free days…My friend Richard whom I first met in Phuket and who moved to Germany shares his love of cooking with me…We both love experimenting and he made this awesome Chilli with lentils...He also made a Thai dish with lentils which I will share with you very soon…

Lentils I can do…It’s this Tofu which I haven’t yet tried and my OFFER is still open if anyone cooks with Tofu please share with me and I will promote you on my blog if you have tried and tested recipes with Tofu you can guest post…I DON’T AND HAVEN’T EATEN TOFU…EVER…DO I WANT TO? NOT PARTICULARLY….I am being honest here…Tempt my taste buds!

I try most things...Come on this is the girl who eats ants eggs, crispy fried insects and has tried fermented fish and Durian…Not Tofu! NOT YET!

Wednesday it was over to Sally’s for my weekly Food column and this week I had a recipe for some lovely lemongrass skewers,,,I was watching MKR today and two of the contestants made some quite similar but moulded the meat mix around sugar cane which sounded very nice although I love lemon so would probably prefer using lemongrass skewers still.
