CarolCooks2…Weekly roundup…The world around us…Climate Change, health and more…

Welcome to this weeks roundup...I have lots of goodies you…something for everyone I hope…Recipes…A pie… it was National Pie Day, some health facts from Sally, of course, Whimsical Wednesdays when I indulge myself…no not chocolate but memories mostly.

.I have new ceilings…just ceilings… they didn’t investigate where the water is coming from…so Moi has had enough I am moving…Again…I have never moved so much as I have since retiring…It is becoming quite a hobby…It is also a brilliant way of clearing the unwanted things we collect overtime…

I only keep the essentials…flip flops, a few sundresses, of course, ALL my kitchen ..that will not get downsized, my dog and my Christmas Kitsch… Not forgetting hubby and books…Enough of my chatter…Time to catch up…

The start of the week sees me sharing any updates and opinions on Climate Change and the environment…This coming week …I have many ..things which have niggled me for a while…But before then let’s start with last week…

I will say I am concerned with all this hype…I am concerned that other things will bypass our radars and be implemented by the powers that be because we are so wrapped up in Climate Change… we have taken our eye off the ball…Just saying!

I believe that healthy eating starts from before our babies are born we have a responsibility to make sure we are providing nutrients in the womb…This need to then continue once baby is born…Healthy eating is a lifestyle we owe it to the one body we have if we want to stay as healthy as possible…Many chronic conditions are helped or eradicated by what we eat…

I also added an extra post purely because after reading how babies teething gels contained chemicals and additives which are harmful to health…I mean it starts from birth with no compunction just this onslaught to our health in the name of greed and profiteering ..You could say I was slightly p***** off…

A subject which I am very passionate about is waste plastic, food and anything which fits in between…We live in a very beautiful world and it is getting trashed by mankind in the name of greed, profiteering or just plain laziness because we can’t be bothered to dispose of it correctly.

Sour Dough…Why on earth can’t sneaky bakers and manufacturers leave our Sour Dough alone or make it properly? I was actually really surprised and pleased at how many people make their own sourdough bread the art is not lost and seems to be growing.

Thursday’s has become soapbox day for me or my weekly rant coupled with some hints and tips on how to throw less food away… It is proving to be a very popular post and wouldn’t it be lovely if we could save food and encourage others and maybe that would be one less hungry person.

No mother should have to watch their child crying from hunger and while I am on that subject I am appalled that the world watches as one of the worst famines in history unfolds…Yemen …The images coming out of there are heartbreaking and it saddens me. I have however been gladdened by the comments from you guys on how you are combatting waste in your home …Keep up the good work and share with us all your tips.

Awww…my last Fang-Tastic Friday post until next year…I hope you all are having or do have a Fantastic Halloween and for those who wanted to try the Michelada which is a spicy Mexican drink if you can’t get clam juice then it is easy to make your own… There is also a recipe for my pumpkin spice chilli…You will love it!

To Make Clam juice…Clam Juice is actually broth from clams, sold in small bottles. To make Clam Juice, clams are shucked, then briefly steamed. The steaming water becomes a broth. It is strained to get any grit or sediment out, then bottled.

Retired No One Told Me! Weekly Roundup…Jackfruit,Alinea and Beeswax Wraps.

Healthy eating and Tofu...Well a first for me..I cooked my first tofu dish and it was ok…My grandson loved it…I didn’t so much, I liked it but didn’t love it…But I am going to be taking the lovely Tori’s advice and try another recipe… Tori was also kind enough to write a guest post and for me, it was perfect as I knew nothing about tofu and hadn’t cooked or eaten it so for all you first-timers like me I hope you found it informative and for all you experienced tofu cooks ..throw some recipes our way, please…Esme has already so thank you, Esme.

Retired No One Told Me! Weekly Roundup…The friendliest animal in the world and the shocking truth about the Cook Islands and Timor Leste…

Welcome to my weekly roundup of posts which I hope you enjoy… I love roundups as it means I don’t have to worry about missing any posts from my favourite bloggers. Somedays I am just so busy or I get sidetracked and just miss some posts I think we all do, Don’t we????

The first post out of the starting blocks is Fruity Friday’s and last week it was the Cranberry… A fruit that I always just associated with Christmas but it is a fruit which is worthy and can enhance so many recipes.

Next up it was one of my Travel Thailand post and a beautiful waterfall which was very close to my house when I lived in Phuket …I love finding out-of-the-way places I don’t really like these revamped, busy new tourist attractions …I like finding the hidden gems and this little waterfall is one of those but it also links to other waterfalls so all is not as it seems at first glance.

It was then the turn of the last in a series of posts  I have been writing about Obesity and one which I was shocked to find that the causes of Obesity in the case of the Cook Islanders were the invasion of luxury resorts who built on their agricultural land… The country I thought had it all sewn up who ate healthily and exercised etc…In fact is poverty-stricken and the people malnourished caused by occupation and war… Not the outcome I visualised… It made me so sad…

 

It makes me so sad that my series has had to end this way that a once proud race who lived long lives are now reduced to a race who die prematurely with chronic diseases brought about by the invasion of luxury holiday resorts and a western diet.

The other group a race of people who build beautiful houses like those pictured and have a tradition of beautiful textiles and had their lives torn apart by invasions and war and are now dying from malnutrition brought on by poverty. A sad state of affairs for both and not the ending I thought I would be writing.

Retired No One Told Me!…Fried Insects, Peppercorns and Rosella.

CAROL'S Weekly Update 19th April

Well, this has been an exciting week…Songkran celebrations ( Thai New Year) Sunshine and tropical storms and the discovery of some new foods for me…

Here in Thailand, there are many ways of preserving and salting eggs which have been passed down through the generations some very nice ( as were) these salted eggs some not so nice …I don’t fancy eating embryos however they are dressed up …

Fruity Fridays came around and it was the Rosella Fruit one which I had only previously had as tea but on coming across the fruits discovered that they made a lovely jam and an awesome chutney.

It was then the turn of Sally’s weekly roundup and Mustard seeds were my topic that week… Making mustard is very easy as I soon discovered when I was unable to purchase any here so decided to have a go and make my own.

Songkran and Thai New Year somewhat got in the way so some of my posts fell a little by the wayside.

Healthy Eating and No to Diets was on the subject of snacks … Songkran bought out all the unusual to us westerners bar snacks…Crispy fried insects, pork scratchings, Eggs of all sorts and dried fish which is very popular here…So, of course, I treated you all to a glimpse of those snacks which certainly elicited some comments.

Over to Sally’s for my cookery column where I discussed peppercorns of various colours and a recipe for some lovely Pork in Peppercorn Sauce.
